FRIED SWEET-AND-SPICY CHICKEN WINGS



Fried Sweet-and-Spicy Chicken Wings image

3 cups (720 milliliters) Thai sweet chile sauce
3/4 cup (120 milliliters) sriracha, or more if you prefer it spicier
12 whole chicken wings, cut in half at the joint, with tips discarded or saved for stock
2 cups (450 grams) tempura flour
2 1/2 quarts (2.8 liters) vegetable oil, for frying
2 cups (450 grams) cornstarch

Steps:

  • Stir the sweet chile sauce and sriracha together in a large bowl. You will be frying the wings and rolling them in this sauce while they're hot.
  • Rinse the chicken wings in cold water, drain briefly and place in a shallow baking dish while still damp. Sprinkle the wings evenly with the tempura flour and massage until a thin batter forms.
  • Heat the oil in a large 6-quart Dutch oven or heavy-bottom pot over high heat. Using a deep-fry thermometer, bring the temperature of the oil to 365 degrees F.
  • Pour the cornstarch into a second large bowl. Dredge the chicken wings through the cornstarch, shake to remove any excess. Working in 3 batches, fry the wings until cooked through and golden brown, 8 to 10 minutes, turning them occasionally. The internal temperature of the chicken should be 165 degrees F.
  • Drain the wings on paper towels briefly, then roll them in the prepared sauce. Serve hot.

4 pounds chicken wings or drumettes
1/2 cup soy sauce
1/2 cup fresh lime juice
1/4 cup canola oil
1/4 cup honey
2 tablespoons grated fresh ginger
1/2 teaspoon crushed red pepper flakes
4 cloves garlic, minced
1 small onion, chopped

Steps:

  • Put the chicken in a large resealable bag. Combine the soy sauce, lime juice, canola oil, honey, ginger, pepper flakes, garlic and onions in a large bowl and whisk to blend. Pour the marinade into the resealable bag and massage it into the chicken. Place in the refrigerator to marinate for at least 1 hour but not more than 2 hours total.
  • Heat a grill to medium heat.
  • Remove the chicken from the marinade, place on a baking sheet lined with paper towels and pat the chicken dry. Pour the marinade into a small pot and reduce by half over medium-low heat, about 10 minutes. Set aside to brush on the chicken when grilling.
  • Grill the chicken until the skin gets crispy, about 6 minutes. Flip, brush the cooked side with the reduced marinade and cook for another 6 minutes. Flip and brush again with the reduced marinade. Cook each side until nicely browned and slightly sticky, an additional 2 to 3 minutes per side. Transfer to a serving platter and serve.

1 1/2 cups Frank's red hot sauce
1 cup brown sugar
1/2 cup honey
2 tablespoons butter
5 lbs chicken wings, uncooked

Steps:

  • brown wings on a broiling pan on top rack of the oven for 10 min each side.
  • tranfer wings into slow cooker.
  • warm "franks red hot" in medium sauce pan.
  • add butter.
  • after butter melts add brown sugar and honey.
  • slowly stir with wisk or fork over heat until sugar dissolves.
  • pour over wings in slow cooker.
  • cook on high for 2 hours.
  • stir every 30 min.
  • wings should be tender and slightly carmelized. "its making me hungry just thinking about them".
  • serve with a roll of paper towels and maybe a little ranch or blue chesse dressing to drip in and enjoy.

1 1/2 c. Dave's hot sauce
1 c. brown sugar
1/2 c. honey
2 T. butter

Steps:

  • 1. Brown wings under broiler for 10 minutes on each side. 2. Transfer wings to slow cooker. 3. Warm hot sauce in medium saucepan. 4. Add butter to hot sauce. 5. After butter melts, add brown sugar and honey. 6. Stir mixture with whisk till sugar dissolves. 7. Pour sauce over wings in slow cooker. 8. Cook wings on high heat for 2 hours, stirring every 30 minutes. 9. Wings should be tender and slightly caramelized.

¼ cup fish sauce
2 Tbsp. light or dark brown sugar
1 Tbsp. crushed red pepper flakes

3 tsp. Diamond Crystal or 1½ tsp. Morton kosher salt, divided
4 lb. chicken wings, drumettes and flats separated if desired
¼ small red onion, very thinly sliced, preferably on a mandoline
Cilantro leaves with tender stems and lime wedges (for serving)

Steps:

  • Whisk tamarind purée, fish sauce, brown sugar, red pepper flakes, cumin, and 1 tsp. Diamond Crystal or ½ tsp. Morton kosher salt in a medium bowl until combined and a loose paste forms. Set tamarind glaze aside.
  • Pat wings dry with paper towels, then season all over with remaining 2 tsp. Diamond Crystal or 1 tsp. Morton kosher salt. Place in a large bowl; add half of tamarind glaze and toss to coat. Chill 15 minutes. Set remaining glaze aside.
  • Meanwhile, place onion in a bowl of ice water and set aside.
  • Prepare a grill for medium indirect heat (for a charcoal grill, bank coals on one side of grill; for a gas grill, leave one or two burners off). Arrange wings on grate over indirect heat, making sure not to overcrowd. Brush top of each wing with some reserved glaze. Cover and grill 15 minutes. Uncover, turn wings over, and brush other side with glaze. Re-cover and grill until wings are golden brown and a thermometer inserted into the thickest part of a wing registers 165°F, about 15 minutes.
  • Brush wings with more glaze, then move over direct heat and grill until charred in spots, 1-2 minutes per side.
  • Transfer wings to a platter. Drain onion and place on paper towels; pat dry. Scatter onion over wings and top with cilantro. Serve with lime wedges for squeezing over.

1/2 cup brown sugar
1 tablespoon soy sauce
25 chicken wings

Steps:

  • place thawed wings on grill on low and let cook turning frequently.
  • In a bowl mix 1 bottle med wing sauce with a half cup brown sugar and a tablespoon soy sauce.
  • Stir till brown sugar is melted, brush on wings (or my husband diped the wings into bowl) while cooking and place back on grill.
