EASY APPLE CAKE
After testing many apple cake recipes with fresh apples, this old-fashioned cake is moist, dense and down-home delicious. - Preheat oven to 350°. In a large bowl, beat the sugar, oil, eggs and vanilla until well blended. Combine the flour, baking powder, salt, cinnamon and baking soda; gradually beat into sugar mixture until blended. Fold in apples and walnuts., Transfer to a greased 13x9-in. baking dish. Bake until a toothpick inserted in the center comes out clean, 35-45 minutes. Cool on a wire rack. Serve with whipped topping.

Steps:
- 1. Preheat over to 325 degrees. Grease a 9" x 13" glass baking dish or pan. Prepare apples and set aside.
- 2. Blend the oil, sugar, eggs and vanilla extract; add the flour, salt, baking soda and cinnamon. Mix well; stir in the apples and nuts. Pour into prepared pan and bake for 45- 55 minutes - until done.
- 3. Topping: Combine brown sugar, butter and milk in a small saucepan; bring to a boil and pour immediately over the baked hot cake. The icing will partially be absorbed into the cake leaving a caramel topping. Trim with reserved nuts. Do not cut for at least 1 hour. Yields 20 squares. Note: If canned apples are used, use 1 1/2 cans of unsweetened pie apples. Drain apples and pat with paper towels.
