RICE PUDDING WITH GREEN TEA APPLE SORBET AND CHILI PINEAPPLE



Rice Pudding with Green Tea Apple Sorbet and Chili Pineapple image

2 cups heavy cream
1 cup carnaroli rice
1/4 cup sugar
1 tablespoon orange zest
3 cardamom pods
1 vanilla bean
1/4 cup sugar
1 pineapple, peeled, cored, cut into1/4-inch slices
2 tablespoon butter
1 teaspoon chili powder
8 ounces green tea, steeped according to package
9 ounces sugar
8 ounces apple puree
1 egg white, whipped light and frothy
2 egg whites
1 egg
4 ounces confectioners sugar, sifted
1 1/2 ounces bread flour, sifted
1 teaspoon orange zest
1 teaspoon lemon zest

Steps:

  • In a saucepan, heat the cream to a boil and add the rice, sugar, orange zest, cardamom pods, and vanilla bean. Stir rice mixture until it becomes thick and creamy. Cook for approximately 15 minutes.
  • To make the chili pineapple, melt the sugar in a saute pan and caramelize. Add the pineapple slices and cook for approximately 3 minutes. Add the butter and the chili powder and cook an additional minutes. Set aside until ready to use.
  • Combine the green tea and sugar in a saucepan and heat the mixture to dissolve the sugar completely in order to make a syrup. Add the apple puree and allow the syrup to cool completely. Add the egg white and process the sorbet in an ice cream machine. Store in freezer until ready to use.
  • To make the tuilles, whip together the egg whites, egg, confectioners' sugar, and bread flour until they are blended well and smooth. Fold in the orange and lemon zest and allow the batter to rest overnight in the refrigerator. Spread the batter onto a greased and floured pan into half dollar sizes and bake for a couple of minutes until edges just begin to turn brown. Immediately remove from oven and allow to cool flat.
  • To serve, spoon rice pudding on plate and top with chili pineapple slices. Using 2 tuilles, create a sandwich with a sorbet scoop between the tuilles. Place on plate and serve.

1 teaspoon unflavored gelatin
2 cups sugar
1/4 cup corn syrup
6 green tea bags
Juice of 1 lemon
Green food coloring
Chinese Hat Tuiles, for serving

Steps:

  • Place the water and gelatin in a medium saucepan; let dissolve for 5 minutes. Add sugar and corn syrup, bring to a boil, and cook over medium heat until the sugar is dissolved, about 2 minutes. Add the tea bags, remove pan from heat, and allow bags to steep for 10 to 15 minutes to infuse the flavor.
  • Fill a large bowl with ice and water. Remove tea bags; transfer mixture to a bowl set in the ice bath to cool. Add the lemon juice and food coloring, 1 drop at a time, until the desired shade is reached. The color will lighten slightly when frozen.
  • Freeze mixture in an ice-cream maker according to the manufacturer's directions until set but not hard. Transfer to a chilled loaf pan, wrap with plastic, and place in the freezer until firm, 4 hours or overnight. Serve garnished with Chinese hat tuiles.

2/3 cup water
1/3 cup green tea leaves, loose
1/2 cup sugar
3 mangoes, ripe
3 tablespoons fresh lemon juice

Steps:

  • Combine water and tea leaves in a saucepan. Bring just to a boil, remove from heat and let steep 5 minutes.
  • Strain, discarding the leaves. (Do not press leaves to extract liquid, this makes the liquid bitter.)
  • Return tea to clean saucepan, add sugar and bring to a boil.
  • Boil until sugar dissolves, about 1 minute.
  • Remove from heat and cool about 30 minutes.
  • Peel mangoes and cut fruit from pit. In a food processor or blender, puree mangoes with lemon juice.
  • Add tea and blend until smooth. Pour into a glass 9-inch baking dish and freeze about 3 hours.
  • Transfer mango mixture to a food processor.
  • Pulse until smooth, 30 to 40 seconds.
  • Serve at once or store in the freezer for up to 2 months.
  • Soften 10 minutes before serving.

1 sprig fresh mint, leaves removed and stem discarded
2 cups brewed orange pekoe tea

Fresh lemon juice
2 cups sugar
1 cup water

Steps:

  • Let the mint steep in the brewed tea for 30 minutes. Add the sugar syrup to make it very sweet. Add lemon juice to bring back the tea flavor and to reduce the sweetness. Freeze in an ice cream machine according to manufacturer's instructions.
  • In a saucepan, combine sugar and water. Bring to a boil and simmer until sugar is dissolved, but no color is reached. Remove from the heat and let cool.

3 cups peeled, pitted, and chopped peaches
2 cups sweetened peach iced tea (bottled or freshly brewed)
1/2 cup sugar (increase to 1 cup if the tea is unsweetened)
1 tablespoon vodka, preferably sweet tea vodka
1 tablespoon light corn syrup

Steps:

  • 1. Purée the peaches in a blender and strain through a fine-mesh sieve into a medium glass or metal bowl, pressing on the solids with a rubber spatula to remove as much liquid as possible. Discard the solids. You should have about 2 cups of purée. Add the tea, sugar, vodka, and corn syrup and stir until the sugar dissolves. Cover and refrigerate until the mixture is very cold (under 40°F), at least 4 hours, then mix well.
  • 2. Churn the sorbet in an ice cream maker according to the manufacturer's instructions. When finished, the sorbet will be thick and soft and can be served as a slushy. To make the sorbet firm enough to scoop, transfer into an airtight container, press plastic wrap directly onto the surface of the sorbet, and freeze until firm.

