TAPIOCA PUDDING - EASY MICROWAVE METHOD
Here is an old-time favorite prepared by an updated method. I searched high and low for a good recipe for smooth tapioca pudding and this is my favourite. I sweeten it with maple syrup but you can use something else. Needs to soak overnight. Note: This pudding will thicken as it cools.

Steps:
- Soak 1/2 cup tapioca in 1 cup of milk overnight in the refrigerator.
- Pour 3 cups of milk into a 2 quart microwave-safe glass bowl or measuring cup. Add the soaked tapioca and maple syrup with a whisk. Microwave on high for 6 minutes and stir thoroughly with a whisk.
- Microwave on high again for 2 minutes, whisk and microwave 2 more minutes. Do not let it boil over.
- Add eggs and microwave 2 minutes. Whisk and microwave 2 more minutes.
- Stir in the vanilla and pour into individual serving dishes or a serving bowl. Chill and serve.
- Chocolate Tapioca: along with the vanilla, add 6 oz. (1/2 cup) semisweet chocolate chips and whisk until they are melted and blended.

- Combine tapioca, milk, egg yolk and 3 Tbsp. sugar in medium saucepan. Let stand 5 min.
- Meanwhile, beat egg white in small bowl with mixer on high speed until foamy. Gradually add remaining sugar, beating constantly until soft peaks form.
- Bring to full boil on medium heat, stirring constantly. Remove from heat. Quickly stir egg white mixture into hot tapioca in saucepan until well blended. Stir in vanilla. Cool 20 min. Stir before serving.

TAPIOCA IN THE MICROWAVE
You can't burn this pudding or even get those little brown scorched lumps because it's done in the microwave.

Steps:
- Put milk, tapioca and sugar in 2 quart microwavable bowl.
- Microwave on high for 12 minutes, stirring occassionally.
- Meanwhile, put the egg yolk in a small bowl and stir until smooth. When the milk mixture is finished, slowly drizzle 1 cup or more of the hot milk into the yolk while beating the yolk. Then pour the egg mixture back into the milk bowl and stir till combined.
- Microwave the milk and egg mixture on high for 2 minutes. Then stir in the vanilla and butter.
- This makes 6 servings of 1/2 cup each.

SUPER SIMPLE MICROWAVE CHOCOLATE TAPIOCA PUDDING
We make this at our house when we are craving chocolate tapioca pudding. It is so simple to make...it can even be made in the microwave. Note: Prep and cook time does not include cooling.

- Pour milk in a large deep microwave safe bowl. (I use a 6 cup glass measuring cup).
- Add the chocolate pudding powder and whisk to combine.
- Stir in the tapioca and allow to sit for 5 minutes to soften.
- Microwave on high 8 minutes stirring every two minutes.
- Top with fruit and whipped cream if desired.

DECADENT TAPIOCA PUDDING
A quick and easy microwave dish that tastes like you spent hours whipping it up. This is my stepped up version with more flavor than the bland recipe on the box. Tapioca is my favorite comfort food, but hubby and I have an ongoing disagreement about whether it should be served chilled - I like it slightly warm, hubby likes it chilled. Unfortunately, it sometimes disappears before it's chilled enough for his liking...shh, don't tell him!

Steps:
- Mix sugar, tapioca, milk, egg and salt in large bowl. Let stand 5 minutes. (Use a bowl where your ingredients only come up half way so there's room to boil without boiling over.).
- Cook at full power, stirring every 2-3 minutes until mixture comes to a full boil. Should take about 10 to 12 minutes.
- Stir in vanilla and cool. Pudding thickens as it cools.
- If desired, place plastic wrap on surface of pudding as it cools.
- NOTE: you can make this on the stovetop if you prefer.
