Excellent yeast buns that can be used for hamburgers or just plain dinner rolls. They don't take long to make and have never failed for me!

5 cups all-purpose flour
2 (.25 ounce) packages dry yeast
1 cup milk
¾ cup water
½ cup vegetable oil
¼ cup white sugar
1 teaspoon salt

Steps:

  • Stir together 2 cups flour and the yeast. In a separate bowl, heat milk, water, oil, sugar and salt to lukewarm in microwave. Add all at once to the flour mixture, and beat until smooth, about 3 minutes.
  • Mix in enough flour to make a soft dough, 2 to 3 cups. Mix well. Dust a flat surface with flour, turn dough out onto floured surface, and let rest under bowl for about 10 minutes.
  • Shape dough into 12 slightly flat balls, and place on greased baking sheet to rise until doubled in size.
  • Bake in a preheated 400 degrees F (200 degrees C) oven for 12 to 15 minutes.

½ cup sugar, plus 1 tablespoon, divided
1 teaspoon saffron thread
¼ oz active dry yeast
4 ½ cups all-purpose flour
1 teaspoon kosher salt
1 teaspoon ground cardamom
3 large eggs, divided
¼ cup sour cream
6 tablespoons unsalted butter, softened
raisin, or chocolate chips

Steps:

  • In a small saucepan, combine the milk, 1 tablespoon of sugar, and the saffron threads. Heat over medium-low heat, stirring to dissolve the sugar. Once the milk is steaming, remove from the heat and let cool to 110˚F (43˚C).
  • Sprinkle the yeast over the milk and let bubble, about 5 minutes.
  • In a large bowl, whisk together the flour, remaining sugar, salt, and cardamom.
  • Make a well in the center of the flour and pour in the milk, 2 eggs, sour cream, and butter. Stir to combine, then, once the dough starts to come together, use your hands to incorporate fully.
  • Turn the dough out onto a clean surface and knead until the dough is springy, about 5 minutes.
  • Place the dough in a large bowl and cover with plastic wrap. Let rise in a warm place for 1 hour, or until doubled in size.
  • Punch down the dough and flip onto a clean surface.
  • Divide the dough into 12 equal pieces. Form each piece into a ball about 2 inches (5 cm) wide, then roll into a cylinder about 12-14 inches (30 cm) long
  • Swirl the dough into a S shape starting at one end until the middle and then the other end.
  • Transfer the dough to a parchment paper-lined baking sheet, cover with plastic wrap, and let rise for 30 minutes, until doubled in size.
  • Preheat the oven to 400°F (200°C).
  • Beat the remaining egg and brush over the dough swirls. Place a single raisin or chocolate chip in the center of the swirls on each end.
  • Bake the buns for 10-12 minutes, or until golden brown and cooked through.

Steps:

  • Add the lukewarm water to a 2-cup liquid measuring cup or medium bowl. Add the yeast and sugar and stir to combine. Let sit for 5-10 minutes, until frothy and doubled in volume.
  • In a large bowl, whisk together the flour and salt. Add the butter, egg, and the yeast mixture and stir with a rubber spatula into a shaggy dough.
  • Turn the dough out onto a clean surface and knead until smooth and soft, about 4 minutes. Place the dough in a clean large bowl lightly greased with nonstick spray and cover with a towel. Let rest until in a warm place until doubled in size, about 1 hour.
  • Preheat the oven to 400°F ( 200°C). Line a baking sheet with parchment paper.

1 cup scallion, sliced
¼ cup fresh ginger, minced
5 cloves garlic, minced
¼ cup organic sugar
2 tablespoons chinese 5 spice
¼ cup soy sauce
¼ cup shaoxing rice wine
¼ cup dark soy sauce
12 oz firm tofu, pressed and sliced
2 tablespoons vegetable oil
1 cup cucumber, julienned
1 red pepper, seeded and julienned
1 cup daikon radish, julienned
1 cup carrot, julienned
1 yellow pepper, seeded and julienned
2 jalepenoes, sliced
½ cup water
½ cup organic sugar
1 cup rice vinegar
1 tablespoon kosher salt
hoisin sauce

Steps:

