2 tablespoons lime juice
2 tablespoons tequila
¼ cup olive oil
1 pinch garlic salt
1 pinch ground cumin
ground black pepper to taste
1 pound large shrimp, peeled and deveined
6 (10 inch) wooden skewers
1 large lime, quartered

Steps:

  • Whisk together the lime juice, tequila, olive oil, garlic salt, cumin, and black pepper in a bowl until well blended. Pour into a large resealable plastic bag; add the shrimp, seal bag and turn to coat evenly. Refrigerate 1 to 4 hours before grilling.
  • Soak skewers at least 30 minutes in water to prevent burning.
  • Preheat outdoor grill for medium-high heat. Lightly oil grill grate, and place about 4 inches from heat source.
  • Drain and discard marinade from shrimp. Thread shrimp onto prepared skewers, 5 to 6 per skewer.
  • Cook, uncovered, on preheated grill until shrimp turn pink, turning once, for 5 to 7 minutes. Serve with lime wedges for garnish.

1/4 cup Tequilla
1/4 cup lime juice
1 tablespoon honey
1 lemon, quartered
1 small onion, quartered
2 bay leaves
8 peppercorns
1 (1-pound) bag frozen salad shrimp
1/2 cup cilantro, chopped
1 Jalapeno pepper, chopped

Steps:

  • In a small saucepan combine tequilla, lime juice and honey. Bring just to a boil to melt honey and evaporate most of the alcohol. Set aside.
  • Bring 2 quarts of water to a boil. Add lemon, onion, bay leaves and peppercorns to boiling water. Simmer for 5 minutes.
  • Add salad shrimp and simmer until shrimp are thawed, about 2 to 3 minutes. Drain shrimp and place in bowl. Add Tequilla mixture, cilantro and jalapeno to shrimp and toss.
  • Chill in refrigerator, covered until ready to use or for a quick chill, place bowl over ice. Serve on platter with endive spears, crackers or alone with toothpicks for spearing.

  • Thaw shrimp and scallops, if frozen. Peel and devein shrimp.

1 lb shrimp, peeled and deveined
1/2 c tequila
1/4 c lime juice
1/4 c margarita mix
1/4 c olive oil
2 Tbsp honey
dash(es) salt and pepper

Steps:

  • 1. In a small bowl, mix together the tequila, lime juice, olive oil, margarita mix, honey, salt and pepper. Set aside.
  • 2. Skewer the shrimp; about 4-5 on each skewer. Place skewers in a dish long enough for them to lay flat.
  • 3. Pour the marinade over the shrimp, cover and place in refrigerator for 1-4 hours.
  • 4. Heat grill to a medium-low heat. Place the shrimp skewers on the grill and cook for about 2-3 minutes on each side. Remove and serve.

~~ For the honey lime tequila shrimp tacos ~~
2 pounds (454 g) raw shrimps, peeled and deveined
1 teaspoon coarse sea salt
2 tablespoons raw honey
juice of 2 limes + 1 lime
1/2 cup tequila
1 medium onion, finely minced
1/4 teaspoon ground cumin
1/4 teaspoon ground chipotle (optional)
2 avocados, diced
1/2 head of red cabbage, thinly sliced
~~ For the slaw dressing ~~
1/4 cup (60 ml) freshly squeezed lime juice [about 2-3 limes]
1 teaspoon of Dijon mustard
sea salt and pepper to taste
1/2 cup light, neutral oil, such as grapeseed
~~ For the chipotle crema ~~
1 cup (250 ml) sour cream or créme fraîche [low fat can be used]
1 to 2 pieces of chipotle chiles in adobo sauce [canned]
~~ For assembly ~~
12 - 15 homemade or store-bought good quality yellow or white corn tortilla
a handful of cilantro, finely chopped

Steps:

  • Wash, peel, devein, and dry raw shrimps. Season with salt.
  • In a bowl, combine honey, lime juice, tequila, onion, cumin, and chipotle powder (if using). Mix well and toss shrimps in marinade. Chill 4 hours up to 12 hours in the refrigerator.
  • Heat grill to 400 F (205 C). Make sure to oil the grilles well. Skewer shrimps in soaked wooden sticks (this will make it easier to handle on a grill).
  • Grill shrimps until bright or just opaque, about 2 minutes each side. Flip the shrimp skewers and cook for another 2 minutes or until they turn bright orange. Alternatively, you can also pan fry the shrimps. Set cooked shrimps aside.
  • Dice the avocados and squeeze juice from the remaining 1 lime.
  • Thinly slice the red cabbage using a sharp knife or a mandolin.
  • To make the dressing for the red cabbage slaw, put the lime juice, Dijon mustard, sea salt, pepper and oil in a jar or bowl. Whisk vigourously until it emulsifies.
  • Toss the red cabbage with the lime vinaigrette. Set aside.
  • Meanwhile, to make the chipotle crema, place the chipotles in the bowl of the food processor and give it a good whirl until it is smooth.
  • Stir in the sour cream or créme fraîche, mixing well until the colour is even. Transfer chipotle crema in a squeeze bottle.
  • To assemble the tacos, heat tortilla in a dry pan, about 1 minute per side or until lightly browned or charred. Wrap tortilla in a cloth to prevent from drying out. Set aside, covered.
  • Place some diced avocados in the middle of the tortilla, followed by the red cabbage slaw. Remove skewers from shrimps and pile on the taco.
  • Drizzle with the chipotle crema and garnish with cilantro. Serve immediately.

Steps:

  • To make tequila-lime marinade: Combine 1/4 cup of the tequila and the lime juice, cayenne pepper, chili powder, jalapeno and black pepper in a medium bowl. To make tequila-lime shrimp: Toss the marinade over the shrimp, cover and let marinate in the refrigerator for at least 30 minutes. Remove from the refrigerator and toss the mixture with 1/4 cup of the olive oil, the cilantro and salt. Place 1 teaspoon of olive oil in a large sauté pan over medium-high heat. When the oil begins to smoke, remove the pan from the stove and add 4 Tbsp. of tequila to the pan. (You can avoid a dangerous flare-up by removing the pan from the stove.) Drain the shrimp from the marinade. Discard the marinade. Toss one-quarter of the shrimp into the pan. Return the pan to the stove and cook for 1 to 2 minutes, tossing or stirring the shrimp. Cook another 2 minutes and, using a slotted spoon or spatula, place the shrimp on a serving plate. Repeat the steps with the rest of the shrimp. Always remove the pan from the stove when tossing in the next batch of shrimp. Cook another 2 minutes and, using a slotted spoon or spatula, place the shrimp on a serving plate. Steps:

  • In a small bowl combine all ingredients for the shrimp marinade and stir. Place peeled and deveined shrimp in a resealable bag and add the marinade to coat the shrimp. Place sealed bag in the refrigerator for 20 minutes.
  • Meanwhile, in a large bowl combine jicama, orange, red onion, cilantro, garlic, oil, and lime juice. Stir well. Set aside until ready to use.

Mix well and toss shrimps in marinade. Chill 4 hours up to 12 hours in the refrigerator. 3. Heat grill to 400 F (205 C). Make sure to oil the grilles well. Skewer shrimps in soaked wooden sticks (this will make it easier to handle on a grill). Grill shrimps until bright or just opaque, about 2 minutes each side. Flip the shrimp skewers and cook for another 2 minutes or until they turn bright orange. Alternatively, you can also pan fry the shrimps. Set cooked shrimps aside. 4. Dice the avocados and squeeze juice from the remaining 1 lime. Thinly slice the red cabbage using a sharp knife or a mandolin. To make the dressing for the red cabbage slaw, put the lime juice, Dijon mustard, sea salt, pepper and oil in a jar or bowl. Whisk vigourously until it emulsifies. Toss the red cabbage with the lime vinaigrette. Set aside. 5. Meanwhile, to make the chipotle crema, place the chipotles in the bowl of the food processor and give it a good whirl until it is smooth. Stir in the sour cream or créme fraîche, mixing well until the colour is even. Transfer chipotle crema in a squeeze bottle. 6. To assemble the tacos, heat tortilla in a dry pan, about 1 minute per side or until lightly browned or charred. Wrap tortilla in a cloth to prevent from drying out. Set aside, covered. 7. Place some diced avocados in the middle of the tortilla, followed by the red cabbage slaw. Remove skewers from shrimps and pile on the taco. Drizzle with the chipotle crema and garnish with cilantro. Serve immediately.

