1 cup mayonnaise (I use homemade)
1 large hard-boiled egg
1½ teaspoons Worcestershire sauce
1½ teaspoons vinegar
1 ounce Bread & Butter pickle slices (or 2 tablespoons sweet pickle relish, divided)
1 tablespoon finely chopped sweet red pepper
1 tablespoon finely chopped onion
Pinch of cloves
dash Sriracha or Tabasco
1-2 teaspoons sugar
salt & pepper ( to taste)

Steps:

  • Place all ingredients in a blender and process until smooth.If you like your thousand island more chunky, leave out half of the pickle relish and add it after the rest of the mixture has been blended.
  • Refrigerate until ready to use.
  • Dressing is ready to serve immediately; however, it is better after it has a few hours in the fridge for flavors to marry and the mixture to thicken.

Roasted Shrimp with Thousand Island Dressing image

1/2 pound large shrimp, peeled and deveined
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1/2 tablespoon olive oil
1/2 tablespoon freshly squeezed lemon juice
3/4 cup mayonnaise
1/4 cup ketchup
1 teaspoon minced capers
1 teaspoon minced gherkins
1 tablespoon sweet pickles
1 teaspoon lemon juice
Pinch kosher salt
Pinch freshly ground black pepper

Steps:

  • Preheat the oven to 400 degrees F.
  • Place the shrimp on a sheet pan and sprinkle with the salt and pepper. Pour the olive oil and juice over the shrimp, and roast in the oven for 5 to 6 minutes.
  • For the dressing, place the mayonnaise, ketchup, capers, gherkins, sweet pickles, lemon juice, salt and pepper in a bowl, and stir until blended. Serve with the roasted shrimp.

1/2 cup mayonnaise
2 tablespoons ketchup
2 tablespoons sweet pickle relish
2 teaspoons finely diced onion ((I use red onion but yellow or white would work just fine))
1/4 teaspoon finely minced garlic ((about half of a small clove))
1 teaspoon white vinegar
1/8 teaspoon kosher salt plus more to taste
2-3 dashes Tabasco sauce ((optional))

Steps:

  • Add all ingredients to a small bowl and mix well. Taste and add additional salt if desired. Refrigerate for at least an hour to allow the flavors to meld. Serve.
  • Keeps refrigerated for up to a week.