  • Make the bao buns: Add the warm water, sugar, and yeast to a liquid measuring cup. Whisk to combine, then set aside to bloom, five minutes.
  • In a large bowl, whisk together the flour, baking powder, and salt. Make a well in the center. Add the yeast mixture and vegetable oil to the well and stir with a wooden spoon until a soft dough begins to form. Transfer the dough to a clean surface and knead until smooth and elastic, about 3 minutes. Keep extra flour nearby in case the dough sticks to the surface or your hands. Shape into a ball.
  • Lightly grease a clean large bowl with 1 tablespoon of sesame oil. Place the dough in the bowl, cover with plastic wrap, and let rise in a warm place until doubled in size, about 2 hours.
  • Meanwhile marinate the tofu: In a medium bowl, whisk together the scallions, ginger, garlic, sugar, five-spice, soy sauce, rice wine, and dark soy sauce.
  • Add the tofu to a separate medium bowl and pour the marinade over. Cover with plastic wrap and marinate in the refrigerator for 1 hour.
  • Make the pickled vegetables: Prepare the cucumber, red pepper, daikon, carrot, yellow pepper, and jalapeños and set aside while you make the brine.
  • In a large pot or deep pan over high heat, combine the water, sugar, rice vinegar, and salt. Stir until the sugar dissolves, then bring the mixture to a boil.
  • Add the vegetables the brine. Stir to submerge, then remove the pot from the heat. Let sit while you sear the tofu and bake the buns, about 1 hour, then drain.
  • Once the bao dough has risen, turn it out onto a floured surface. Divide the dough in half, then cut each half into 2 ounce pieces. Roll each piece into a ball.
  • Working 1 at a time, flatten a ball with your palm on a lightly floured surface. Use a small rolling pin or wooden dowel to roll the dough out to a 5-inch round. Brush the top with sesame oil, fold it in half, and transfer it to a square of parchment paper set on a baking sheet. Repeat with the remaining dough. Cover the bao buns with a kitchen towel and let rest for 10 minutes.
  • Bring a pot of water to a boil and set a bamboo steamer on top. Working in batches, transfer a few of the folded dough rounds at a time to the steamer, making sure the buns are not too crowded. Cover the steamer and steam the buns for 8-10 minutes, until the buns puff up and form a skin on the outside. Very carefully, lift the lid and remove the buns from the steamer. Repeat with the rest of the buns, keeping the steamed buns warm as they finish by covering with a towel.
  • Sear the tofu: Remove the tofu from the marinade and pat dry with paper towels. Reserve the marinade.
  • Heat the vegetable oil in a large skillet over high heat. Add the tofu and sear on one side until deep brown in color, about 5 minutes. Flip and cook on the other side until deep brown, 5 minutes more. Remove the tofu from the pan.
  • Pour the reserved marinade into the skillet on medium heat and reduce until thick and syrupy, about 5 minutes. Return the tofu to the pan and stir to coat with the glaze. Remove the pan from the heat.
  • To serve, slather the inside of the bao buns with hoisin sauce, then add the pickled vegetables, glazed tofu, sliced scallions, and sesame seeds.

Steps:

½ cup orange juice
5 cloves garlic

Steps:

  • For the slow cooker carnitas: Combine the spices in a bowl and rub all over the pork shoulder.
  • In your slow cooker, place onions and jalapeños. Place pork shoulder on top of the onions and jalapeños. Add the lime juice, orange juice and garlic cloves.
  • Cover and cook low for 8 hours or high for 4 hours.
  • For the buns: Dissolve instant yeast, sugar and warm water in a small bowl. Let it proof/activate for 5 minutes or until bubbly or foamy.
  • Sift together the dry ingredients (flour, salt and baking powder).
  • Add the yeast mix to the dry ingredients, knead to form ball of dough.
  • Place ball of dough into greased bowl, cover and proof dough for 1 hour or until double in size.
  • Punch down dough, roll out and cut into golf ball sized pieces. Cover and rest the golf ball sized dough balls for 15 minutes.
  • When slow cooker carnitas are done, pull apart with a fork and transfer to a separate bowl. Keep the juices in the slow cooker and use it for a dipping sauce later.
  • When ready, prepare your steamer over high heat.
  • Flatten each dough ball, add about a tablespoon of pulled carnitas to the center and pull the sides of the dough around the filling.
  • Place seam side down on a piece of parchment paper. Steam for 15 minutes.
  • Serve with the slow cooker juices as a dipping sauce. If the dipping sauce has too much fat, skim the fat.

