TARRAGON-MARINATED MUSHROOMS

Serve these mushrooms with a loaf of rustic bread and a soft, creamy cheese, like an herb-coated Camembert.

Number Of Ingredients 7

12 ounces small white button mushrooms
3 tablespoons freshly squeezed lemon juice, (1 large lemon)
3 tablespoons coarsely chopped fresh tarragon leaves
2 tablespoons white-wine vinegar
3 tablespoons extra-virgin olive oil
3/4 teaspoon salt
1/8 teaspoon freshly ground black pepper

Steps:

  • Using a damp towel, gently wipe dirt from mushrooms. Trim the stems flush with the caps; discard stems.
  • Place mushrooms in a medium bowl, and add the remaining ingredients. Toss to combine. Set mushrooms aside at room temperature, stirring occasionally, to marinate, at least 20 minutes or up to 4 hours. Serve at room temperature.

Number Of Ingredients 8

2 cloves garlic
1/4 cup olive oil
8oz white mushrooms
Salt and coursely cracked pepper
4-6 scallions, including some of the greens, thinly sliced
2 pinches red pepper flakes
2 1/2 Tbs red wine vinegar
4 tsp chopped tarragon or 1/2 tsp cumin seeds

Steps:

  • Finely chop garlic with 1/2 tsp salt. Combine with scallions, vinegar and tarragon in bowl. Whisk in oil. Cut mushrooms in quarters (unless they are very small). Pour the dressing over the mushrooms and toss with pepper flakes. Taste for salt and pepper. Cover and refrigerate until ready to serve.
