Steps:

  • Cook beef in a large skillet, stirring frequently, until brown; drain.
  • Stir in water, tomatoes with juice, chiles, and seasoning mix. Cook until mixture comes to a boil.
  • Add pasta; return to a boil. Reduce heat to low; cover. Cook, stirring occasionally, for 14 to 16 minutes or until pasta is tender.
  • Stir in evaporated milk. Remove from heat; stir in 1/4 cup cheese. Sprinkle remaining cheese over top. Cover; let stand for 5 to 10 minutes before serving.

1/3 cup 2% low-fat milk
1 egg

1 dollop sour cream
1 dollop guacamole

Steps:

  • Lightly grease the inside of an 10" cast iron skillet with a little butter. Place in oven and turn temperature to 450°F.
  • Meanwhile, cook beef (and onion if using) in a medium sized skillet. When almost done (drain if necessary), add seasoning mix, stirring to coat. Add beans and corn and continue cooking for 1-2 minutes.
  • In a medium bowl, mix corn muffin mix, milk, and egg until smooth. Add cheddar and jalapeno, mixing to combine. Carefully remove cast iron skillet from oven and spread dough into it, using the back of a wooden spoon (pan will be hot).

1 large red onion
1 green bell pepper
2 cups beef stock
1 cup long grain white rice
1 lb extra lean ground beef
3/4 cup frozen corn
1/2 cup water
1 (1 1/4 ounce) packet taco seasoning
1 1/2 cups fresh salsa (not from a jar)
fresh coriander (optional topping)

Steps:

  • Finely chop the red onion and green pepper and set aside.
  • Put the beef stock in a saucepan and heat to boiling. Add the rice and cook, covered, until done (for my brand of rice this takes around 25 minutes).
  • Meanwhile, in a non-stick skillet start to brown the ground beef for 3 minutes.
  • Add the chopped red onion and bell pepper and cook, stirring, for a further 7 minutes.
  • Add the frozen corn and cook for 3 minutes more.
  • Add the water and taco spice mix. Turn down the heat and cook until the meat is done and the liquid is almost completely absorbed. This takes 5-10 minutes.
  • Meanwhile check on the rice- it should be nearly done. Remove from the heat when cooked and the liquid is absorbed.
  • When the meat mixture is cooked, stir in the rice.
  • Turn off the heat and stir in the salsa. Serve immediately, topped with coriander/ cilantro if desired.

Add the fire-roasted tomatoes, corn and black beans and bring to a simmer, then reduce the heat to low and simmer until the liquid has reduced slightly, about 10 minutes.
  • Sprinkle the cheese over the top of the skillet, then cover and turn the heat off. Let sit for a few minutes for the cheese to melt from the residual heat.
  • Serve right from the skillet with garnishes of avocado, scallions and cilantro and with tortilla chips alongside.

1 lb extra lean ground sirloin
1 small onion, chopped
16 ounces can tomato sauce
16 ounces can water, use the empty tomato sauce can
16 ounces can diced tomatoes and green chilies, undrained
3 cups uncooked elbow macaroni
1/4 teaspoon salt
1/4 teaspoon pepper
1/2-1 teaspoon cumin
1/8-1/4 teaspoon cayenne pepper
1/2 teaspoon garlic powder
1 teaspoon dried cilantro
1/2 cup milk
2 -2 1/2 cups shredded cheddar cheese, can use cheddar-jack

Steps:

  • In a large skillet, brown and crumble the ground sirloin with the chopped onion until no longer pink; drain excess fat, if desired (there shouldn't be that much if you've used the extra lean ground sirloin).
  • Return cooked beef/onions to skillet. Add the tomato sauce, water, diced tomatoes, dry macaroni and seasonings. Stir well and bring to a boil.
  • Reduce heat to medium-low. Cover tightly and simmer for 12-15 minutes (stirring once or twice) or until macaroni is tender.
  • Add milk and cheese and stir well, until cheese is smooth and melted.
  • Serve.

1 tablespoon olive oil
2 garlic cloves, minced
3 scallions, thinly sliced, dark green parts kept separate
One 4.5-ounce can mild green chiles
1 tablespoon chili powder
1 1/2 cups chopped leftover roasted veggies
One 15-ounce can black beans, drained and rinsed
1 cup frozen spinach
1/2 cup frozen corn
Kosher salt and freshly ground black pepper
1/2 cup jarred salsa
1 cup shredded Cheddar
Optional garnish: fresh cilantro, sour cream or yogurt, salsa, hot sauce
Tortillas, warmed, for serving

Steps:

  • Heat the olive oil in a large cast-iron skillet over medium heat. Add the garlic and light green and white scallions and quickly saute, taking care not to burn the garlic, for 2 minutes. Stir in the green chiles and chili powder and cook for 1 minute. Stir in the roasted veggies, black beans, spinach and corn. Season with salt and pepper and add the salsa. Increase the heat to medium-high and let cook until the spinach and corn thaw and the sauce gently simmers, 10 to 12 minutes. Add 1/4 cup water if necessary, to thin out the sauce.
  • Top with the cheese, then cover and let cook until the cheese is fully melted, about 3 minutes. Top with the scallion greens and any other optional garnish. Serve from the skillet with the tortillas.

1 pound ground turkey
1 teaspoon chili powder
1 teaspoon ground cumin
Kosher salt and freshly ground black pepper
One 14.5-ounce can black beans, drained and rinsed
1 cup prepared fresh salsa
1 chipotle chile in adobo, chopped, plus 1 tablespoon adobo sauce
12 corn tortillas
2 Roma tomatoes, diced
1 ripe avocado, diced
6 radishes, thinly sliced
1/2 cup queso fresco
Fresh cilantro leaves
Lime wedges
Sour cream

Steps:

  • Heat a large nonstick skillet over medium-high heat. Add the ground turkey to the skillet and season with the chili powder, cumin and some salt and pepper. Cook, breaking up the meat with the back of a spoon, until browned, about 5 minutes. Add the beans, salsa, chipotle chile and adobo sauce to the skillet and cook, stirring often, until warmed through and slightly thickened, about 5 minutes more.
  • Meanwhile, lightly char the tortillas over an open flame. Set aside wrapped in a clean kitchen towel to steam.
  • Spoon the turkey mixture onto the tortillas and serve with diced tomato, avocado, radishes, queso fresco, cilantro leaves, lime wedges and sour cream.