1 cup whole milk, warm to the touch
¼ cup unsalted butter, 1/2 stick, melted
1 large egg
1 tablespoon vegetable oil
1 ¼ cups pulled pork
1 large egg, mixed with 1 tablespoon milk

Steps:

  • Make the starter: In a small pot over low heat, combine the water, milk, and flour. Stir continuously until a loose paste forms. Remove the pot from the heat and transfer the mixture to a small bowl. Cover with plastic wrap, pressing it directly onto the surface of the starter, and refrigerate for 1 hour, or until cool.
  • Make the dough: In a large bowl, add 2½ cups (300 g) of flour, the sugar, salt, and yeast, and whisk to combine.
  • In a large measuring cup, whisk together the milk, egg, butter, and chilled starter mixture.
  • Gradually pour the milk mixture into the bowl of dry ingredients, using your hands to combine. The dough will be very sticky at this point. If the dough is too wet to knead, gradually add ¾ cup (90 g) of flour, a few tablespoons at a time, until you can knead the dough into a loose ball. Continue to knead the dough for 20 minutes.
  • Cover your hands with the vegetable oil and form the dough into a taut ball. Place the dough into a clean large bowl. Cover with a towel and let rise in a warm place until doubled in size, 60-90 minutes.
  • Transfer the dough to a clean surface and press out to a 9-inch (23 cm) square. Divide the dough into 9 equal squares.
  • Flatten a portion of dough into a circle. Place 2 tablespoons of pulled pork in the center. Pinch the edges of the dough together to seal. Gently roll the dough into a ball and place in a greased 9-inch (23 cm) square baking dish. Repeat with the remaining dough. Cover with a towel and let rise for 45 minutes.
  • Preheat the oven to 350˚F (180˚C).
  • Brush the buns with the egg and milk mixture.
  • Bake the buns for 25 minutes, or until golden brown.
  • Let the buns sit in the pan for 10 minutes.
  • Invert the buns onto a serving plate, and pull apart.

⅓ cup sugar
1 tablespoon instant yeast
1 cup whole milk, room temperature, plus tablespoons
½ cup heavy cream, room temperature, plus 2 tablespoons
1 large egg, room temperature
1 cup all purpose flour
3 cups bread flour
nonstick cooking spray, or olive oil, for greasing
1 cup provolone cheese
1 cup fresh mozzarella cheese
¼ cup grated parmesan cheese
½ cup shredded mozzarella cheese
1 ½ cups whole milk ricotta cheese
1 tablespoon coarsely ground black pepper, or to taste
1 pinch kosher salt
1 stick unsalted butter
2 cloves garlic, grated
¼ cup fresh parsley, chopped

Steps:

  • In a small bowl or container, whisk together the salt, sugar, and yeast. In a medium bowl or container, whisk together the milk and cream. Add the sugar mixture and egg to the milk mixture and stir to combine.
  • In the bowl of a stand mixer fitted with a dough hook, combine the all-purpose flour and bread flour.
  • Add the wet ingredients to the flour mixture and mix on medium speed for 15-18 minutes, scraping down the sides of the bowl occasionally, until the dough is smooth and supple and is pulling away from the sides of the bowl.
  • Transfer the dough to a large greased bowl and cover with plastic wrap. Let sit in a warm place for 1-2 hours, until doubled in size. Clean the stand mixer bowl.
  • While the dough is resting, make the filling: Dice the Provolone and fresh mozzarella and add to the bowl of a stand mixer fitted with the paddle attachment, along with the Parmesan, shredded mozzarella, ricotta, ground peppercorns, and salt. Mix on low speed until well combined, 2-3 minutes. Transfer to an airtight container and refrigerate until ready to use.
  • After the dough has rested, punch down to release the natural gases. Turn the dough out onto a clean surface and divide into 16 70-gram portions.
  • Shape each dough portion into a ball by rolling on the surface, gathering excess dough toward the bottom to keep the top taut. Arrange the balls seam-side down on the surface or a baking sheet and cover with a damp towel. Let rest until doubled in size again, 30-45 minutes.
  • While the buns are resting, make the garlic butter. Melt the butter in a small saucepan over medium heat. Add garlic and cook until fragrant, 1-2 minutes. Remove the pot from the heat and stir in the parsley. Set aside until ready to use.
  • Working one at a time, flatten the edges of a bun and make a divot in the center. Fill the divot with 2 tablespoons of the cheese mixture. Pull the edges of the dough around the filling and seal the bun. Repeat with the remaining buns and filling.
  • Arrange the buns seam-side up on the surface. Cover again and let rest for 40 minutes, until risen again.
  • Fill a large pot ⅓ of the way with water and bring to a boil over high heat.
  • Line a steamer basket, or as many as you have, with parchment paper and lightly grease with nonstick spray. Working in batches as needed, add the buns to the basket, making sure they don't touch each other.
  • Cover the basket and carefully transfer to the pot. Cover the pot and cook for about 10 minutes, until the buns have expanded and the dough is cooked through. Repeat with the remaining buns if needed.
  • Remove the buns from the steamer basket and brush with the garlic butter.
  • Serve immediately.

