4 oz tempeh, half a package
olive oil, to taste
2 tablespoons soy sauce
1 tablespoon maple syrup
½ teaspoon liquid smoke, optional
½ teaspoon garlic powder
black pepper, to taste

Steps:

  • On a cutting board, cut tempeh ¼-inch (6 mm) thick slices.
  • Add olive oil to a pan over medium heat and add the tempeh. Cook for 5 minutes on each side until brown and crispy.
  • Add 1 tablespoon of water to the pan and stir.
  • Add soy sauce, maple syrup, liquid smoke, garlic powder, and black pepper, and stir until tempeh is evenly coated.
  • Let brown for 2-3 minutes.

1/2 cup olive oil
1/2 cup pure maple syrup
1/2 cup soy sauce
2 teaspoons smoked paprika

16 ounces tempeh, cut into about 50 (1/4"-thick) strips

Steps:

  • Whisk oil, maple syrup, soy sauce, paprika, salt, cayenne, and black pepper in a shallow dish. Add tempeh and gently toss to coat. Cover and chill at least 2 hours or up to 4.

2 cups cherry tomatoes (about 10 ounces), halved
2 tablespoons regular or vegan mayonnaise
4 slices sourdough bread, grilled or toasted
1/2 large avocado, thinly sliced just before serving
1/4 cup basil leaves, coarsely torn
2 crisp romaine leaves

Steps:

  • Prepare marinade for Tempeh Bacon in a shallow dish, adding tomatoes along with tempeh. Cover and chill at least 2 hours or up to 4.
  • Preheat oven to 400°F and line a rimmed baking sheet with parchment paper. Arrange tempeh on one-half of sheet and tomatoes on remaining half in a single layer. Bake, tossing tempeh and basting with marinade after 10 minutes, until tempeh is crispy and tomatoes are shrunken and sweet, 30-33 minutes.

1/4 cup pure maple syrup (60 milliliters)
1/4 cup soy sauce (60 milliliters)
3 tablespoons olive oil, divided
1 1/2 teaspoon smoked paprika
1/2 teaspoon kosher salt
1/4 teaspoon cayenne pepper
1/4 teaspoon cumin
1/4 teaspoon freshly ground black pepper
225 to 250 grams tempeh, sliced into 20 to 24 slices (8 to 9 ounces)
8 slices sourdough multigrain rye, lightly toasted, such as Stonemill
2 to 4 tablespoons mayonnaise
2 tablespoons Dijon mustard
4 pieces of lettuce
1 to 2 tomatoes, sliced

Steps:

  • Whisk together the maple syrup, soy sauce, 2 tablespoons of oil, smoked paprika, salt, cayenne, cumin and black pepper in a large bowl. Add in the tempeh and gently mix to combine and coat. Place the tempeh in the fridge to marinate for at least 4 hours or up to 12 hours.
  • Remove the tempeh from the marinade and set both aside. Heat a large nonstick skillet over medium heat and add in the remaining tablespoon of oil. Add the tempeh and cook for 2 minutes per side, or until golden brown. Spoon over some of the reserved marinade and allow it to cook down and coat the tempeh for about 1 to 2 minutes, flipping frequently. Set the tempeh aside.
  • Assemble the sandwiches by spreading half of the sliced bread with mayonnaise and the other half with Dijon. Top with lettuce, tomato and the tempeh bacon, season with salt and pepper, cut the sandwiches in half and serve.

VEGAN TEMPEH BACON

3 tablespoons Braggs liquid aminos or 3 tablespoons soy sauce
1/3 cup apple cider
1 teaspoon tomato paste
1/4 teaspoon liquid smoke
1 (8 ounce) package tempeh

2 tablespoons peanut oil or 2 tablespoons vegetable oil

Steps:

  • To make the marinade combine the soy sauce, cider, tomato paste and liquid smoke in a wide, shallow bowl or pan and mix with a fork until the tomato paste is fully dissolved.
  • Cut the tempeh into thin strips (less than 1/4 inch thick) lengthwise. You should be able to get about 12 strips. Rub the strips with the hing. Submerge the tempeh strips in the marinade and let sit, for at least an hour and up to overnight.
  • Heat the oil in an 11 or 12 inch skillet over medium heat. Add the tempeh strips and cook for 4 minutes on one side; the bottom should be nicely browned. Flip the strips over and pour the remainder of the marinade over them. If there isn't much marinade left add a splash of water. Cover and let cook for 3 more minutes, or until the liquid is absorbed. Uncover and check for doneness; if necessary keep cooking uncovered until all sides are nicely browned. Remove from heat and serve. (I recommend doubling the marinade recipe.).

