Steps:

  • Heat 2 inches oil in a 4-quart heavy pot over moderate heat until a deep-fat thermometer registers 365°F.
  • While oil is heating, make dipping sauce by stirring together soy sauce, lime juice, and sugar until sugar is dissolved. 3Whisk together flour and sesame seeds and whisk in beer until batter is smooth.
  • Toss about 10 beans in batter until coated. Add to oil 1 at a time (to keep separate) and fry, turning, until golden, about 1 1/2 minutes. Transfer with tongs to paper towels to drain and sprinkle with salt to taste. Coat and fry remaining beans in same manner.
  • Serve beans with dipping sauce.

He fries green beans in a tempura batter, then serves them - hot, crunchy, with plenty of salt - aside a sweet-and-spicy mustard sauce. You'll find them on the bar, eaten as meals in themselves, and at most tables running back through the room as appetizers or side dishes. They are Buffalo chicken wings for people with good art on the wall and a capacity for avoiding, as A.J. Liebling wrote, the fatal trap of abstinence. You simply can't eat just one.

4 egg whites
3 cups flour
2 3/4 cups club soda
About 6 cups canola oil, for frying
1/4 cup Dijon mustard
2 tablespoons honey
2 teaspoons light soy sauce
1 teaspoon hot sauce
1 pound green beans, trimmed
Kosher salt

Steps:

  • In a large bowl, whisk the egg whites until soft peaks form. Whisk in the flour and club soda. Place the batter in the refrigerator until ready to use.
  • Pour the oil into a large pot so that it is at least a few inches deep. Heat to 350 degrees over a medium-high flame.
  • Meanwhile, combine the mustard, honey and soy and hot sauces in a small saucepan and set over medium heat, stirring occasionally, until warm and thick, about 5 minutes. Set aside.
  • Dip the trimmed beans into the batter, letting the excess run off. (A slotted spoon or spider is useful here.) Carefully lower them into the hot oil in small batches, so that they do not stick together. Fry until the batter is golden brown and the beans are bright green, about 3 minutes. ¾ pound fresh green beans, rinsed and trimmed

1/4 cup Coleman's dry mustard
1/2 cup rice wine vinegar (unseasoned)
1/4 cup sugar
1 egg
1 1/2 tablespoons yellow miso
to taste salt and pepper
1 cup all-purpose flour
1 1/4 cups cold water
1 tablespoon baking powder
1 tablespoon chopped fresh mint leaves
1/2 lb fresh green beans, trimmed of the stem end
4 cups peanut oil (or the amount suitable for your pot or deep frier)

Steps:

  • Combine the dry mustard, vinegar, sugar and egg in the top of a double boiler and mix until smooth using a wooden spoon. Place over the heat and cook for four or five minutes until slightly thickened stirring with a wooden spoon. Chill.
  • Remove from the heat and stir in the miso. Season to taste with salt and pepper.
  • In a suitable bowl, combine the flour, baking powder and mint and mix well. Stir in the water and mix until smooth. Season to taste with salt and pepper.
  • In a deep frier or deep pot, heat the oil to 350°F.
  • Dip the beans into the batter and coat evenly. Remove from the batter and allow it to drip off slightly. Deep fry until golden brown.
  • Remove the fried beans to a baking pan covered with absorbent towels and sprinkle with salt and pepper. Serve with the sauce on the side for dipping.

1/2 cup canola oil, plus more for frying
1 lemon, zested and juiced
1/2 cup flat-leaf parsley leaves and tender stems, finely minced, plus 1 cup left intact
2 cloves garlic, finely minced
2 large eggs, separated
1/2 cup extra-virgin olive oil
Kosher salt and freshly ground black pepper
1 cup rice flour
1 cup cold seltzer or club soda
1/2 pound green beans, trimmed
1/2 pound shrimp, shelled, deveined and tails intact

Steps:

