My dad used to make these all the time when I was growing up. Quite frankly - I dreaded salmon patties back then - but I love them now! My kids do to as well as DH. My dad cans all his salmon so using homecanned is all I know. I would expect you could use this recipe with store bought salmon as well.

Number Of Ingredients 7

1 pint home canned salmon, drain out juice
1 egg
1/2 cup bread or 1/2 cup cracker crumb
1/4 cup milk
onion powder
salt and pepper
1 1/2 teaspoons dried parsley

Steps:

  • Mix thoroughly.
  • Shape fish into patties.
  • Fry in vegetable oil. Brown on both sides.
  • *Serve with rice if desired.

I just love these salmon patties! I love using the Ritz Crackers because they add the salty sweetness to the patties and the added flavors just make them even better! You can serve these with a tartar sauce, ketchup or plain!

8 can(s) skinned and deboned salmon; drained
2 - eggs, whisked well
2 dash(es) sleeves ritz crackers; crushed
2 teaspoon(s) salt
2 teaspoon(s) pepper
2 teaspoon(s) onion powder
2 teaspoon(s) garlic powder
1 teaspoon(s) dill weed
- juice from 1 lemon
- cooking oil

Steps:

  • Before you begin, start heating up the oil in a skillet, get your plate lined with paper towels and take off your rings cause you are about to get messy.
  • In a large bowl, dump in your drained salmon, 2 eggs, crushed crackers and seasoning. Mix well and begin to make your patties. I usually make mine about the size of a hockey puck. I also like to go ahead and make all of the patties at once before I begin cooking them.
  • Once you have the patties prepared, place each one carefully into the skillet and cook each side for about 6-8 minutes or until golden brown. Remove from skillet to the towel-lined plate to drain and there it is! Salmon patties are done!

MY MOM'S TASTY SALMON PATTIES

Mom would make the patties ahead of time and individually wrap them and freeze. Then when she wanted one she could toss in a little fry pan with a little Pam spray.

PATTIE INGREDIENTS
14 3/4 oz canned pink or red salmon
3 egg
3/4 c bread crumbs
salt and pepper to taste
2 Tbsp lemon juice
1/2 c diced onion
1 1/2 Tbsp mustard

Steps:

  • 1. combine all ingredients pat them as if you were making a hamburger patty May like to chill for a firmer mixture or add more crumbs, panko or whatever You prefer
  • 2. drop in a preheated fry pan sprayed with Buttery Pam
  • 3. Very quick and economical. Splash with a little more lemon and tartar sauce mine is made with mayo, mustard and catsup

This is a different way to make salmon patties.

1 can(s) pink salmon
1 - egg
1/2 cup(s) crushed ritz type crackers
1/2 cup(s) corn
2 tablespoon(s) ketchup
1/4 teaspoon(s) cayenne pepper
1/2 - squeezed lime
1 tablespoon(s) olive oil
- salt and pepper to taste

Steps:

  • Clean the bones from the canned salmon and break up with your hands.(you may want to use gloves)
  • Beat the egg in a bowl, add the salmon, crackers, corn, lime juice, ketchup and cayenne pepper. Mix thoroughly.
  • Form and shap into patties.
  • Heat the tablespoon of oil in skillet. Drop the patties into the pan and cook approximately 5-7 minutes on each side.
  • Carefully remove from pan and serve with vegetable or salad.
