- Sprinkle steaks with steak seasoning. In a large skillet, heat butter over medium heat. Add steaks; cook until meat reaches desired doneness, 4-5 minutes on each side. Remove steaks from pan., Add mushrooms to skillet; cook and stir over medium-high heat until tender. Add broth, stirring to loosen browned bits from pan. Stir in cream, steak sauce and garlic salt. Bring to a boil; cook and stir until sauce is slightly thickened, 1-2 minutes., Return steaks to pan and turn to coat; heat through. Stir in chives.

- Cut tenderloin into 8 pieces; place each piece between 2 pieces of plastic wrap or waxed paper and flatten to 1/2-in. thickness. - Heat oven to 400. Place sheet of foil on 15 X 10 X 1-inch baking pan or cookie sheet. Place beef tenderloin on foil; tuck narrow end under. Turn edges of foil up around tenderloin to contain juices. Bake at 400 for 30-40 minutes for medium doneness.
- Meanwhile, in small bowl, combine broth and cornstarch; blend well. Set aside.
- Heat oil in small nonstick skillet until hot. Add onions; cook about 1 minute. Stir in parsley, pepper, mustard, and lemon juice. Add cornstarch mixture; cook and stir over medium heat for 4 - 6 minutes or until sauce is bubbly and slightly thickened.
- To serve, cut tenderloin into 1/2-inch slices. Serve sauce over slices.

ROAST TENDERLOIN DIANE
A special occasion meal. I love this at Christmas or Valentine's Day. 8 hour marinating time is not included in prep time.

- 1. Combine the first 7 ingredients in a small bowl; stir well.
- 2. Place the tenderloin in a large shallow dish; pour the marinade mixture over the tenderloin. Cover and marinate in the refrigerator 8 hours, turning occasionally.
- 3. Remove the tenderloin from the marinade, reserving the marinade. Place the marinade in a small saucepan. Bring to a boil; reduce heat, and simmer 3 minutes. Set aside.
- 4. Place the tenderloin on a rack in a shallow roasting pan; insert a meat thermometer, making sure it does not touch any fat. Bake at 425 degrees for 45 to 55 minutes, or until the thermometer registers 140 degrees (for rare), 150 degrees (for medium-rare), or 160 degrees (for medium). I do not suggest you cook this more than medium rare for best flavor and tenderness. Baste occasionally with the marinade. Let the tenderloin stand 10 minutes before serving.
- 5. Saute the mushrooms in 1 tablespoon melted butter in a skillet until tender; set aside, and keep warm.
- 6. Place any remaining marinade in a small saucepan; add water and 2 tablespoons butter. Bring to a boil; reduce heat, and simmer 3 minutes. Slice tenderloin; spoon sauce over tenderloin. Top with sauteed mushrooms.
