3 chicken breasts
salt, to taste
pepper, to taste
4 tablespoons basil pesto
1 roma tomato, sliced
1 cup mozzarella cheese

Steps:

  • Preheat oven to 400˚F (200˚C).
  • Place chicken breast in a baking dish. Season chicken with salt and pepper, to taste.
  • Spread pesto on each chicken breast.
  • Layer tomatoes on top of the chicken.
  • Top with mozzarella cheese.
  • Bake for 40 minutes.
  • Enjoy!

8 skinless chicken pieces
35 g dry onion soup mix (I use Maggi)
400 g crushed tomatoes
310 g tomato puree
2 teaspoons dried basil
1 -2 teaspoon chopped fresh chili pepper
2 tablespoons wine vinegar
1 chicken stock cube

Steps:

  • Preheat oven to 180°C.
  • Place chicken in a casserole dish.
  • Mix soup mix, tomatoes, tomato puree, basil, chilli, wine vinegar and crumbled stock cube together.
  • Pour over chicken.
  • Cover and cook for 50 to 55 minutes, or until chicken is cooked.

8 large chicken thighs
350g basil, Parmesan and cherry tomato ready-made sauce
1 punnet of button mushrooms
4tbsp of freshly chopped basil
350ml chicken stock
500g baby potatoes
40ml olive oil
100g-200g mozzarella cheese, optional

Steps:

  • Preheat your oven to 180ºC/350ºF/Gas 4. Colour the chicken in a frying pan of hot oil and then place into a baking dish along with the basil, Parmesan and cherry tomato sauce, whole button mushrooms and half of the basil. Add the chicken stock.
  • Place the dish in the oven and cook for 25 mins. While the chicken is cooking, boil the baby potatoes until cooked.
  • Drain and serve the potatoes on a plate, placing the chicken on top of them. Finish by sprinkling the other half of the basil, drizzling the olive oil over the top and add cheese if using it.

parchment paper, or aluminium foil, 12x18 inches (30.5 x 46 cm)
1 chicken breast
5 oz asparagus
1 roma tomato, sliced
2 tablespoons pesto
1 tablespoon olive oil
salt, to taste
pepper, to taste

Steps:

  • Preheat oven to 400°F (200°C).
  • Fold the parchment paper in half, then open up.
  • Trim the ends of the asparagus and lay them on one half of the parchment paper.
  • Drizzle on oil and sprinkle on salt and pepper.
  • Lay the chicken on the asparagus, season with salt and pepper, and spread on the pesto. Top with tomato slices.
  • Fold the parchment paper over the chicken, and cinch the paper together by folding it over itself along the edges.
  • Bake for 25-30 minutes or until internal temperature of chicken reaches 165˚F (75˚C).
