Easy (And Tasty) Tuna Salad for One image

I made this up all by myself. My mom and I are big tuna eaters. I eat tuna everyday and I find this to be the EASIEST and TASTIEST way I can possibly make my tuna salad for my lunch everyday. It's very quick and takes me about 5 minutes, it's also low fat and good for you. My mom tells me all the time that she loves it. I enjoy it as well, I eat this tuna salad nearly every day for lunch at school. I eat it with crackers, on bread or plain with some fruit, the Mrs. Dash gives it a great flavor, I always keep Mrs. Dash on hand. I hope you like it. It's a recipe concocted by a 15 year old chef. lol.

1 (3 ounce) can albacore tuna, drained (I prefer Starkist Albacore Tuna, in the single serving cans)
1 tablespoon light mayonnaise (or fat free)
1 teaspoon honey mustard (use a little more if tuna salad is too dry, I use a teaspoonful)
1/2 teaspoon Mrs. Dash seasoning mix
1 baby carrots, chopped (optional)
sweet relish (optional)

Steps:

  • Drain your tuna well.
  • Scoop into a bowl with a fork and flake it well with your fork, breaking up the larger chunks of tuna.
  • Add remaining ingredients and enjoy.
  • Whenever I'm in a hurry I just use the mayonnaise, honey mustard and Mrs. Dash.
  • When I have time I add the carrot which gives it a nice crunch.
  • Eat it on 2 slices of whole wheat bread, with tortilla chips, or with crackers.
  • Sometimes I just eat it plain it tastes just fine that way.

1 cup green beans, trimmed
2 cups baby potato, halved
1 lemon, sliced
1 tablespoon olive oil, divided
½ teaspoon salt, plus more to taste
½ teaspoon pepper, plus more to tate
½ teaspoon paprika
1 tablespoon fresh rosemary, minced
1 tablespoon fresh thyme, minced
3 cloves garlic, minced
1 red bell pepper, halved and seeded
mixed greens salad
hard-boiled egg, optional
2 tablespoons balsamic vinaigrette, optional
10 oz tuna, canned, drained
1 stalk celery, diced
¼ cup greek yogurt
salt, to taste
pepper, to taste
1 teaspoon fresh parsley

Steps:

  • Preheat the oven to 375˚F (190˚C).
  • On a baking sheet lined with parchment paper, add the green beans, potatoes, and lemon.
  • Drizzle the vegetables with 2 teaspoons of olive oil and season with salt, pepper, paprika, rosemary, thyme, and garlic. Mix until evenly coated.
  • Add the bell pepper halves to the center of the baking sheet and drizzle with the remaining teaspoon of olive oil, ½ teaspoon of salt, and ½ teaspoon of pepper.
  • Roast for 20 minutes until vegetables are golden brown. Let cool.
  • Make the tuna salad: combine the tuna, celery, Greek yogurt, salt, pepper, and parsley in a medium bowl.
  • Add a large handful of greens to 2 bowls. Divide the roasted vegetables and bell pepper halves between the bowls. Add a hard-boiled egg, if desired. Scoop the tuna salad into the bell peppers.
  • Serve with a balsamic vinaigrette, if desired.
  • Enjoy!

Number Of Ingredients 13

1 can(s) ( 5 ounce can) solid white albacore tuna (mom used flaked tuna - i like albacore), drained
3 c (about 2 large) potatoes cubed, and cooked until fork tender, drain and put in a large bowl.
2 boiled eggs, chopped
1/2 c onion, chopped (approximately 1 small onion)
1/2 c celery, minced (2 stalks)
1/2 c carrot coarsely minced (1 small carrot)
1/2 c red bell pepper, chopped (about 1/4 bell pepper)
3 Tbsp sweet relish (i use mt. olive sweet relish; of course mom made her own.)
1/2 c lite buttermilk ranch dressing (put on drained potatoes while still hot - absorbs flavor better)
1 Tbsp yellow mustard
2 Tbsp creamy lite italian dressing (i use olive garden lite italian dressing -it isn't real strong)
salt and pepper, to taste.
optional garnishes (makes it tasty, crunchy and pretty)**

Steps:

  • 1. Place drained, cooked and cubed potatoes in a large bowl.
  • 2. Put drained tuna in a small bowl with the 2 teaspoons of lemon juice; stir well and set aside while you add other ingredients to the potatoes. Adding lemon juice helps to get rid of the fishy taste of the tuna.
  • 3. Add the sweet relish, mustard, ranch and Italian dressings to potatoes while they are hot. Gently stir to coat the potatoes. Be careful, as they break up if handled roughly while hot.
  • 4. Add the tuna and boiled eggs to the potato mixture. Stir in the chopped and minced veggies -onion, celery, carrot and red bell pepper. Add salt and pepper to taste.
  • 5. Mix well. Can serve at room temperature or cold. It is even better the next day or two, as the flavors meld in the refrigerator.
  • 6. Serve on a bed of lettuce with or without the optional garnishes. Enjoy!!
  • 7. ***Optional Garnishes • A sprinkling of shredded Cheddar Cheese • Tri-color tortilla strips placed on top • A couple of Capelle Tomatoes, cut in half and placed on the side of the plate (since tomatoes aren't in season; these seem to have better, fresher taste than some you buy in the stores)

1 tablespoon olive oil
1 tablespoon Za'atar spice mix
2 teaspoons balsamic vinegar

We're finding out that beans are one of the best foods there is - adding only three cups a week can lower your cholesterol, decrease your cancer risk, and can even promote weight loss. The Omega-3's in tuna increase your good cholesterol, are heart and brain healthy. I've adapted it from a recipe that originally ran in the New York Times.

1 small red onion, peeled and very thinly sliced (equal to about 1/4 -1/3 cup depending on your preference)
1 tablespoon red wine vinegar or 1 tablespoon sherry wine vinegar, plus
2 teaspoons red wine vinegar or 2 teaspoons sherry wine vinegar
1 (6 1/2 ounce) can tuna in water, drained (I prefer salt free, opting instead to add my own)
1 (15 ounce) can white beans. i prefer goya's small white beans, but you can use Cannellini (Habichuelas Blancas) or 1 (15 ounce) can borlotti beans
3 fresh sage leaves, slivered (You can buy fresh sage in small plastic containers, keep it towards the back of your fridge and it w)
2 tablespoons finely chopped flat leaf parsley
salt & freshly ground black pepper (I like using a coarse ground sea salt, Alea is my new favorite)
1 medium garlic clove, finely minced
1/2 teaspoon Dijon mustard
3 tablespoons extra virgin olive oil (If you aren't calorie conscious splurge, and use 4 tablespoons, besides olive oil is sooooo good for)
cucumbers (to garnish) or tomatoes, slices (to garnish)

Steps:

  • 1. Place the onion in a bowl and add 2 teaspoons of the vinegar and cold water to cover. Let sit for 5 minutes. Drain and rinse with cold water, then dry on paper towels. This rids the onion of it's sharpness. If you LIKE the sharpness- omit this step!
  • 2. In a medium bowl or salad bowl, combine the tuna, beans, onions, sage, and parsley.
  • 3. In a small bowl or measuring cup, mix together the remaining vinegar, salt to taste, freshly ground pepper, garlic, and Dijon mustard. Whisk in the olive oil. Toss with the tuna and beans and serve, garnishing each plate with cucumber or tomato slices.
  • This keeps well in the refrigerator for several days. I've served leftovers on slabs of French bread, hollowed out in the middle (so the beans don't roll), brushed with olive oil and toasted in the oven (toast the bread, then add the beans.) My guests couldn't get enough.

You have to make sure you let this cure in the frig overnight and get very happy before diggin' in. (The salad seasoning has salt, pepper, romano cheese, sesame seed, poppy seed, paprika, garlic, celery seed, and red pepper in it.)

1 lb elbow macaroni (large ribbed pasta works better)
1 cup sweet peas (preferably frozen)
6 1/2 ounces tuna in water (if you use the foil packs you don't have to drain)
1 cup red onion (chopped)
1 cup mayonnaise
1 tablespoon Salad Supreme dry seasoning (McCormick)

Steps:

  • 1) Boil pasta to al dente (8-10 mins).
  • 2) Drain pasta.
  • 3) Cook frozen peas mirowave for approx 3 mins; cool under cold water and drain.
  • 3) Add all ingredients to a large bowl; adjust mayo based on your preferences.
  • 4) Fold and mix well; seal bowl with lid.
  • 5) Put in frig overnight.

12 oz canned tuna, oil or juice drained well (or canned chicken)
1/4 c red onion, chopped
1/4 c red bell or tomato, chopped
2 green onions
1/4-1/2 c uncle gary's gourmet peppers or 1/4 c sweet pickle relish
4 eggs, hard boiled
3 Tbsp mayo
salt and pepper to taste

Steps:

  • 1. Boil eggs (I let them come to a boil and let them boil for 5 min. then remove from heat and place a lid on. I get great eggs everytime).
