4 flour tortillas (8 inch)
3/4 lb. extra-lean ground beef
1 Tbsp. chili powder
1 cup rinsed canned kidney beans
1/2 cup TACO BELL® Thick & Chunky Salsa
4 cups packed torn mixed salad greens
1/2 cup KRAFT 2% Milk Shredded Sharp Cheddar Cheese
1 large tomato, chopped
2 Tbsp. KRAFT Lite Ranch Dressing

Steps:

  • Heat oven to 425°F.
  • Crumple 4 sheets of foil to make 4 (3-inch) balls; place on baking sheet. Top each with 1 tortilla; spray with cooking spray. Bake 6 to 8 min. or until tortillas are golden brown. (Tortillas will drape over balls as they bake to form shells.)
  • Meanwhile, brown meat with chili powder in large nonstick skillet. Stir in beans and salsa; cook 3 to 5 min. or until heated through, stirring occasionally.
  • Fill tortilla shells with salad greens, meat mixture, cheese and tomatoes. Drizzle with dressing.

3-4 cloves garlic, minced
1 pound lean ground beef
2 teaspoon ground cumin
1 teaspoon smoked paprika
½ teaspoon chili powder
1½ teaspoon chipotle powder, divided
½ teaspoon onion powder
salt and black pepper, to taste
3 Tablespoon extra virgin olive oil, divided
1 cup black beans, drained and rinsed
½ head iceberg lettuce, chopped
1 large ripe avocado, chopped
2 cups cherry or grape tomatoes, quartered
½ small red onion, diced small
1 cup frozen sweet corn, warmed
2 Tablespoons fresh lime juice
¾ cup Mexican blend cheese, finely shredded
**sour cream, salsa or tortilla chips, for topping/garnish

Steps:

  • Heat a large skillet over medium heat. Add the garlic and ground beef and season with ground cumin, smoked paprika, chili powder, one teaspoon chipotle powder, and onion powder. Season with salt and black pepper, to taste, and stir to combine.
  • Cook, stirring occasionally, until the meat is browned and broken into small pieces, approximately 8-10 minutes. Break up the beef with a spatula into small chunks while it cooks.
  • Stir the black beans into the skillet with the beef mixture until thoroughly coated with the seasonings. Remove from heat and carefully drain excess fat from skillet and set aside.
  • Combine the lettuce, avocado, tomatoes, red onion, and corn in a large bowl. Sprinkle with remaining olive oil, chipotle powder, and fresh lime juice. Generously season with salt and black pepper, to taste, and toss to combine.
  • To serve, transfer salad to a serving platter and top with the seasoned beef and black beans, Mexican cheese, and tortilla chips.

1 pound lean ground beef
1 medium onion, finely diced
salt and ground black pepper to taste
¼ cup water
1 ½ tablespoons taco seasoning mix
1 (15 ounce) can dark red kidney beans, drained
½ (12 ounce) bag nacho cheese-flavored corn chips (such as Doritos®), crushed
1 large head romaine lettuce, chopped
1 ½ medium tomatoes, diced
½ cup shredded Cheddar cheese, or more to taste
½ cup Catalina salad dressing, or to taste

Steps:

  • Heat a large nonstick skillet over medium to medium-high heat and saute ground beef, diced onion, salt, and pepper together until ground beef is browned and no longer pink and onions are tender, about 10 minutes. Add 1/4 cup water and taco seasoning to the meat. Stir to coat and allow to simmer for 1 minute to thicken. Set aside to cool while you prep the salad.
  • Add kidney beans, crushed chips, lettuce, tomatoes, Cheddar cheese, and dressing to a large bowl. Top with meat mixture and toss gently to evenly combine. Serve immediately.

1 (1.25 ounce) package taco seasoning mix
1 (16 ounce) can chili beans
1 (16 ounce) bottle French dressing
1 head iceberg lettuce
1 (14.5 ounce) package tortilla chips
2 cups shredded Cheddar cheese
1 cup chopped tomatoes
4 tablespoons sour cream
½ cup prepared salsa

Steps:

  • In a large skillet over medium-high heat, brown the ground beef and drain excess fat. Stir in the taco seasoning, chili beans and French-style dressing. Fill the dressing bottle 2/3 full of water and add to the skillet. Bring to a boil, reduce heat and simmer for 15 minutes.

3/4 cup Cheddar cheese ((shredded))
1 medium Avocado ((cubed))
1/2 cup Green onions ((chopped))
1/3 cup Salsa
1/3 cup Sour cream

Steps:

  • Heat oil in a skillet over high heat. Add ground beef. Stir fry, breaking up the pieces with a spatula, for about 7-10 minutes, until the beef is browned and moisture has evaporated.
  • Stir taco seasoning into the ground beef until well combined. If you like, you can also add 1/4 cup of water when adding the seasoning and let it simmer a bit.
  • Meanwhile, combine all remaining ingredients in a large bowl. Add the ground beef. Toss everything together.
