TAVERNS
Taverns are similar to sloppy joes, just not as "tomato-y;" I have made these for many church and work pot-lucks by increasing the quantities. For Zaar I cut the recipe down to 4 servings. I have had this recipe for many years and really don't have a clue where I first came across it. Works great in the Crock Pot.

Steps:
- In a medium skillet, brown ground beef until no longer pink, drain fat.
- Over medium heat add additional ingredients to ground beef.
- Simmer a minimum of 30 minutes, stirring occasionally.
- Serve on buns.

Similar to a sloppy joe but the pork gives it an unique flavor.

- Heat a large skillet over medium-high heat. Cook and stir ground pork in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease.
- Stir ketchup, water, vinegar, brown sugar, dry mustard, and salt into the ground beef; bring to a simmer and cook for 20 minutes. Serve on hamburger buns.

BESEDA HALL TAVERNS
The Beseda Hall in Tabor, South Dakota makes the best taverns which they serve after wedding dances. I got this recipe from one of the Altar Society members and frequently use it when I have to make a large batch of taverns for concession stands, etc.

- 1. Brown ground beef with the onion and drain off grease. Spray electric roaster with non-stick spray and combine all ingredients in roaster. Heat to simmer. Do not drain off the juice. Will serve 100 easily.
THE WHIP TAVERNS WELSH RAREBIT
This recipe appeared in the SOS column of the LA Times. The original recipe is from The Whip Tavern in Coatesille, PA. This is a rich, cheesy dish that is browned under the broiler and served with crostini for dipping. The ale they recommend is Smithwick's Irish Ale, but any will do.

- In a small saucepan, melt butter over medium heat then whisk in the flour until the mixture forms a thick, pale roux; remove from heat and set aside.
- Use a 2 quart saucepan and bring the ale to a simmer; whisk in the roux, a little at a time, until mixture is the consistency of peanut butter (you may not use all of the roux).
- Whisk in the heavy cream, Worcestershire sauce, and the dry mustard; return to a simmer and fold in the cheddar and Stilton cheeses.
- Continue cooking until the mixture is smooth; remove from heat.
- Transfer mixture to a shallow, oven-proof dish or ramekins and place under broiler to lightly brown the top.
- Serve with the toasted baguette slices (crostini).

TRUJILLO TAVERNS
I have been making this recipe for a long time. My nephews liked them, so when they came along, I put a name to them. Sandwiches like this used to be called Taverns around here. Now you hear the called Sloppy Joes too.

- 1. Brown one pound of hamburger with 1 medium chopped onion (and one rib of finely chopped celery if you have some on hand). Drain.
- 2. Add: vinegar, yellow mustard, sugar, pepper, salt, catsup and can of soup.
- 3. Simmer for at least one half hour adding a bit of water if it gets dry. Using about 1/3 cup of the mixture per hamburger bun, this recipe will fill about 8 to 10 small buns. For a large group, recipe may doubled, tripled, etc. If increasing the recipe, a can or two of chicken gumbo soup also adds more flavor. Leftovers freeze well