1 (8 ounce) package tempeh, sliced into 24 very thin slices
1/4 cup low sodium soy sauce
2 tablespoons apple cider vinegar
1 teaspoon light brown sugar
1/2 teaspoon ground cumin
1/2 teaspoon dried ancho chile powder (or to taste)
2 teaspoons liquid smoke (optional)
1 tablespoon vegetable oil (or light olive oil)
smoked paprika (optional)

Steps:

  • Lay the tempeh slices in 2 13- x 9-inch baking dishes. Bring soy sauce, vinegar, brown sugar, cumin, ancho chile powder, and ½ cup water to a boil in small saucepan. Boil 1 minute, then remove from heat, and stir in liquid smoke, if using. Pour over tempeh slices. Let cool, then cover and chill 2 hours, or overnight.
  • Preheat oven to 300°F.
  • Line 2 baking sheets with parchment paper. Carefully transfer tempeh slices to prepared baking sheet, and discard marinade(or save and use again for more tempeh bacon).
  • Brush slices with vegetable oil, and sprinkle with paprika, if desired. Bake 10 to 15 minutes, or until beginning to brown. Flip tempeh slices, brush with oil, and bake 5 to 7 minutes more, or until crisp and dark brown.

2 shallots, minced (or red onion)
2 leeks, thinly sliced
1 large carrot, coarsely chopped
3 garlic cloves, minced
1 teaspoon fresh rosemary, chopped
1 bay leaf
1 teaspoon smoked paprika
5 cups vegetable broth (or faux chicken stock)
1 1/2 cups split peas, rinsed
fresh ground black pepper
2 teaspoons canola oil
4 slices tempeh bacon (Smoky Tempeh Bacon)
1/4 cup vegan mayonnaise (or use regular)
1/2 cup thick cashew cream (Cashew Cream(Regular and Thick) or use storebought)
1/2 chipotle chile in adobo
sea salt
fresh ground black pepper
1 lime, juice of

Steps:

  • Put a large stockpot over medium heat. Sprinkle the bottom with a pinch of salt and heat for 1 minute. Add the margarine and stir until melted, being careful not to let it burn. This will create a nonstick effect.
  • Add the shallots, leeks, carrot, and garlic and saute for 5 minutes.
  • Add the rosemary, bay leaf, and paprika and cook another 2 minutes.
  • Add the stock and split peas and season with salt and pepper to taste. Bring to a boil and reduce the heat and simmer uncovered for about 1 hour.
  • Meanwhile, heat the oil in a small skillet over medium high heat. Add the tempeh bacon and fry on both sides until crisp. Cool and coarsley crumble. Serve the soup with the chipotle cream and tempeh bacon. Enjoy!
  • Chipotle Cream:.
  • Place all the ingredients in a food processor and blend until well mixed.

1 medium onion, finely chopped
2 to 3 garlic cloves, minced
One 6-ounce package Fakin' Bacon tempeh strips, finely chopped
One 15-to 16-ounce can black-eyed peas, drained and rinsed
1 medium Granny Smith apple, diced
2/3 cup natural barbecue sauce (try smoke-flavored)
10 to 12 ounces Swiss chard or spinach, well washed, stemmed, and chopped

Steps:

  • Heat the oil in a wide skillet. Add the onion and sauté over medium-low heat until translucent.
  • Add the garlic and tempeh bacon and sauté, stirring frequently, until everything is golden and just beginning to brown lightly.
  • Stir in the black-eyed peas, apple, and barbecue sauce. Cook over medium-high heat for 10 minutes or until the sauce is reduced.
  • Add the greens and cover until wilted. Stir the greens, then cook for another 2 minutes or so for the spinach, or 4 minutes for the chard, until tender but still bright green. Serve at once.
  • Variation
  • This is also wonderful with kale, but it needs more cooking time than chard or spinach. Start steaming it separately just before starting the dish; once cooked to your liking, stir it in at the end.
  • Menu Suggestions
  • My favorite companion for this dish is Cheese Grits with Corn (page 96). Add a simple green salad to the meal.
  • Another nice way to complete this meal is with Fruitful Red Slaw (page 177) or Creole Coleslaw (page 178) and microwaved sweet potatoes.
