Steps:

  • Preheat oven to 450 degrees F (230 degrees C).
  • Place taro disks in a 1- to 2-inch deep dish. Brush disks evenly with olive oil and sprinkle with salt.
  • Bake in the preheated oven until tops of chips are crisp, about 15 minutes; flip chips and continue baking until second side is crisp, about 15 more minutes.

3 to 4 tablespoons Wasabi Aioli, recipe follows
2 cups leftover salmon from Sake Poached Salmon with Somen and Fennel Salad, recipe follows
1/2 cup fine diced celery
4 pieces foccacia bread, sliced and grilled
2 tomatoes, thinly sliced
1 head butter lettuce, washed and dried
Salt and black pepper, to taste
1 large head of taro, very thinly sliced
1 tablespoon wasabi paste
2 tablespoons minced garlic
1 tablespoon minced ginger
2 tablespoons rice wine vinegar
2 egg yolks* (See Disclaimer)
1 cup canola oil
Salt and black pepper, to taste
1 cup sake
1 celery, sliced
1 peeled carrot, sliced
1 small onion, sliced
1 tablespoon sugar
2 bay leaves
1 teaspoon toasted black peppercorns
2 tablespoons soy sauce
Water to cover
4 (8-ounce) salmon fillets, skin removed, center cut
Salt and white pepper to taste
1/2 cup ponzu
3 large sliced shallots
1 tablespoon togarashi, save some for garnish
2 tablespoons Japanese soy sauce
1/2 tablespoon sugar
3/4 cup extra virgin olive oil
2 fennel bulbs, shaved, fronds reserved for garnish
1 pound blanched somen noodles
1/2 cup sliced scallions

Steps:

  • Preheat a deep fryer to 275 degrees F. In a bowl, mix together the Wasabi Aioli, salmon and celery. Check for seasoning. Build the sandwiches on the bread and top with the tomato and lettuce. Slice on the bias. Fry chips until golden brown and crisp. Season lightly with salt.
  • Plating: Serve sandwich with taro chips.
  • In a food processor, add wasabi paste, garlic, ginger, vinegar and yolks. While processor is on, drizzle in oil, slowly at first until it emulsifies then more quickly. Check for seasoning. Store in refrigerator.
  • In a salmon poacher or large sauce pot, mix the sake, celery, carrot, onion, sugar, bay leaves, peppercorns, soy sauce and water to cover. Add the seasoned salmon and slowly bring the liquid to a simmer. Simmer for 3 minutes then turn off the heat. Let stand for 5 to 10 minutes depending on doneness desired. I prefer medium rare (5 minutes). In a blender, add ponzu, shallots, 1/2 tablespoon togarashi, soy and sugar. Blend on high speed and drizzle in the oil. Season with salt and pepper. In a large bowl, mix together fennel, somen and scallions and toss with enough vinaigrette to coat the salad. There will be some left over for plating. Check for seasoning.
  • Plating: On a large plate, place a mound of the salad and top with hot salmon. Drizzle on a little of the vinaigrette and garnish with remaining togarashi and fennel fronds.

1 tablespoon plus 1/2 teaspoon olive oil

Steps:

  • Preheat oven to 350 degrees. Peel taro root and thinly slice into 1/16-inch-thick slices using a mandoline. Lightly brush two 12-by-17-inch baking sheets with olive oil and spread chips evenly onto each. Brush tops of chips with olive oil and bake until crisp, 14 to 16 minutes. Transfer chips to a paper towel to cool and sprinkle with salt.

WHIPPED TARO ROOT AND TARO CHIPS

2 pounds of taro root
6 tablespoons unsalted butter
Salt and pepper to taste
2 cups of peanut or grapeseed oil
2 4- pound Long Island ducks
3 tablespoons ginger
6 cloves of garlic
1 quart Kikkoman soy sauce
1 cup of sherry
2 tablespoons of sesame oil
1 1/2 cup julienned scallions, or more
Whipped Taro Root and Taro Chips (see previous recipe)
Duck Jus, recipe follows
2 tablespoons oil
1 chopped, roasted duck body
1 leek, roughly chopped
1 stalk celery
1 carrot, cut into 1/2 inch pieces
1 cup white wine
2 cups chicken stock
1/2 cup soy marinade

Steps:

  • Peel taro root. First, for the chips, take your peeler and peel approximately one cup of long taro shreds. Reserve for frying.
  • Take the remaining taro and cut it up into rough 2 inch chunks. Place in a sauce pan, covering with cold water. Boil root until tender. Strain into a colander, reserving cup of the liquid. In a food processor, pulse taro, adding little dabs of butter as you go, along with some of the cooking liquid to make a smooth consistency. Remove and season with salt and pepper.
  • For the chips:
  • Heat a couple of cups of peanut or grapeseed oil to 350 degrees. Drops shreds into oil in small batches. Remove when crisp (the chips should still be light in color) and salt.
  • For the duck: Separate legs from the breast by cutting where the breast and carcass end and legs begin, or have your butcher cut it for you. Using a sharp boning knife, follow right along the breast bone on either side and remove both breasts. Trim fat along outside of the breast allowing approximately one-third of an inch of fat overlap. Score fat on breast by making a diagonal cut, making sure not to cut the breast meat. About four strokes is sufficient.
  • In a food processor, dice unpeeled ginger and garlic until coarsely chopped. Place in a stainless steel bowl. Add remaining ingredients. Place the two whole duck legs and the four duck breasts in the marinade. Remove the duck breasts after one hour. The legs should continue to marinate for an additional half an hour, and then be removed.
  • Preheat oven to 350 degrees. Using the carcasses of the duck, place the duck legs on the duck carcass. Place legs and carcasses in a roasting pan and roast for 1 hour and 45 minutes to 2 hours. Check periodically to make sure the ducks are not getting too dark. They are ready when the leg wiggles freely to your touch, and they are a nice deep amber color. The skin should look crisp and rendered of fat. Cool. Once cooled, take your boning knife and cut through the skin right in the middle of the legs. Using your hands, separate duck legs. (Use your thumb to get under the oyster and gently pull leg from the bones.) Gently use your fingers to pull out the thigh bone. Trim legs a little to keep a nice triangular shape.
  • For the breasts:
  • Heat a large, 12 inch saute pan to medium high. (You can cook two duck breasts in one pan or cook one at a time in a smaller, 10 inch pan.) Add two breasts, skin side down to start rendering the fat. Cook over medium high heat for a couple of minutes. (You will need to remove the rendered fat as you go. Hold duck breast still with a pair of tongs and pour fat into a stainless bowl or other container. Return to heat). After the first couple of minutes on medium high heat, turn burner down to medium, so not to burn the duck. The duck should be a rich amber color. Continue cooking until the fat is almost completely rendered. You can check this by looking at the incisions of the fat. When there is only a thin, crisp skin, the duck is ready to be flipped. Turn duck over. Shut heat off and leave the breast to sit in the pan for about three to four minutes. Remove from pan and allow to rest for five minutes.
  • Meanwhile, place the duck legs in a medium to medium small saute pan, skin side down and pan covered to heat and finish any additional rendering of fat, approximately five minutes.
  • Slice duck breast into fairly thing slices, keeping the nice shape of the breast. With a spatula, pick up breast and fan it out onto the plate. Place duck legs on an angle near the top of the slices. Serve with Whipped Taro Root, Taro Chips, lots of julienned scallions, and a little Duck Jus.
  • In a heavy-bottomed sauce pan, heat 2 tablespoons of oil. Add one chopped, roasted duck body, 1 leek, roughly chopped, one stalk of celery and one carrot cut into half-inch pieces. Cook until vegetables are golden. Add a cup of white wine and two cups of chicken stock and reduce by half. Add one half cup of soy marinade, cooking an additional few minutes. Skim off any fat and strain.

HALIBUT IN SPICY COCONUT SOUP WITH FRIED TARO CHIPS

My family is from the Fiji Islands and this recipe was given to me from my mother, who got it from her mother. You can find taro in most Asian stores - tastes like a potato, but better! This recipe does take a bit of time but it's worth it. I'm sure you'll all enjoy!

1 taro, peeled and cut into large chunks
½ cup vegetable oil, or as needed, divided
4 bone-in halibut steaks
1 head green cabbage, quartered
4 small tomatoes, chopped
1 large onion, chopped
1 green chile pepper, finely chopped, or more to taste
2 (14 ounce) cans coconut milk
2 ½ cups water
sea salt to taste
1 tablespoon chopped fresh cilantro

Steps:

  • Bring a large pot of salted water to a boil. Add taro; cook until tender, 15 to 20 minutes. Drain and let cool. Cut cooled taro into 1/4-inch thick slices.
  • Heat 2 tablespoons oil in a large skillet over medium-high heat. Cook halibut steaks in the hot oil until lightly browned, about 2 minutes per side. Place halibut steaks on paper towels to absorb excess oil.
  • Place cabbage quarters in a large saucepan. Pour in enough water to cover. Bring to a boil; cook until just tender, 4 to 5 minutes. Drain.
  • Spread cabbage evenly over the bottom of a large Dutch oven over medium heat. Arrange halibut steaks on top. Layer tomatoes, onion, and chile pepper over halibut.
  • Stir coconut milk and water together in a bowl. Pour into the Dutch oven. Season with salt. Bring to a boil; reduce heat and simmer until halibut flakes easily with a fork, about 30 minutes. Avoid stirring too often to keep halibut intact. Sprinkle cilantro on top.
  • Heat remaining 6 tablespoons vegetable oil in a deep saucepan over medium-high heat. Cook taro slices in batches until slightly golden, 3 to 5 minutes. Place on a wire rack to cool. Season with sea salt.

