6 ears corn
4 lbs lobster meat, cooked, cut into bite size pieces
2 tomatoes, large, peeled, seeded
2 avocados, peeled, cubed
1 tablespoon mayonnaise
2 tablespoons milk (or light cream)
1/2 cup fresh dill, chopped
salt and pepper

Steps:

  • Cook the corn and then scrape off the kernels over a bowl and set aside.
  • Put the tomatoes, avocado and corn into a bowl and add the lobster meat and toss gently.
  • In a small bowl, combine the mayonnaise, with the milk and mix until smooth.
  • Sprinkle the lobster mixture with dill, salt and pepper, then add the mayonnaise mixture and stir briefly so the sauce barely holds the rest of the ingredients together.
  • Cover and refrigerate for a few hours before serving.

From Gourmet magazine, July, 2001 by Melissa Roberts-Matar. "This lobster salad is wonderful on its own-but piled onto a hot dog bun it becomes a perfect lobster roll. The lobsters may be cooked and shelled 1 day ahead and chilled, covered. The salad can also be made a day ahead of serving. Keep covered and chilled.

4 (1 1/2 lb) live lobsters
1 large shallot, finely chopped
3 tablespoons lemon juice
1/3 cup mayonnaise
1/2 teaspoon salt
2 tablespoons fresh tarragon, finely chopped
1/4 teaspoon black pepper
hot dog bun, spit top (optional)

Steps:

  • Plunge 2 live lobsters headfirst into an 8 quart pot of boiling salted water.
  • Loosely cover pot and cook over moderately high heat for 9 minutes from the time they entered the water, then transfer with tongs to sink to cool.
  • Return water to a boil and repeat with the next 2 lobsters.
  • While the lobsters are cooking, combine shallot, lemon juice, and 1/2 teaspoons salt in in a large bowl and let stand at room temperature for 30 minutes.
  • When lobsters are cool, remove meat from lobster, discard tomalley, roe (if any) and shells.
  • Cut meat into 1/2 inch pieces.
  • Whisk mayonnaise, tarragon, and 1/4 teaspoons black pepper into shallot mixture.
  • Add lobster meat to the mayo blend and toss gently to coat.
  • If serving on hot dog buns, butter and grill or toast the buns if desired.
  • Enjoy this simple and delicious rite of summer!

1 1/2 lbs lobsters, chop up meat (If you want, you can subsitute with shrimp or crab meat)
3 stalks celery, chopped
3/4 bunch fresh dill, finely chopped
2 lemons, juice of
1 lemon, zest of
1/2 tablespoon mayonnaise
1 teaspoon malt vinegar
1/2 teaspoon Old Bay Seasoning
salt and pepper, to taste

Steps:

  • Mix everything together in a bowl.
  • Adjust seasoning to taste.

3 ounces imitation crabmeat (or lobster, it is usually Pollack. Sometimes packed in 4 oz, either is fine)
1 cup celery, chopped
1/4 cup onion, chopped (Vidalia, red or yellow)
1 apple, chopped (or use whatever fruit is in season)
1/4 cup plain yogurt (or Greek plain)
1/4 cup mayonnaise (if this will sit out, just use yogurt)
2 tablespoons lemon juice
salt
pepper

Steps:

  • Mix it all up and enjoy.
  • Serving ideas:.
  • Over a bed of lettuce.
  • In an opened tomato.
  • With more fruit around the edge.
  • On crackers.