¼ cup sugar
1 package active dry yeast
1 cup all purpose flour
3 cups whole wheat flour
3 tablespoons butter, melted
2 eggs
¾ teaspoon salt
3 tablespoons oil
1 onion
4 cloves garlic
1 teaspoon fresh ginger, grated
1 lb ground chicken
1 teaspoon smoked paprika
1 teaspoon coriander
¼ teaspoon turmeric
¼ teaspoon cumin
3 tablespoons tomato paste
⅓ teaspoon salt, or to taste
⅓ teaspoon pepper
½ teaspoon chili powder, optional
½ cup frozen peas, thawed
black/white sesame seed, optional

Steps:

  • For the buns: First, warm milk by placing it in the microwave for 20 seconds or so. Add sugar to milk and mix well.
  • Then, add in the active dry yeast and set aside for 10 minutes. The yeast should have "ballooned" by this time and be frothy.
  • Add 1 cup (125 G) all purpose flour and 1 cup (125 G) whole wheat flour to a bowl and then add the milk/yeast mixture to it. Mix with a wooden spoon.
  • Then, add in 1 (one) egg, salt and melted butter.
  • Add in the other 2 cups (250 G) of wheat flour and mix well. At this point you can set the spoon aside and use your hands to knead the dough.
  • When the dough is slightly tacky, place it in a large greased bowl. Wrap bowl with plastic wrap. Place a warmed towel over it and place in a dark dry place for 1 hour to proof.
  • While the dough is proving, you can make the filling as follows:
  • For the filling, first chop the onion and add it to a pan over a medium flame with the oil. Let saute for about 10 minutes, mixing as needed with a spatula.
  • Chop the garlic and grate the ginger and then add these to the sauteing onion. Saute another 2 minutes or so. Then, push the onion mix to the side of the pan and add in the chicken.
  • Sprinkle in the smoked paprika, coriander, cumin and turmeric and saute until all the liquid from the chicken has evaporated.
  • Then, add in the tomato paste and salt and stir well. Add in the salt and pepper and chili powder if using. Season further to taste.
  • Then add in the peas, saute another 2 minutes and set aside to cool a bit.
  • To assemble the buns: When the dough has proofed and has doubled in size, remove the plastic wrap and towel and punch dough down. Then, split dough in 2. Wrap one part with plastic to keep moist and spread the other one out using a rolling pin.
  • Use a bowl to cut circles into dough. Into each dough circle, spoon 2 or so tablespoons of filling.
  • Seal the buns by flipping the sides over the filling and pinching them together. Then lay buns down, with sealed side on the bottom on a parchment lined baking tray. Repeat until all the dough and filling are used up.
  • Preheat the oven to 175 degrees°F, place a damp towel over the stuffed buns and place them in the oven to proof for another 30 minutes. When they are done, they should be slightly bigger. At this point, remoove them from the oven and preheat the oven to 375 degrees °F.
  • Beat the remaining egg and brush it over the buns.
  • Sprinkle buns with sesame seeds and place in oven for 20-22 minutes.

