1/2 cup reduced-sodium soy sauce
1/4 cup cider vinegar
2 tablespoons brown sugar
2 tablespoons finely chopped onion
1 tablespoon canola oil
1 garlic clove, minced
1/2 teaspoon ground ginger
1/8 teaspoon pepper

Steps:

  • In a small bowl, mix all ingredients. Use to marinate beef.

1/2 cup oil
1/2 cup brown sugar (for a less sweeter sauce use less brown sugar)
1/2 cup soy sauce
2 tablespoons fresh minced garlic
1 teaspoon ginger powder (or use fresh minced ginger)
1/2 teaspoon mustard powder
1 cup pineapple juice (use 100% pineapple juice)
black pepper

Steps:

  • Mix all ingredients together.
  • Marinade the beef for 24 hours.

Yet another recipe from Chatelaine, but this was originally in the magazine as a salad. The salad didn't appeal to me, but I used it as a base for a great stirfry and used the dressing as a marinade. I then added some things here and there to give it a unique flavor. Cooking time does not include marinating in fridge.

1/2 cup orange juice
4 -6 tablespoons teriyaki sauce (I use 4 TB as I find teriyaki sauce a bit salty for our taste)
1 tablespoon vegetable oil or 1 tablespoon olive oil
2 teaspoons dark sesame oil
2 teaspoons granulated sugar
1 teaspoon Tabasco sauce (I use more) or 1 teaspoon bottled hot sauce, to taste (I use more)
2 teaspoons bottled chopped ginger (I use more) or 1 teaspoon freshly grated ginger, to taste (I use more)
2 teaspoons bottled chopped garlic or 2 garlic cloves, minced, to taste
1/4 teaspoon salt, to taste
1 lb top sirloin steak, cut into one inch strips
1 teaspoon sesame oil
2 tablespoons sesame seeds
1 tablespoon minced garlic
1 tablespoon minced ginger
1 medium Spanish onions or 1 medium purple onion, sliced
1 large green pepper, cut into strips

Steps:

  • Mix all ingredients together for the marinade.
  • Cut the beef into one inch strips and add to the marinade.
  • Put in a plastic container or Ziploc bag in refrigerator for 3 to 4 hours, stirring/shaking often.
  • To make stirfry, heat sesame oil in a non-stick skillet or wok skillet.
  • Add the sesame seeds, garlic and ginger and mix together until seeds are slightly toasted and flavors blended.
  • Add sliced Spanish onion, green peppers, 1/4 cup of marinade, mix well and stirfry until onions are slightly translucent.
  • Add the beef, mixing well to blend all the flavors and ingredients.
  • If you want, you can add some more of the marinade with the beef.
  • Stir fry about 5- 7 minutes on medium heat for medium rare or longer for your tastes.
  • It went great with a bottle of Cabernet Shiraz Merlot red wine.
  • Note: I reduced the measurement for the teriyaki sauce because it was a tad salty when I originally made it.
  • If you don't mind the salty flavor, you can add more for your taste.

½ cup Kikkoman Teriyaki Marinade & Sauce
⅓ cup orange marmalade
1 teaspoon Kikkoman Sriracha Hot Chili Sauce, or more to taste
1 large clove garlic, minced
1 pound (1 inch thick) beef top sirloin steak
1 summer squash, cut into 1-inch pieces*
1 medium red or green bell pepper, cut into 1 1/2-inch pieces

Steps:

  • Cut beef steak into 1-1/4 inch pieces. Combine marinade ingredients in a bowl, stirring well. Reserve 2 tablespoons marinade. Place half of remaining marinade and beef in food safe plastic bag; turn to coat. Place remaining marinade, squash and bell pepper in another food-safe plastic bag. MARINADE:
3 tablespoons soy sauce
1 tablespoon honey
1 tablespoon oil
2 teaspoons ginger
1 tablespoon water
1 clove minced garlic
BROTH:
5 cups beef broth
1/3 cup soy sauce
2 tablespoons brown sugar
2 cloves garlic, minced
1 tablespoon cider vinegar
1 tablespoon minced ginger root
1/3 cup soy sauce
1 tablespoon sake or sherry (OPTIONAL)
One pound of beef tenderloin, cup into bite-size pieces

Steps:

  • MARINADE: In a bowl whisk together soy sauce, oil, water, honey, ginger and garlic. Mix well. In a shallow casserole, cover beef pieces with marinade, tossing to coat well Cover and refrigerate for at least 30 minutes. BROTH: In a large saucepan, combine beef broth with soy sauce, brown sugar, vinegar, sake, garlic and ginger. Bring to a boil. Reduce heat and simmer, covered, for 20 to 30 minutes. Transfer to fondue pot, setting flame to keep at a simmer. Cook beef strips in fondue broth to desired doneness.
