3 tablespoons olive oil
1 1/2 pounds ground chuck (80 percent beef, 20 percent fat)
2 teaspoons Worcestershire sauce
1/2 teaspoon hot Hungarian paprika, plus more for sprinkling
Kosher salt and coarsely ground black pepper
2 tablespoons tomato paste
1/2 cup beef stock
1 cup chopped Vidalia onion
2 carrots, peeled and grated
2 zucchini, cut into thin strips
1 red bell pepper, seeded and cut into thin strips
8 ounces shredded Havarti cheese
One 32-ounce bag frozen tater tots, fried as instructed on the package

Steps:

  • Preheat the oven to 375 degrees F.
  • In a large pan on medium-high heat, add the oil. When the oil begins to swirl, add the beef, Worcestershire sauce, paprika, a pinch of salt and a few grinds of pepper. Cook until the meat is browned, 6 to 8 minutes. Stir in the tomato paste and saute for a few minutes to intensify the flavor. Add the stock and bring to a simmer. Season again and remove the mixture to a bowl with a slotted spoon, leaving the fat in the pan.
  • In the same pan, add the onions and cook until almost tender. Then add the carrots, zucchini, bell peppers, a pinch of salt and a few grinds of pepper. Cook, tossing, until the vegetables are tender but still a bit crunchy, 6 to 8 minutes. Remove from the heat.
  • In the bottom of a 13-by-9-inch casserole dish in this order, layer half of the beef mixture, pressing it down to level it, and then sprinkle half of the cheese evenly over the beef. Pour the remaining half of the beef over the cheese and press down to level as well. Add the vegetables, followed by the remaining cheese; press to level. Top with the tater tots in a neat row like little soldiers. Sprinkle the top with paprika and bake until the edges on the tots turn golden brown, 25 minutes.

1 (6 ounce) can tuna
1 (10 1/2 ounce) can mushroom soup
1 (32 ounce) bag frozen tater tots
1 cup shredded cheese (cheddar)
cooking spray

Steps:

  • Put bag of tater tots in a 13x9-inch casserole dish sprayed with Pam then spread tuna over that. Put soup over that.
  • Cover with foil and bake at 350° for about 40 minutes. Spread cheese and cook until melted.

I found this recipe in a Taste of Home cookbook (one of those little ones sold by the checkstand in a grocery store). It is quick and easy to prepare but tastes like you cooked all day! I haven't served it yet to anyone who hasn't loved it. The combination of potato flakes and french fried onions compliment the tuna and cheese nicely!

1 cup flour
1/2 cup masked potato flakes
1/2 cup butter or 1/2 cup margarine
3 -4 tablespoons ice water
1 (2 7/8 ounce) can French-fried onions, divided (I used the cheese flavored ones)
3/4 cup mashed potato flakes
4 ounces shredded cheddar cheese, divided
2 tablespoons chopped stuffed green olives
1 (7 ounce) can albacore tuna in water, drained and flaked
1 (10 3/4 ounce) can cream of mushroom soup, undiluted
1 egg

Steps:

  • In medium bowl combine flour and potato flakes.
  • Cut in margarine until crumbly.
  • Add water 1 tbsp at a time until dough is just moist enought to hold together.
  • Press over bottom and up sides of ungreased 9 or 10 inch pie plate.
  • Flute edges.
  • Set aside 1/2 c french fried onions.
  • Sprinkle remaining onions into pastry shell.
  • In another bowl, combine the filling ingredients except 1/2 c cheese.
  • Spoon filling over onions in pe plate.
  • Bake at 350 for 25-30 minutes or until crust is golden.
  • Sprinkle with reserved cheese and onions.
  • Bake 5-10 minutes longer or until cheese is melted.
  • Let stand 5 minutes before cutting.

It is up to you the type of cheese sauce and the kind of mashed potatoes you use, spice it up, or leave it simple. This is loved by kids and adults in my house. Time based on making cheese sauce and potatoes from scratch.

3 cups thick cheese sauce
425 g tuna in water
1 cup corn kernel
3 cups mashed potatoes
1/2 cup grated cheese
salt and pepper
1 tablespoon chopped chives

  • Pour into a shallow baking dish (I use a round non stick cake pan).

CRUST:
1 cup all-purpose flour
1/2 cup mashed potato flakes
1/2 cup cold butter
3 to 4 tablespoons ice water
1 can (2.8 ounces) french-fried onions, divided
FILLING:
1 large egg
1 can (10-3/4 ounces) reduced-fat reduced-sodium condensed cream of mushroom soup, undiluted
1 cup shredded cheddar cheese, divided
3/4 cup mashed potato flakes
1 can (6-1/2 ounces) light water-packed tuna, drained and flaked
2 tablespoons chopped pimiento-stuffed green olives

Steps:

  • In a small bowl, combine flour and potato flakes; cut in butter until crumbly. Add water, 1 tablespoon at a time, until dough is moist enough to hold together. Press pastry over bottom and up sides of an ungreased 9-in. pie plate. Flute edge. Set aside 1/2 cup onions for topping. Sprinkle remaining onions into pastry shell. , In a large bowl, combine the egg, soup, 1/2 cup cheese, potato flakes, tuna and olives. Spoon into pastry crust. , Bake at 350° for 25 minutes or until crust is golden. Sprinkle with remaining cheese and reserved onions; bake 5-10 minutes longer or until cheese is melted.