2 tablespoons sugar
1 ½ teaspoons instant dry yeast
3 cups plain flour
1 ½ teaspoons baking powder
1 tablespoon vegetable oil
2 tablespoons sesame oil
1 lb pork belly
¼ cup spring onion, Chopped in half
½ cup ginger, sliced
4 tablespoons cooking wine
1 tablespoon vegetable oil
¼ cup garlic
3 tablespoons sugar
2 tablespoons five spice
4 tablespoons soy sauce
4 tablespoons dark soy sauce
2 cups water
½ cup pickled cabage
½ cup coriander, finely chopped
¼ cup crushed peanut, finely chopped

Steps:

  • The Buns: In a measuring jug, place the sugar and warm water. Stir until the sugar is dissolved.
  • Add the active yeast, then stir and set aside for 10-15 minutes.
  • In a large bowl, mix together the flour and baking powder.
  • Add the yeast mixture to the bowl and stir until nearly combined.
  • Add the oil, then stir until fully incorporated.
  • Turn the dough out onto a floured work surface and knead for 10-15 minutes.
  • Once the dough is smooth, return it to the bowl, cover with plastic wrap, and leave for 1 hour until the dough has doubled in size.
  • Remove the dough from the bowl and knock it back by kneading for 1 minute.
  • Cut into 10 equal pieces.
  • Roll each piece into a ball, place onto a lined baking sheet, cover with plastic wrap and rest for 10 minutes.
  • Onto a floured work surface, flatten each ball with the palm of your hand.
  • Roll out to 2 millimetres.
  • Lightly brush one side with sesame oil, then fold in half and place back onto the baking sheet. Cover and rest for 20 minutes.
  • Set steamer over a high heat, then steam buns for 8-10 minutes.
  • The Pork: Slice the pork belly into 1 inch-thick (2 ½ cm) pieces.
  • Fill a large pot with water. Put in the pork, spring onion, ginger, and cooking wine. Bring the water to boil.
  • Drain the pork and discard the remaining water and vegetables. Clean and dry the pot.
  • Return the pot to a high heat and add oil.
  • Fry the pork until it browned.
  • Add garlic, spring onion, ginger, sugar, five spice, cooking wine, and dark and light soy sauce. Stir until all the ingredients are well combined.
  • Add the water, stir, and cover.
  • Reduce to a low heat and simmer for about 45 minutes to an hour. Check and stir every 10 minutes or so and add water if the pot is getting dry.
  • Bao
  • Fill one bun with one slice of pork, top with coriander, pickled cabbage, and roasted crushed peanuts.

⅓ cup milk
½ teaspoon instant yeast
2 tablespoons sugar
1 ¼ cups all purpose flour
pink food coloring
black food coloring
water, for brushing
12 chocolate truffles

Steps:

  • In the bowl of a stand mixer, stir together the milk, yeast, sugar, and flour with a rubber spatula until the dough starts to come together.
  • Fit the stand mixer with the dough hook and mix the dough on medium-high speed for 10 minutes, until smooth.
  • Cover the dough with a wet towel and let rest for 1 hour.
  • Pull off about 2 tablespoons of dough and roll into a ball, then roll out into a log. Fold the outer ends of the log inward to overlap the center, then roll out into a log again. Repeat 2-3 more times, until the dough is very smooth. Roll the dough into a ball again. Press the ball flat, then flip so the less-smooth side is up. Press a chocolate truffle into the center, then wrap the dough around the truffle to seal. Roll into a smooth ball again and place on a small square of parchment paper. Repeat to make 12 total buns, leaving some excess dough for decorating.
  • Add a few drops of pink food coloring to another portion of dough and roll out the dough as before, until the color is uniform.
  • Pull off a very small portion of dough and add a drop of black food coloring. Knead until the coloring is uniform.
  • Use a finger to slightly dampen the outside of a bun. Stick on 2 small dots of black dough for the eyes. Shape a piece of pink dough into a flat disc, then stick on the front of the bun for the nose. Shape 2 more small pieces of pink dough into cone shapes, then stick on top of the bun for the ears. Use the end of a chopstick to poke 2 holes in the snout, then into the center of the ears to make folds. Repeat with the remaining buns.
  • Let the buns rest for 30 minutes.
  • Fill the bottom of a steamer with water and bring to a simmer over medium heat. (If you don't have a steamer, fill a large pot with a bowl at the bottom with water, then place a plate on top of the bowl, making sure the water does not come over the edges of the plate.)
  • Add the buns to the steamer, leaving enough space for the buns to expand. Cover the pot and steam the buns for 9-10 minutes, or until the dough is cooked through. Turn off the heat and let the buns rest in the steamer for 5 minutes before serving.