SHRIMP ROULADE WITH TEQUILA LIME RELISH

Number Of Ingredients 20

1 teaspoon chopped fresh parsley
1 teaspoon chopped fresh thyme
1 teaspoon chopped fresh chives
1/2 cup cream cheese, softened
1 cup fresh spinach leaves, washed and blanched
8 shrimp (15 count or larger), peeled and deveined
1/2 cup cornstarch
1 red bell pepper (roasted with the skin, seeds, and ribs removed, sliced and julienned)
2 tablespoons flour seasoned with salt and freshly ground black pepper
2 egg whites, beaten until frothy
1 cup fresh white bread crumbs
2 tablespoons extra virgin olive oil
2 limes, peeled and cut into sections
2 ounces tequila, preferably Cuervo Gold
1 small white onion, diced
2 tablespoons hot pepper jelly
2 tablespoons white wine
1 tablespoon sherry or Champagne vinegar
1 tablespoon fresh cilantro, chopped
1 teaspoon toasted cumin seeds

Steps:

  • Blend the fresh herbs into the cheese. Blanch the spinach leaves for 2 minutes in boiling water and let cool. Butterfly the shrimp (split them down the center, cutting almost but not completely through) and open them flat to resemble a butterfly shape. Dip the shrimp in cornstarch between 2 sheets of plastic wrap and pound the shrimp to a 1/16-inch thickness. Place 1 spinach leaf on each shrimp. Pipe a 2-inch strip of cream cheese from head to tail down the center of the spinach. Arrange a strip of bell pepper along one side of the cream cheese. Roll the flattened shrimp and refrigerate. A few minutes before serving time, dredge the shrimp rolls lightly in the seasoned flour, then in the egg whites, and then in the bread crumbs. Preheat oven to 350 degrees F. In a nonstick ovenproof frying pan, heat the olive oil until hot. Brown the breaded shrimp rolls until golden brown. Transfer the pan to the oven and bake for 8 to 10 minutes. Slice on the diagonal. Serve with the Tequila-Lime Relish.
  • Mix all the ingredients and let stand for 1 hour. For garnish, use carrot peels and chives.

SHRIMP WITH JALAPENO, TEQUILA AND LIME

I first had this at a little neighborhood restaurant next door to a bed and breakfast I stayed at in San Francisco. Unfortunately both are now gone. This serves 4 as an appetizer or 2 as an entree.

1/8 c olive oil
1 clove garlic, peeled and minced
1 large jalapeno pepper, slice into rings (remove seeds for less spicy version)
1 lb raw medium shrimp, peeled and deveined (leave tails on)
1/2 c tequila
1 Tbsp triple sec
2 Tbsp fresh lime juice
GARNISH
1/8 c chopped fresh cilantro
lime wedges
margarita salt, to taste

Steps:

  • 1. Heat oil in a large non-stick skillet over medium-high heat. Add garlic and saute until fragrant, about 1 minute. Add jalapeno and cook 1 minute more.
  • 2. Add shrimp and saute until just turning pink.
  • 3. Add tequila, triple sec and lime juice and cook shrimp until just done. Do not overcook.
  • 4. Spoon onto individual plates and garnish with chopped cilantro, lime wedges and sprinkle with a little margarita salt.

1/2Cup fresh cilantro
1oz baby mixed lettuce
1Tbsp toasted ground cumin
1Tbsp crushed red pepper

2Tbsp minced, fresh ginger
2Tbsp minced garlic
1Tbsp curry powder
1Cup Oriental sesame oil
1Cup lime juice
4Cups peeled raw shrimp (21-25ct.)

Steps:

  • Use the mixed greens and noodles for service as a bed for the shrimp. Use cilantro as garnish. Marinate shrimp in remaining ingredients for at least an hour. Saute shrimp and chill once cooked. Bring marinade to a boil for 15 seconds and quick chill. Arrange mixed greens on small plate with noodles in center to create some height. Place finished shrimp onto noodles. Drizzle with sauce and serve cold.
