This old-fashioned dressing is a great side dish for the Thanksgiving or alongside roast chicken. Made with saltine crackers, celery, onions, and herbs, it's simple and satisfying.

cooking spray
½ cup butter
1 large onion, diced
3 stalks celery, diced
1 teaspoon salt, or to taste
½ teaspoon freshly ground black pepper, or to taste
½ teaspoon dried sage
½ teaspoon dried thyme
½ teaspoon dried rosemary
1 pinch cayenne pepper, or to taste
2 ¾ cups chicken broth
1 pound saltine crackers, crushed
½ cup milk
1 egg

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Lightly coat a baking dish with cooking spray.
  • Melt butter in a large skillet over medium heat. Cook and stir onion, celery, and 1 teaspoon salt in melted butter until onion begins to turn translucent, about 5 minutes. season with black pepper, sage, thyme, rosemary, and cayenne pepper; cook and stir about 1 minute.
  • Remove skillet from heat and stir in chicken broth.
  • Combine crushed crackers and onion mixture in a large bowl. Add egg and cream; mix until combined. Season with salt and black pepper.
  • Spread cracker mixture evenly in a large baking dish and smooth the top.
  • Bake in the preheated oven until top is golden brown, 40 to 45 minutes.

CRACKER STUFFING

This is a recipe from my grandmother. It was passed down to me by my mom. Not sure but I think my grandmother got it from her mom too. In any case, I love this. Leftovers can be sliced up and put on turkey/chicken sandwiches. Yum! Also, use this and make the stuffing into balls about the size of meat balls and cook them with gravy and cut up leftover turkey/chicken. Again, I love this stuff!

1 (16 ounce) box saltine crackers
2 eggs
1/2 cup butter (melted)
1 cup chicken bouillon
1 teaspoon mace
1 teaspoon thyme
1 teaspoon black pepper
1 teaspoon paprika
1 tablespoon onion flakes
1 tablespoon dried celery flakes
2 tablespoons parsley flakes

Steps:

  • Combine crackers and eggs in a large bowl.
  • Add butter and mix well.
  • Add bullion slowly.
  • Add the rest of the ingredients and mix well.
  • You may want to add more of a certain ingredient listed above according to your taste.
  • Take stuffing mixture and put it in a casserole dish.
  • Bake @ 350 degrees for 20 to 25 minutes until it is golden brown.

2/3 cup chopped onion
2 cups chopped celery
2 quarts day old grated cornbread
1 quart day old grated biscuit
1/4 cup dried parsley flakes
2 teaspoons poultry seasoning
2 teaspoons ground sage
1 teaspoon coarse ground pepper
4 ounces margarine
1 quart chicken broth, plus
1 (14 ounce) can chicken broth

Steps:

  • Preheat oven to 400 degrees Fahrenheit.
  • Mix onion, celery, grated cornbread and biscuits, parsley, poultry seasoning, sage and pepper in a large mixing bowl.
  • Add melted margarine to mixture.
  • Stir until well blended.
  • Add Chicken broth to dry ingredients and mix well. The dressing should have a wet but not soupy consistency like a quick bread batter (banana bread/corn bread).
  • Divide mixture evenly into two (8 x 8 inch) pans sprayed with non-stick spray.
  • Bake uncovered for 1 hour at 400 degrees Fahrenheit or until lightly brown on the top.
  • Remove from oven and enjoy!
  • Tips for great Dressing:.
  • Grate biscuits and corn muffins in a food processor until coarsely ground or using the largest holes on your hand grater.

1/2 cup chopped onion
2 tablespoons butter
1 egg
2/3 cup milk
1 tablespoon minced fresh parsley
1/2 teaspoon rubbed sage
1/4 teaspoon dried thyme
1/4 teaspoon salt
Dash pepper
2 cups coarsely crushed saltines (about 27 crackers)

Steps:

  • In a skillet over medium heat, saute celery and onion in butter until tender. In a bowl, combine the egg, milk, parsley, sage, thyme, salt and pepper. Add the crackers and celery mixture; toss lightly. , Place in a greased 1-qt. baking dish. Bake, uncovered, at 350° for 25-30 minutes or until browned.
