3 tablespoons soy sauce
1 1/2 teaspoons grated gingerroot
1 1/2 teaspoons finely chopped garlic
1/4 teaspoon crushed red pepper flakes
1 tablespoon cornstarch
1/4 cup water
1 1/2 cups uncooked Minute® instant white rice
1 can (8 oz) pineapple tidbits, undrained
1 red bell pepper, diced
1/4 cup sliced green onions (about 3)
1 1/4 cups Progresso™ chicken broth (from 32-oz container)
4 boneless skinless chicken breasts (5 oz each)
1/2 teaspoon salt

Steps:

  • Heat oven to 350°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray.
  • Make teriyaki glaze by mixing brown sugar, soy sauce, gingerroot, garlic and pepper flakes in 8-inch nonstick skillet. Stir over medium heat until sugar is melted. In small bowl, beat cornstarch and water; add to soy mixture. Cook 1 to 2 minutes, stirring occasionally, until mixture starts to simmer and has thickened. Cool slightly; reserve 2 tablespoons glaze in small bowl; cover and refrigerate.
  • Mix rice, pineapple, bell pepper, 3 tablespoons of the onions and the broth in baking dish. Season both sides of chicken with salt; brush with 2 tablespoons of the unrefrigerated glaze. Stir remaining unrefrigerated glaze into rice mixture; place chicken on top of rice. Cover tightly with foil.
  • Bake 40 to 50 minutes or until juice of chicken is clear when center of thickest part is cut (at least 165°F). Serve topped with reserved 2 tablespoons refrigerated glaze and remaining 1 tablespoon green onions.

2 cups water
1 tablespoon butter
1 teaspoon salt, eyeball it
1 rounded cup white rice
2 tablespoons black sesame seeds, toasted white sesame seeds may be substituted
4 boneless, skinless chicken breasts
4 boneless, skinless chicken thighs
Vegetable oil, for drizzling
Salt and pepper
1 cup chicken broth or water
1-inch ginger root, peeled and chopped
1/4 cup honey
1/2 cup teriyaki sauce
1 tablespoon toasted sesame oil
4 scallions, thinly sliced
1 ripe pineapple

Steps:

  • Preheat a grill pan or large griddle over medium high heat.
  • Bring water to a boil in a small covered pot. Add butter, salt and rice to the pot. Return the water to a boil. Reduce heat to simmer and replace cover. Simmer 18 minutes and remove rice from heat. Take the lid off the pot to cool rice a bit. Scoop rice into balls with an ice cream scoop and your hands. Dampen hands with water to work with rice if it is very sticky. Set rice balls on a plate and sprinkle with black sesame seeds.
  • While your rice is cooking, lightly coat chicken with oil, salt and pepper. Place chicken on hot grill and cook 6 minutes on the first side.
  • While chicken is cooking, bring chicken broth and ginger to a boil. Stir in honey. When honey has dissolved into broth, add teriyaki sauce and sesame oil and reduce heat to simmer.
  • Turn chicken and coat liberally with honey teriyaki sauce using a basting brush. Cook chicken 4 minutes, turn again and baste liberally again with sauce, then cook 2 minutes longer. Remove chicken to a plate. Garnish chicken with sliced scallions.
  • While chicken cooks on the second side, peel and cut a ripe pineapple into 8 spears. Cut off top and bottom of pineapple. Set pineapple upright and trim away skin in strips from top to bottom. Halve pineapple lengthwise and quarter each 1/2, lengthwise. The core is edible, but may be trimmed if you wish. Pineapple can be very acidic. Spears set in cold water for just 1 minute will keep the fruit from stinging your lips when it is eaten. Serve with chicken and rice balls

1 20. oz can crushed pineapple
Olive oil
Teriyaki Sauce/Glaze
1/2 cup reduced sodium soy sauce
1/2 cup sugar
1/4 cup cider vinegar
1 teaspoon ground garlic
1/2 teaspoon ground ginger
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon sriracha
2 teaspoons cornstarch

Steps:

  • 1.Whisk together Teriyaki Sauce ingredients in a small bowl. Add 1/3 cup of this sauce plus 1 tablespoon olive oil and chicken to a freezer bag and marinate 1 hour up to overnight. Refrigerate remaining Teriyaki Sauce separately. 2.When ready to cook, strain pineapple juice from crushed pineapple and add water to strained juice to equal 3 ½ cups liquid ("Pineapple Water"). Set aside. 3.Stir reserved Teriyaki Sauce and add to large skillet (nonstick works best). Bring to a boil then reduce to a simmer until slightly thickened, stirring constantly (glaze will continue to thicken upon standing). Remove Teriyaki Glaze to same bowl it was refrigerated in. 4.Wipe skillet (doesn't have to be thorough) and heat 1 tablespoon olive oil over high heat. Let excess marinade drip off chicken and add to skillet. Cook over medium high heat for 5 minutes on each side (3 minutes on each side for thighs) or until nicely browned (will not be all the way cooked through) and remove to a plate. 5.Wipe skillet and add 1 tablespoon olive oil and Pineapple Water. Bring to a simmer then stir in crushed pineapple and rice. Cover, reduce to medium low and cook for 12 minutes. Stir rice and nestle chicken on top and brush with Teriyaki Glaze. 1 tablespoon vegetable oil

2 cups Minute brown rice, uncooked
2 cups fresh broccoli florets (or frozen)

1 lb. boneless skinless chicken thighs, cut into strips
1 clove garlic, minced
1 pkg. (16 oz.) frozen broccoli, cauliflower and carrot blend
2 cups water
1/3 cup reduced-sodium teriyaki sauce
2 cups long-grain brown rice, uncooked
1/2 cup PLANTERS Cashews, toasted

Steps:

  • Heat oil in large nonstick skillet on medium-high heat. Add chicken; cook and stir 5 to 7 min. or until no longer pink, adding garlic for the last minute.
  • Add vegetables, water and teriyaki sauce; stir. Bring to boil.
  • Stir in rice; cover. Simmer on medium-low heat 35 to 40 min. or until rice is tender. Sprinkle with nuts.

3 cups cooked brown rice

Steps:

  • 1. Pre-heat the oven to 350. 2. Combine the soy sauce, the ½ cup water, the brown sugar, honey, ginger, olive oil and garlic in a small saucepan and cover. Bring to a boil over medium heat. Remove lid and cook for one minute once boiling. 3. While waiting for the sauce to come to a boil, stir together the corn starch and 2 tablespoons of water in a separate dish until smooth to form a slurry. Once the sauce is boiling, add the slurry to the saucepan and stir in to combine. Cook for another minute until the sauce starts to thicken and then remove from heat. 4. Lay the raw chicken breasts flat in a 9×13 casserole dish and pour about a cup of the sauce over top of the chicken. Place the chicken in the oven and cook for 30-35 minutes until breasts are cooked through*. Remove the dish from the oven and shred the chicken right in the dish using two forks. 5. *While the chicken is cooking, steam or cook your frozen vegetables according to package directions. 6. When the chicken is shredded and the vegetables are cooked, add the vegetables, pineapple and rice to the casserole dish with the chicken. Add most of the remaining sauce, reserving a bit to drizzle over the top when finished. Stir everything together in the casserole dish until well combined. Return the dish to the oven and cook for 15 minutes. Remove from the oven, drizzle with the remaining sauce and serve. Pre-cooked Chicken
Rice
1/4 cup Brown Sugar
1/4 cup Soy Sauce
3 Tbsp of Ketsup
1/4 cup water

Steps:

  • In a bowl, mix brown sugar, soy sauce, water and ketsup. Stir until well blended. Set aside. Measure out enough rice to feed your family. Pour it into a rice cooker. If you don't have a rice cooker, you can still do this on the stove, it just takes a little more watchful eye. Measure out the correct amount of liquid for your rice. For example, I do 2 cups of dry rice for my little family. This means I will need 4 cups of liquid. I should have almost a cup of teriyaki sauce mixed in my bowl. I will then need approximately 3 more cups of water. If you want a stronger teriyaki flavor simply increase the amount of sauce you prepare and decrease the extra waterm accordingly. Pour the teriyaki sauce in the rice cooker. Add the extra water. Dice the chicken and dump it in the cooker as well. Set the cooker to cook and walk away. Serve when the switch flips from "cook" to "warm", at least that's what mine does. I usually serve it with steamed veggies (that I cook in my Pampered Chef steamer) or mix the veggies right in.. Super simple and prep time is like ten minutes max.