  • Heat 2 1/2 inches canola oil in a Dutch oven over medium heat until a deep-fry thermometer registers 375 degrees F. Line a rimmed baking sheet with paper towels.
  • While the oil is heating, place the lemon zest, minced parsley and half of the garlic on one side on the prepared baking sheet.
  • In a mini food processor, combine the remaining 1 cup parsley and minced garlic with the egg yolks and lemon juice. Process on high speed until the parsley is well incorporated. Add the 1/2 cup canola oil and pulse until the aioli is emulsified. Transfer to a medium bowl. While whisking, slowly stream in the olive oil, until the aioli has thickened. Season with salt and pepper. Set aside.
  • Whip the egg whites in a large bowl with a handheld mixer until stiff peaks form, about 3 minutes. Whisk in the rice flour and seltzer.
  • Dip the green beans into the tempura batter then remove with a slotted spoon or a spider, letting any excess batter drip off. Fry in batches (to prevent the beans from clumping together) until golden brown and crispy, 2 to 3 minutes. Transfer to the other side of the baking sheet to drain.
  • Dip the shrimp in the batter, letting any excess drip off, and fry until golden and crispy, 2 to 3 minutes. Transfer to the baking sheet to drain.
  • To make the gremolata, combine the minced parsley and garlic with the lemon zest in a small bowl. Toss together with a spoon until well incorporated.
  • Combine the green bean tempura with 1/2 of the gremolata in a medium bowl; season with salt, toss to evenly coat, then transfer to a plate. Repeat with the shrimp tempura and remaining gremolata.
  • Serve the tempura with the lemon-parsley aioli, for dipping. Enjoy!

SPICED GREEN BEANS AND BABY BROCCOLI TEMPURA

Deep-frying is not something I do often, but after I've eaten well-executed tempura at a restaurant and can't shake the memory of delicious batter-fried vegetables, I get out my wok. I turn on the hood fan, open the window and start heating up oil. I like to play around with different batters and coatings. This spicy, delicate batter is somewhere between a puffy beignet-type coating and a simpler egg, flour and bread-crumb dusting. It's mostly cornstarch, with a small amount of cornmeal and whole wheat flour - just enough to hold the batter together. I add dukkah, cilantro and cumin for flavor and texture. Ice-cold sparkling water helps keep the batter light; it fries up crispy rather than bready because there's very little gluten to toughen it. You can use this batter with all sorts of vegetables, but I particularly love green beans and baby broccoli. The batter wraps itself nicely around the smooth beans and nestles in among the spindly flowers at the end of a baby broccoli stem, resulting in lacy, extra-crispy tempura. A wok is ideal for deep-frying. It can accommodate a lot of vegetables at one time without crowding, and it holds heat well. The oil should hover between 350 and 375 degrees so that the vegetables cook quickly and crisp up without absorbing too much oil. Be sure to let the oil come back up to temperature between batches, and use a thermometer. You will be amazed to find a green bean tender and hot inside its crispy coating in two minutes or less.

Steps:

  • Make the batter: In a medium bowl, whisk together cornstarch, polenta or cornmeal, whole wheat flour, salt and cumin. Whisk in sparkling water. Stir in cilantro and dukkah.
  • Top and tail beans. Cut long stems off broccoli; cut broccoli tops into smaller florets or leave intact.
  • Pour oil to a depth of 3 inches into a wok or wide saucepan and heat over medium-high heat to 350 to 375 degrees. Set up a sheet pan with a rack on it next to pan and cover rack with layers of paper towels. Have a deep-fry skimmer handy for removing vegetables from the oil onto the rack.
  • Using tongs, dip vegetables into the batter a few at a time, making sure to coat thoroughly. Transfer to hot oil and fry until golden brown, 1 to 2 minutes. Flip over with skimmer to make sure coating is evenly fried. Do not crowd pan. Let oil come back up to temperature between batches.
  • Using skimmer, remove vegetables from oil, allowing excess oil to drip back into pan, and drain on towel-covered rack. Sprinkle with salt right away if desired. Cool slightly and serve.

1 1/2 cups all purpose flour
1/2 cup cornstarch
2 teaspoons ground ginger
1 teaspoon salt
1/4 teaspoon ground black pepper
1 3/4 cups ice water
6 tablespoons low-sodium soy sauce
1/4 cup fresh lime juice
1 1/2 teaspoons wasabi paste*
1/2 teaspoon dried crushed red pepper
1 14-ounce package firm tofu
Vegetable oil (for frying)
24 yellow wax beans, trimmed
24 thin green beans, trimmed
*Wasabi (horseradish) paste is sold at Japanese markets and some supermarkets.

Steps:

  • Combine first 5 ingredients in blender. Add 1 3/4 cups water and blend until smooth. Transfer batter to shallow dish.
  • Whisk soy sauce, lime juice, wasabi and red pepper in small bowl to blend.
  • Cut tofu horizontally into 1/2-inch-wide slices. Cut each slice into 1/2-inch-wide logs. Arrange tofu in single layer on several layers of paper towels. Cover with paper towels. Let stand 1 hour.
  • Pour enough oil into heavy large Dutch oven to reach depth of 3 inches. Heat oil to 375°F. Working in batches, dip beans into batter, shake off excess and add to oil. Fry until golden, stirring often, about 3 minutes per batch. Using slotted spoon, transfer to paper towels; drain. Repeat with tofu and batter.
  • Serve beans and tofu with sauce.
