2 1/4 cups all-purpose flour
1 1/2 teaspoons double-acting baking powder
1 1/2 teaspoons baking soda
1/2 cup sugar, can use artificial sweetener such as Splenda if desired
1/2 cup unsweetened applesauce
2 eggs or 4 egg whites
1/3 cup canola oil
2 very ripe bananas, mashed
1/2 cup skim milk buttermilk or 1/2 cup skim milk
1/4 cup semi-sweet chocolate chips

Steps:

  • Preheat the oven to 350°F.
  • Line eighteen muffin cups with paper liners.
  • In a medium bowl, combine the flour, baking powder and baking soda.
  • In a large bowl, with an electric mixer at medium speed, beat the sugar, applesauce, eggs and oil until frothy. With the mixture at low speed, alternately add the bananas and buttermilk with the flour mixture; stire until just combined (do not overmix).
  • Fold in the chocolate chips.
  • Spoon the batter into the cups, filling each about two-thirds full.
  • Bake until golden and a toothpick inserted in the center comes out clean, 20-25 minutes.
  • Remove from the cups and cool completely on a rack.

2 cups very ripe bananas (4-5 bananas)
2 eggs
1/2 cup applesauce
2 Tablespoons coconut oil
2 teaspoons vanilla extract
1 Tablespoon baking powder
1/3 cup honey
1 teaspoon baking soda
1 teaspoon salt
2 cups C4C gluten-free flour

Steps:

  • Preheat oven to 350F. Grease a 12-count muffin tin and set aside.
  • Then, in a large bowl, combine the bananas, applesauce, eggs, and honey, using an electric mixer.
  • In a small bowl, combine the coconut oil and vanilla extract. Mix into the banana mixture.
  • In a medium-sized bowl, combine the flour, baking powder, baking soda, and salt.
  • Add flour mixture to the banana mixture and mix until just combined and no dry patches of flour remain.
  • Portion 1/4 cup of batter into the prepared muffin pan, about 2/3 of the way full. Bake for 18-22 minutes, until an inserted toothpick, comes out clean.

3 medium bananas, Mash, let sit
Egg Beaters egg substitute, 1/2 cup
1/4 cup sugar
2 teaspoons ground cinnamon
1 teaspoon baking soda
1/2 cup unsweetened applesauce
3 ounces skim milk
3 cups pancake & baking mix (IE bisquick)
1 cup general mills fiber one all-bran cereal, soak in milk, chop

Steps:

  • 1. Add milk to Fiber One cereal, let sit to soften. 2. Mash Bananas, let sit 3. In large mixing bowl, combine bananas, eggs, sugar, cinnamon, baking soda, and applesauce. MIx well, scraping sides. 4, Add cereal and milk. Mix. 5. Add Bisquick, mix. 6. Spray muffin tins with cooking spray. 7. Spoon batter into muffin tins. Bake at 350 degrees for 10-12 ((until knife comes out clean). (use smaller muffn tins; 24 = 2 points each).

1 cup flour
2/3 cup sugar
1 1/2 teaspoons baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1/4 teaspoon nutmeg
1/2 teaspoon cinnamon
1/4 cup egg substitute
2 cups ripe bananas, mashed (4 - 6 bananas)
1/3 cup applesauce

Steps:

  • Combine first 8 dry ingredients in large bowl and mix well.
  • Beat egg substitute, banana and applesauce together in small bowl until smooth.
  • Add banana mix to dry ingredients and stir until moistened.
  • Fill greased muffin cups almost full or use muffin papers.
  • Bake at 375F for 20 - 25 minutes, or until top springs back when lightly touched.
