Steps:
- Heat mustard oil in a pressure cooker. cooker until smoking hot. Take off heat for two minutes, then reignite.
- Add asafoetida and onion paste - cook onions until transparent. Then, add red chillies and turmeric powder.
- Cook on medium heat until oil is released. Then, add diced potatoes, tomatoes and peas. Mix well - add enough water to cover the vegetables, add salt to taste, and pressure cook for 4 whistles on medium heat.
- Turn off heat and remove lid to remove all pressure.
- Reignite flame to high, mash potatoes, and add green chillies. Salt to taste and bring to a boil. Sprinkle garam masala and mix well.
- Garnish with freshly-chopped cilantro and serve warm alongside chapathi, naan, or freshly-steamed rice.

Steps:
- Prepare marinade and marinate shrimp and scallops in the fridge for 3-4 hours.
- Mix together skillet ingredients (except milk and snow peas) in a wide skillet on medium-high. Then, add shrimp and cook in sauce for 3 minutes per side. let rest 3 min each side then flip in sauce
- Add snow peas and milk and let simmer. Remove from heat and let sit for 5 minutes.
- Cook again on low heat until sauce thickens and reduces down.
- Serve plain or alongside steamed rice.

- Add potatoes, carrot, and onion to a large pot or Dutch oven of boiling water. Cover and allow the vegetables to cook for 10 minutes, until the potatoes are fork-tender.
- Remove boiled vegetables from water and reserve 1½ - 2 cups (355 - 470 ml) of the water.
- Add potatoes, carrot, onion, cashews, and seasonings to a blender with half of the reserved water. Blend, adding a few tablespoons of water at a time until the desired consistency is achieved.
- Pour vegetable puree over the macaroni and stir in green peas before serving.

- In a large pan, warm the palm oil over medium-high heat. Add the onion, garlic, and ginger and sauté, stirring occasionally, until the onion is translucent and the garlic and ginger are fragrant, about 5 minutes. Add the tomatoes and cook for 3-5 minutes, until they begin to soften and release their juices.
- Add the okra, plantain, and black-eyed peas. Cook for 1-2 minutes, until warmed through and the okra is bright green. Add the Afcave Diaspora Chili Blend and stir to coat the vegetables.
- Add the coconut milk and bring to a simmer, about 5 minutes. Cover and simmer for 8-10 minutes until everything is warmed through and the flavors meld. Season salt to taste.
- Serve the black-eyed peas hot over rice and garnish with cilantro.

TASTY PEAS
I made some changes to this recipe I found on the 'net, making it easier to prepare, without losing any of the taste. Minced Onion and garlic are sauteed in olive oil, then the peas are simmer in chicken broth. I expected the kids to groan, but they liked it.
