4 cups frozen tater tots (about 30), thawed
1/2 cup grated pepper jack cheese
1 tablespoon Tex-Mex seasoning
Nonstick cooking spray, for the waffle iron
2 tablespoons butter
2 large eggs
6 slices bacon, cooked crisp and halved
1/4 cup salsa, for serving
2 tablespoons sour cream
1/2 small avocado, sliced
Fresh cilantro leaves, for garnish

Steps:

  • Preheat a double waffle iron to a medium-high setting.
  • Toss the tater tots with the cheese and Tex-Mex seasoning in a bowl.
  • Lightly spray the waffle iron with cooking spray, then arrange the tater tots and cheese mixture in a single layer on the waffle iron. Firmly press and close the waffle iron, then cook until crisp, about 7 minutes.
  • Meanwhile, melt the butter in a small nonstick skillet over medium heat. Add the eggs and fry to your preference, 4 to 6 minutes.
  • Divide the waffles between 2 plates. Arrange the bacon halves over the top of the waffles. Top each with a fried egg, salsa, sour cream, avocado and cilantro, then serve.

Tater Tot Waffles with Saucy Sausage and Feta image

I got the inspiration for this savory waffle from my friend Jen Pelka of The Riddler in San Francisco and New York City. At her Champagne bar, Jen finishes her waffles with luxe toppings, like caviar and shaved truffles. My version, topped with a harissa-laced sausage gravy, comes together in just minutes and is perfect for any meal.

Number Of Ingredients 10

Nonstick cooking spray
16 ounces frozen potato tots, such as Tater Tots, thawed (4 cups; see Cook's Note)
2 tablespoons extra-virgin olive oil
8 ounces bulk breakfast sausage
1 to 2 tablespoons harissa
1 tablespoon all-purpose flour
1 1/2 cups low-sodium chicken broth
Kosher salt and freshly ground black pepper
Crumbled feta, for serving
Chopped parsley, for serving

Steps:

  • Preheat the oven to 200 degrees F. Heat a waffle iron on high heat; grease with nonstick spray. Spread about half of the potato tots on it. Close and cook on medium-high; fill in any holes in the waffle with more potato tots a few minutes into cooking. Close the iron and continue to cook until browned and crisp, about 8 minutes total. Transfer the waffle to a baking sheet; keep warm in the oven. Repeat with the remaining tots.
  • Meanwhile, heat the oil in a large skillet. Add the sausage and cook, breaking the meat up with a wooden spoon, until cooked through, about 5 minutes. Add the harissa and cook, stirring, until the sausage is coated, about 1 minute. Sprinkle with the flour and cook, stirring, until evenly coated, about 2 minutes. Gradually whisk in the broth and cook until thickened, 3 to 5 minutes; add more broth or water if too thick. Season with salt and pepper.
  • Cut the waffles in half, if desired, and transfer to plates. Spoon the saucy sausage on top. Sprinkle with crumbled feta and chopped parsley. Serve right away.

Talk about taste sensation...who doesn't love tater tots cooked up with a crunch factor of 10 and then topped with creamy Gouda cheese, sauteed peppers, onions and an over easy egg on top! It's there; it's all there. Crunchy, creamy, cheesy, savory, sensational love bites that only a combination like this can bring. These waffles might make you want to dance; they did me! (After I tried this technique of fixing up potatoes in the waffle iron I now buy tater tots just to make these breakfast waffles.) The Whispers sing it perfectly, "It's A Love Thing"!

24 - 30 small tater tots, thawed
2 large eggs
1/4 medium onions, sliced
- butter
1 medium roasted red peppers, sliced
4 slice(s) gouda cheese, thin sliced
- baking spray
- salt and pepper
- frank's hot sauce (optional)
- garlic salt

Steps:

  • Heat up your waffle iron. Spray your waffle iron with baking spray then add 12 to 15 tater tots side by side in each waffle space. I used 12 but if you want a larger waffle add more. Press the waffle iron down and let them cook. (I tried hash browns but couldn't get the crunch and thickness of a waffle like I did with the tater tots.)
  • Meanwhile while they are cooking saute up your sliced onions with butter on low heat. Let those onions get nice and tender then add your sliced roasted red pepper. In another pan, cook up your eggs in some butter. Once the waffles are done about about 5 to 7 minutes...approx. open and add a little garlic salt then your cheese slices so they can melt.
  • Plate your waffles, add the hot peppers & onions. Now top with your over easy egg, salt & pepper and add a dash of Frank's hot sauce.
  • These are sensational breakfast waffles. They are so crunchy, with a melted creamy cheese and topped with peppers, onions and over easy egg...you'll love it!
