1 ¼ cups cranberry juice
3 cups bread flour
2 tablespoons dry milk powder
1 ½ teaspoons salt
2 tablespoons butter, softened
3 tablespoons orange marmalade
⅓ cup dried cranberries
1 tablespoon active dry yeast

Steps:

  • Place all ingredients (except cranberries) in the bread machine according to manufacturer's instructions. If using the delayed time cycle, place dried cranberries away from water. Press start.
  • If your machine has a Fruit setting, add the cranberries at the signal, or about 5 minutes before the kneading cycle has finished.

Tangy Cranberry Orange Bread image

This bread is insanely flavorful with an intense orange flavor. You'd never guess this to have almost no fat, carbs or cholesterol! A loaf of this in our house barely comes out of the oven before it's gone. You can substitute raisins or dates for the cranberries, but we like the tang of the cranberries.

1/4 c applesauce
3/4 c orange juice
1 egg
3/4 c sugar
3/4 tsp vanilla extract
1 Tbsp fresh orange zest
2 c flour
1 1/2 tsp baking powder
1/2 tsp baking soda
1 1/2 c dried cranberries

Steps:

  • 1. Preheat oven to 350 degrees. Grease a 9x5 in loaf pan.
  • 2. Combine applesauce, Orange juice, egg, sugar and vanilla in a large bowl; blend with mixer until smooth. Stir in zest.
  • 3. Add flour, baking powder and baking soda and mix until ingredients are blended. Fold in cranberries.
  • 4. Pour batter into loaf pan. Bake 45-50 minutes, until toothpick inserted into the middle comes out clean.