1 lb taro root, peeled
1 lb sweet potato, peeled
6 -8 fresh pineapple slices
4 -6 bacon, rashers
2 tablespoons vegetable oil
1 tablespoon butter
6 -8 green onions, chopped
fresh ground pepper
sliced lemon and salt (to garnish)

Steps:

  • Cut taro and sweet potato into 1/2" thick slices and steam or boil until tender but still firm.
  • Drain, spread to cool, then cut into chips about 1" x 1/2".
  • Cut pineapple slices into similar size and bacon into 1/2" wide strips (The gammon style bacon is best for this or get bacon ends from a good butcher shop).
  • Heat oil and butter in a heavy frypan and fry taro/sweet potato chips until golden and brown.
  • Remove, drain and place on absorbent towel then keep hot in oven at 200 deg. F. In the same pan saute' pineapple.
  • Then fry bacon until crisp. In a bowl quickly combine the hot chips, pineapple and bacon and toss lightly with green onions.
  • Sprinkle with pepper, salt transfer to serving dish and garnish with lemon slices.
  • Serve immediately.

1/4 cup chopped fresh cilantro
1/4 cup crumbled queso fresco
3 tablespoons minced seeded jalapeno (about 1 medium jalapeno)
2 tablespoons fresh lime juice (about 1 lime)
2 tablespoons minced garlic (about 3 garlic cloves)
1 tablespoon finely grated ginger
1 vine-ripe tomato, seeded and cut into 1/4-inch dice
Kosher salt
Nonstick baking spray, for the foil
2 medium taro roots (approximately 13 ounces each), peeled
Kosher salt

Steps:

  • For the pineapple salsa: Add the pineapple, cilantro, queso fresco, jalapeno, lime juice, garlic, ginger and tomato to a large bowl and stir to combine. Add salt to taste. Let stand for at least 20 minutes to allow the flavors to combine.
  • For the taro chips: Preheat the oven to 375 degrees F. Line 2 baking sheets with foil and very lightly coat the foil with baking spray.
  • Using a mandoline, slice the taro root into 1/8-inch-thick rounds. You want the taro to be thin but still sturdy. If you can see through the taro after you've sliced it, it is too thin.
  • Spread the taro chips between the baking sheets, making sure they do not overlap. Bake, rotating the baking sheets halfway, until the chips are brown in spots and crispy, 15 to 20 minutes. Season immediately with salt. Let cool for 10 minutes, then serve with the pineapple salsa.

RARE SEARED TUNA AND SCALLOP, TARO ROOT CHIPS AND SEA URCHIN SAUCE

4 thyme sprigs, leaves removed
3 garlic cloves, chopped
Salt and pepper
4 scallops
1/2 tablespoon sesame oil
1 pound tuna
2 portobello mushrooms
1 tablespoon sashimi oil, recipe follows
2 limes, juiced
3 tablespoons soy sauce
2 tablespoons olive oil
1 tablespoon sesame oil
1 cup chicken stock
1/2 cup fish stock
1 shallot
2 tablespoons soy sauce
1 tablespoon heavy cream
2 tablespoons butter
1 piece sea urchin

Steps:

  • Preheat oven to 350 degrees. Thinly slice the taro root and place on a roasting pan. Brush with clarified butter. Sprinkle with thyme, garlic and salt and pepper. Bake in oven until golden brown. Fry scallops in sesame oil. Sear the tuna on all 4 sides and let rest for 35 minutes.
  • Place chopped mushrooms in a roasting pan and pour the sashimi oil on top and roast for approximately 5 minutes in a 400 degree oven.
  • Bring everything to a boil in a saucepan.
  • Bring chicken stock, fish stock and shallot to a boil. Add the soy sauce and reduce. Add heavy cream and butter. Mix in sea urchin.
  • To Serve: Place 1 taro root chip on top of the plate, place 3 slices of tuna (per person) and 1 whole scallop. Garnish with mushrooms, pour the warm sashimi oil on top of the tuna and scallops. Pour the sea urchin sauce around the tuna and place 1 chip on top.