BLACKBERRY-BLACK TEA SORBET

You want a strong black tea for this recipe: Darjeeling, assam, etc. but if you don't have those specific teas, Earl Grey (fyi: Earl Grey does contain assam tea) will work, too. 2 cups brewed darjeeling tea (I used Stash Earl Grey Double Bergamot) or 2 cups brewed black assam tea, cooled (I used Stash Earl Grey Double Bergamot)
1 1/4 cups sugar
2 tablespoons fresh lemon juice
1 -2 teaspoon fresh grated ginger (not dried ginger)
any fresh edible flower, flowering herbs, mint leaves, lemon verbena, etc

Steps:

  • Wash blackberries well in a strainer, removing all traces of dirt and grit. Remove any stems or caps. Drain.
  • In a blender, whirl blackberries until puréed.
  • [Optional step and original to recipe (NOTE: *I skipped this part*): Pour the pureed blackberries through a fine strainer into a bowl, pressing pulp with a spatula to extract as much juice as possible; you should have 2 cups purée. Discard solids.].
  • Whisk tea, sugar, lemon juice and ginger together into the blackberry purée. Cover and chill until cold, at least 3 hours or up to 1 day.
  • Freeze in an ice cream maker (at least 1 1/2-qt. capacity) according to manufacturer's instructions until machine stops or dasher is hard to turn.

500ml black Earl Grey tea
150g golden caster sugar
150g liquid glucose
100ml double cream
1 egg
25g caster sugar
1 tbsp whisky
1 leaf gelatine , soaked in cold water for 5 mins
100ml whisky
25g golden caster sugar
1 leaf gelatine , soaked in cold water for 5 mins
1 tbsp cold butter
1 tbsp plain flour
1 tbsp caster sugar
1 tbsp medium oats
½ tsp clear honey

Steps:

  • To make the sorbet, bring the tea, sugar and liquid glucose to the boil in a pan. Make sure the sugar and glucose have dissolved, then strain into a jug and leave to cool completely. Pour into an ice cream machine and churn until frozen, then transfer to a freezer-proof container and freeze until needed.
  • To make the cream layer, pour the cream into a heavy-based pan and bring to the boil. In a bowl, whisk together the egg and sugar, then pour over the cream and whisk until combined. Rinse out the cream pan and pour in the mixture. Return to the heat and cook gently, whisking all the time, until it reaches 88C - you'll need a digital thermometer to test this. When it reaches this temperature, it will have thickened and the egg will be cooked. Pass the mix through a fine sieve into a clean bowl. Pour in the whisky, then squeeze any excess water out of the soaked gelatine and add to the bowl. Stir until all the gelatine has melted, then leave to cool a little. Pour into 4 small or 2 large glass dishes, leaving enough room for the jelly, and place in the fridge for at least 4 hours until set.
  • Make the jelly when the cream layer is almost set, put the whisky and sugar in a small pan and bring to the boil, making sure the sugar has dissolved. Remove from the heat, squeeze out any excess water from the gelatine, add to the pan and stir until melted. Pass the jelly through a fine sieve into a jug and place to one side to cool completely.
  • Once the cream layer has set, remove from the fridge and pour over the cooled jelly. If you have some left, don't worry, just leave it to set in the fridge and eat it on its own. Return to the fridge and chill until the jelly has set. Can be made up to 2 days in advance; once set, cover with cling film and store in the fridge.
  • Heat oven to 180C/160C fan/gas 4. To make the crumble, rub the butter into the flour until it resembles crumbs, then mix in the remaining ingredients. Tip onto a baking tray and bake for 15-20 mins or until golden brown. You will need to stir it a few times to ensure it cooks evenly. Remove from the oven and leave to cool. When cool, bash to a semi-fine crumble. Store in an airtight container until ready to serve.
  • Remove the set creams from the fridge and sprinkle over a generous layer of the crumble mix. Serve topped with a scoop of tea sorbet. Perfect with a shot of whisky!

WATERMELON MINT TEA SORBET

This is a refreshing palate cleanser for the whole family. I prepare this the same day as my Pickled Watermelon Rinds and Arabic Watermelon Feta Salad.

1 cup(s) mint tea, strongly brewed ( one mint tea bag or fresh mint leaves and one cup boiling water)
3 tablespoon(s) sugar
2 teaspoon(s) lime juice

Steps:

  • In a tea cup, place sugar, mint tea bag, and one cup of boiling water. Brew for 5 minutes. Stir until sugar is totally dissolve. Let cool completely.
  • Place watermelon and lime in a food processor. Puree. Some people like to strain through a sieve. I use a seedless watermelon and skip that step.
  • Combine cooled tea and watermelon puree. Stir very well.
  • At this point, you can either pour into a freezer safe bowl and freeze or use an ice cream machine. I just freeze in freezer. Pull out fifteen minutes before you intend to serve, then scoop and enjoy!
