1 lb ground venison
2 Tableaspoons bacon fat (melted)
¾ teaspoon salt
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon Italian seasoning
⅛ teaspoon cayenne
½ teaspoon black pepper

Steps:

  • Stir the seasonings into the bacon fat.
  • Break apart the venison in a bowl, and pour the seasoning mixture over the meat. Using your fingers, gently mix together.
  • Form into patties and fry for 2-3 minutes per side over medium heat.

1/2 lb ground venison
1/2 lb pork sausage (the lower quality fatty variety actually works the best, higher quality sausage is leaner which you )
1 teaspoon ground sage
1 teaspoon ground mustard
1 teaspoon red pepper
1/2 teaspoon red chili flakes

Steps:

  • In a large bowl thoroughly combine all ingredients, and roll into a log.
  • Refrigerate at least 24 hours before use. Good for 5-6 days when refrigerated.
  • Sausage can also be frozen and will be good for 3-4 months. Once thawed, refrigerate and use within 2-3 days.

Here's what you need: olive oil, bell peppers, onion, italian seasoning, garlic, hot italian sausage, pizza dough, deli ham, salami, provolone cheese, shredded mozzarella cheese, egg, marinara sauce

1 tablespoon olive oil
3 bell peppers, thinly sliced
1 onion, thinly sliced
1 teaspoon italian seasoning
2 cloves garlic, minced
1 lb hot italian sausage
1 lb pizza dough
4 slices deli ham
6 slices salami
3 slices provolone cheese
½ cup shredded mozzarella cheese
1 egg, beaten
1 cup marinara sauce, optional

Steps:

  • Preheat the oven to 375˚F (190˚C).
  • Heat olive oil in a pan and add sliced peppers and onions.
  • Stir and add Italian seasoning and garlic. Cook until peppers and onions are soft and set aside to cool.
  • In the same pan, brown the sausage until it's fully cooked and remove from heat to cool.
  • Roll out pizza dough into an oval about 14 inches (35 cm) wide and about 8 inches (20 cm) long. Place rolled-out dough on a piece of parchment paper.
  • Along the center of the dough, layer the sausage, peppers, ham, salami, provolone, and mozzarella.
  • Fold the longer sides in first, one at a time, and pinch the edges to seal.
  • Cut off any excess dough and pinch together.
  • Flip it over and apply an egg wash to the outside of the dough.
  • Carefully, make two to three inch slits on the top for ventilation.
  • Bake for 30 minutes, or until golden (times & temperatures may vary depending on the oven).
  • Cut into 2 inch (5 cm) pieces & serve with marinara sauce for dipping.

My family are not big beef fans. I was looking for an easy and tasty breakfast sausage recipe and finally came up with this on my own after several attempts.

1 lb ground deer meat (can substitute lean ground beef)
1 tablespoon olive oil
1 egg (optional)
1 minced garlic clove
1 teaspoon salt
1 teaspoon pepper
1 tablespoon molasses
1 tablespoon brown sugar
1/2 teaspoon thyme
1 teaspoon oregano
1 teaspoon sage
1 teaspoon chili flakes (if ya like a little spice)

Steps:

  • Doesn't get any more simple than this!
  • Mix all ingredients except egg in bowl.
  • Refrigerate for 1 to 4 hours.
  • Mix in egg if desired.
  • Make into 3-4 inch patties, 1 inch thick
  • Cook on grill or stove top as you would for hamburger patties.