  • Fill a wide, high-sided skillet with 2 inches (5 cm) of water. Bring to a boil over medium-high heat. Line a bamboo steamer with parchment paper and cut slits in it to allow steam to escape.
  • Meanwhile, gently roll out the biscuits into 3-inch (7.62 cm) rounds. If desired, use a cutter or glass to cut out uniform circles, discarding the scraps. Spray the biscuits with nonstick spray and fold in half.

⅓ cup sugar
½ tablespoon unsalted butter, or coconut oil

Steps:

  • Make the dough: In the bowl of a stand mixer, stir together the milk, yeast, sugar, and flour with a rubber spatula until the dough starts to come together.
  • Fit the stand mixer with the dough hook and mix the dough on medium-high speed for 10 minutes, until smooth.
  • Cover the dough with a wet towel and let rest for 1 hour.
  • Meanwhile, make the filling: In a medium bowl, mix together the steamed taro, sugar, and butter until smooth. Chill in the refrigerator for 1 hour.
  • Pull off a bit more than half of the dough and add a few drops of brown food coloring. Roll into a ball, then roll out into a log. Fold the outer ends of the log inward to overlap the center, then roll out into a log again. Repeat 2-3 more times, until the dough is very smooth.
  • Pull off another small piece of dough and add a drop of black food coloring. Knead until the color is uniform.
  • Knead the remaining white dough until smooth.
  • Pull off about 2 tablespoons of white dough and press into a flat disc about ½ inch thick. Pull off about 3 tablespoons of brown dough and press into a flat disc about ½ inch thick, making sure it's larger than the white dough portion.
  • Scoop about 1 tablespoon of taro paste into the center of the white dough and wrap about ¾ of the way. Smooth the bottom of the dough. Wrap the brown dough around the exposed filling, slightly dampening the edges of the brown and white dough with water to seal together. Set on a small square of parchment paper and repeat to make 10 total buns, leaving some excess dough for decorating.
  • Use a finger to slightly dampen the outside of a bun with water. Stick on 2 small dots of black dough for the eyes and a larger dot for the notes, then 2 balls of white dough for the ears. 2 smaller balls of white dough for the arms, and 2 more medium balls of white dough for the feet. Use kitchen shears to cut spikes in the brown dough. Repeat with the remaining buns.
  • Let the buns rest for 30 minutes.
  • Meanwhile, fill the bottom of a steamer with water and bring to a simmer over medium heat. (If you don't have a steamer, fill a large pot with a bowl at the bottom with water, then place a plate on top of the bowl, making sure the water does not come over the edges of the plate.)

1 tablespoon active dry yeast
1 cup warm water
2 cups all-purpose flour
3 teaspoons white sugar
½ teaspoon baking soda

Steps:

  • Sprinkle the yeast over 1 cup of warm water in a large bowl. The water should be no more than 100 degrees F (40 degrees C). Let stand for 5 minutes until the yeast softens and begins to form a creamy foam. Combine the flour, sugar, and baking soda in a small bowl. Stir half of the flour mixture into the yeast mixture until no dry spots remain. Stir in the remaining flour, a 1/2 cup at a time, mixing well after each addition. When the dough has pulled together, turn it out onto a lightly floured surface and knead until smooth and elastic, about 15 minutes.
  • Lightly oil a large bowl, then place the dough in the bowl and turn to coat with oil. Cover with a light cloth and let rise in a warm place (80 to 95 degrees F (27 to 35 degrees C)) until doubled in volume, about 1 hour. Divide the dough into 6 equal pieces and form into rounds.
  • Place a steamer insert into a saucepan, and fill with water to just below the bottom of the steamer. Cover, and bring the water to a boil over high heat. Add the buns, recover, and steam for 20 minutes. Serve hot.
