WONTON TACO CUPS

2 tablespoons salted butter, melted
12 wonton wrappers
One 15-ounce can black beans, drained and rinsed
One 4-ounce can diced green chiles, drained
2 teaspoons chili powder
Juice of 1/2 lime
1/2 cup grated Monterey Jack cheese
1/2 small avocado, diced
1/3 cup pico de gallo
1/4 cup sour cream
Hot sauce, if desired
1/4 cup fresh cilantro leaves

Steps:

  • For the wonton cups: Preheat the oven to 375 degrees F.
  • Brush 12 cups of a mini muffin pan with the butter. Fit 1 wonton wrapper into each cup, folding the sides as needed.
  • In a small bowl, toss together the beans, green chiles, chili powder and lime juice. Spoon some of the bean mixture into each cup, about a heaping tablespoon each. Bake until the filling is warmed through, about 12 minutes. Remove the pan and top each cup with a pinch of cheese. Return the pan to the oven and continue to bake until the cheese is melted and the wontons are golden, another 5 minutes.
  • For the toppings: Let the taco cups cool in the pan for a minute or two. Transfer the taco cups to a platter and top each with some avocado, pico de gallo, a small dollop of sour cream, hot sauce, if using, and cilantro.

8 taco shells
1 pound extra-lean ground turkey
1 small red onion, finely chopped
1 cup salsa
1/2 teaspoon dried oregano
1/2 teaspoon paprika
1/2 teaspoon ground cinnamon
1/2 teaspoon ground cumin
2 cups shredded lettuce
1/2 cup shredded pepper jack cheese
1/4 cup fat-free sour cream
Cubed avocado and additional salsa, optional

Steps:

  • Heat taco shells according to package directions., Meanwhile, in a large nonstick skillet, cook turkey and onion over medium heat until meat is no longer pink. Stir in salsa and spices; heat through. Serve immediately, or cool before placing in a freezer container. , To serve, fill each taco shell with 1/3 cup turkey mixture. Serve with lettuce, cheese, sour cream and, if desired, optional ingredients., Freeze option: Freeze cooled meat mixture in freezer containers for up to 3 months. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally and adding a little water if necessary. Serve as directed.

This vegetable-packed filling is full of healthy black beans and lean ground turkey. Spoon it into homemade taco cups using your muffin tins for a marvelous main meal or fun appetizer. Cooking main meals in muffin tins make for easy portion control, and it looks adorable, too. Serve these with a Tex-Mex-inspired salad of mixed greens, shredded red cabbage, sliced radishes, chopped scallions, and corn kernels. Steps:

  • Preheat oven to 400°F. Lightly coat one side of tortillas with cooking spray; gently pleat and place 1 tortilla, sprayed side down, in each of 8 large muffin cups. Bake until crisp, 12-15 minutes; remove and let cool.
  • Meanwhile, coat a nonstick skillet with cooking spray; set over medium-high heat. Add turkey, onion, and pepper; cook, breaking up turkey, until turkey is cooked through and onions are soft and translucent, about 8 minutes.

6 -8 taco shells
4 teaspoons whole wheat flour
1 teaspoon chili powder
1 teaspoon paprika
1 teaspoon sea salt
3/4 teaspoon onion flakes
1/2 teaspoon cumin
1/2-1 teaspoon cayenne pepper (the more you add the spicier the tacos!)
1/4 teaspoon garlic powder
1/4 teaspoon unbleached cane sugar
1/8 teaspoon ground oregano
1/2 cup low-fat sour cream
1/2 cup 2% cheddar cheese
1/3 cup picante sauce
2 tomatoes, coarsely chopped
1 onion, coarsely chopped
1 cup lettuce, shredded

Steps:

  • Whisk together all seasoning ingredients in small bowl. Set aside.

16 tostada shells

  • In a large skillet, cook turkey, mushrooms, pepper and onion over medium heat 6-8 minutes or until turkey is no longer pink and vegetables are tender, breaking turkey into crumbles; drain.