CRISP DUCK WITH WHIPPED TARO ROOT AND TARO CHIPS

TARO AND CASSAVA CHIPS WITH EGGPLANT DIP

These chips are a nice alternative to the regular potato chip. You can also make them out of breadfruit, which are extra delicious!

1 fresh cassava or 1 taro root, bulb
oil (for deep frying)
salt
1 large ripe eggplants or 3 -4 small island eggplants
1 large onion
2 tablespoons olive oil
2 garlic cloves
2 small chili peppers
1 lime, juice of
salt and pepper
4 tablespoons coriander

Steps:

  • For the chips.
  • Peel the root vegetable and slice very thinly using a mandoline or food processor.
  • Heat the oil until it just starts to smoke.
  • Place the dried chips in a wire basket and in batches of about a handful, plunge into the hot oil and cook for about 90 seconds until crisp and golden.
  • The timing will depend on the temperature of the oil and the thickness of the chips.
  • Before beginning the second and subsequent batches, bring the temperature up again, as cool oil does not allow the chips to become crisp and light.
  • Drain well and sprinkle with a little salt.
  • For the eggplant dip.
  • Bake the eggplant at 180°C until very tender.
  • This should take about 40 minutes, depending on the size.
  • Finely chop the onion and cook in a frying pan with the oil until the onion is soft and golden.
  • Near the end of the cooking process add the finely chopped garlic and chilli.
  • Take the cooked eggplant and scoop out all the flesh, discarding the skin and stem.
  • Place the eggplant flesh in a bowl and gently stir to break it up.
  • Add the onion mixture and lime juice and season to taste with salt and pepper.
  • Stir through the fresh coriander and pile into a serving bowl.
  • Serve with taro, cassava or potato chips.

1/4 cup naturally brewed soy sauce
1 tablespoon minced garlic
1 tablespoon minced ginger
2 lemons, juiced
1/4 cup canola oil
2 serrano chiles, de-stemmed, minced
2 to 3 pounds mixed whole fish, evicerated and scaled
1 large onion, sliced
5 guavas, peeled, roughly chopped, plus 2 extra, sliced, for garnish
1/2 cup sake
1 cup fresh pineapple juice
2 limes, juiced
1/4 cup macadamia nut oil
1 large taro, cut into large rounds, 1/4-inch thick
2 cups rice flour
Pink salt and black pepper
1/2 cup chopped parsley
Canola oil, to cook

Steps:

  • In a bowl, mix the soy, garlic, ginger, lemon juice oil, and chile together. Marinate the fish for 30 minutes. In a saucepan on high heat, lightly coat with canola oil and caramelize the onions. Add the guavas and deglaze with sake. Reduce by 50 percent and add juices. Reduce by another 50 percent and transfer to a blender. Blend until smooth and lift with macadamia nut oil. Season and check for flavor.
  • In a fryer at 300 degrees, blanch the taro until soft, about 5 minutes. Drain on paper towel, un-seasoned and set aside. Heat canola in a deep pan to 400 degrees F. Pull fish out of marinade and dredge in rice flour. Fry the fish with the taro until golden brown, about 3 to 5 minutes. Season with pink salt.
  • On a large platter, place fish and taro down and serve with sauce in a small bowl. Garnish with guava slices and parsley.

TARTARE:
1 1/2 pounds fresh tuna, cut into 1/4 inch dice
1/2 cup finely chopped scallions
2 T finely grated fresh ginger
1 jalapeno, seeds removed, finely chopped
3 T olive oil
2 T sesame oil
1 T rice wine vinegar
1/4 cup cilantro, finely chopped
salt and freshly ground pepper
TARO CHIPS:
3 cups peanut oil
1 medium taro root, thinly sliced
MISO GLAZE:
1/4 cup miso paste
1/4 cup hot water
1 T honey

Steps:

  • Combine all Tartare ingredients in large bowl and season with salt and pepper. Cover and regrigerate for at least one hour Taro Chips: Heat peanut oil in large saucepan to 325 degrees. FRy taro slices in several batches, stirring frequently with a slotted spoon until chips are lightly golden. Drain on paper towels. MISO Glaze: Mix ingredients in a small bowl until smooth Brush each taro chip with the miso glaze. Spoon a tablespoon of tartare onto each chip, arrange on a platter and drizzle with more glaze.

  • Place oil in a deep fryer and heat to 350°F.

  • Fry the sliced Taro in small batches until lightly golden (about 2 minutes).
