TARRAGON CHICKEN MARINADE

I got this recipe from an old neighbor years ago...She was grilling on her deck with this chicken and it drove all of us neighbors over to find out what it was, that is how good this marinade smells. It makes a lot but you can cut it in half.

1 1/2 cups tarragon vinegar (no substitutions)
15 garlic cloves
1/4 cup sugar
2 tablespoons oil
2 tablespoons Worcestershire sauce
4 teaspoons dry mustard or 4 teaspoons Dijon mustard
2 1/2 teaspoons salt

Steps:

  • Mix well all ingredients. Put marinade over chicken and let sit in refrigerator overnight or at least 4 hours.
  • Can store left over marinade in refrigerator up to a month.

SPICY TARRAGON YOGURT CHICKEN

Tarragon is one of the most aromatic and sweetest herbs that there is. It's good with chicken and really nice in a marinade like this. A good way to mix up the same old grilled chicken recipes.

1 bunch fresh tarragon sprigs, leaves only
½ cup plain Greek-style yogurt
¼ cup harissa sauce (see footnote for recipe link)
2 garlic cloves, peeled
2 tablespoons vinegar or citrus juice
1 tablespoon ground cumin
2 teaspoons kosher salt
4 large chicken breast halves
¼ cup harissa sauce, for garnish
4 sprigs tarragon, for garnish

Steps:

  • Combine tarragon, Greek yogurt, harissa sauce, garlic, vinegar, cumin, and salt in a blender. Puree until smooth, scraping down sides as needed. Pour marinade over chicken breasts in a shallow dish, thoroughly coating both sides. Cover and refrigerate for 2 to 3 hours.
  • Preheat an outdoor grill for medium-high heat and lightly oil the grate.
  • Remove chicken breasts from the marinade and place on the pre-heated grill. Cook over medium-high heat until dark grill marks appear, about 7 minutes per side.
  • Garnish with harissa sauce and a sprig of tarragon.

CHICKEN WITH TOMATOES AND TARRAGON

This juicy and tender chicken is scented with the sweetness of tarragon and the healthy flavors of tomatoes, leeks, green onions and garlic (with a little white wine). This would be a nice company dish, or a homey supper served with buttered egg noodles and a salad. Prep time includes marinating, and you could use canned diced tomatoes (to equal 4 cups) instead of fresh to save some time; but in the summer use vegetables right out of the garden!

3 boneless skinless chicken breasts
8 medium tomatoes, peeled,chopped and seeded
1 leek, white part and a little green,chopped
4 cloves garlic, minced
2 green onions, cut into 1 inch pieces white part and a little green
2 tablespoons fresh parsley, chopped
1 1/2 teaspoons dried tarragon
2 tablespoons soy sauce
1 cup chicken broth
1 cup white wine
salt and black pepper

Steps:

  • Place washed chicken in a baking dish.
  • In a large bowl, combine the rest of the ingredients.
  • Pour over the chicken, cover tightly and refrigerate overnight (or at least 2 hours).
  • Preheat oven to 350 degrees F.
  • Pour off marinade into a skillet and cook it down to about half of its volume.
  • Pour reduced sauce over chicken and bake, covered for about 30 minutes; uncover and bake another 15 minutes.

1/2 cup dry white wine
2 garlic cloves, minced
2 tablespoons fresh tarragon, stripped from stems and chopped
1 teaspoon salt
1/2 teaspoon pepper
1/4 cup olive oil

  • In med bowl whisk together first 5 ingredients.
  • Continue whisking and whisk in oil slowly and continuously
  • Marinade chicken 2 hours or more.
  • Store in fridge up to 1 week. Shake before using.

4 boneless skinless chicken breast halves (5 ounces each)
3/4 teaspoon salt, divided
1/4 teaspoon pepper
1 tablespoon butter

1 shallot, chopped
3/4 cup heavy whipping cream
3 teaspoons minced fresh tarragon, divided
2 teaspoons lemon juice

Steps:

  • Pound chicken breasts with a meat mallet to 1/2-in. thickness. Sprinkle chicken with 1/2 teaspoon salt and pepper., In a large skillet, heat butter and oil over medium heat. Add chicken; cook 4-5 minutes on each side or until no longer pink. Remove chicken from pan; keep warm., Add shallot to same pan; cook and stir over medium heat until tender. Add cream, stirring to loosen browned bits from pan. Increase heat to medium-high; cook until slightly thickened. Stir in 2 teaspoons tarragon, lemon juice and remaining salt. Serve with chicken. Sprinkle with remaining tarragon.

tarragon lime marinade
1/2 c lime juice
1/4 c olive oil
1 tsp tarragon
1 tsp onion salt
1/4 tsp fresh ground black pepper
combine all, brush over chicken and marinade 3 hrs. in the refrigerator, discard marinade.

- cinnamon soy sauce marinade
2/3 c soy sauce
1/4 c red wine (of your choice)
1 1/2 tsp ground cinnamon
1 clove garlic, peeled and chopped
2 Tbsp white sugar
combine all, use as marinade over chicken, pork, seafood or vegetables. always discard marinade when using on meats.

1/2 c cooking wine
1/2 Tbsp olive oil
1 1/2 Tbsp soy sauce
1 1/2 Tbsp worcestershire sauce
1/4 Tbsp dijon mustard
1/4 tsp kosher salt

1 small clove garlic, minced
1/2 c chopped fresh cilantro
combine all, add to your chicken, refrigerate for about 4 hours. discard marinate and then bbq!
