TACO PASTA SALAD WITH FRENCH DRESSING
This is a nice twist on a taco salad. It works well for potlucks or family get-togethers.

Steps:
- Heat a large skillet over medium-high heat. Add beef and taco seasoning; saute until beef is browned and crumbly, 5 to 7 minutes. Let cool.
- Meanwhile, bring a large pot of lightly salted water to a boil; cook rotini at a boil until tender yet firm to the bite, about 8 minutes. Drain and let cool, about 10 minutes.
- Combine cooled beef and rotini with French dressing, black beans, and Cheddar cheese. Mix well and chill until ready to serve.
- Fold in lettuce, tomato, and green onions. Sprinkle crushed chips on top or serve on the side.

TACO ROTINI PASTA
This easy Rotini Pasta is a family friendly flavor packed meal that is ready in under 30 minutes all in one pot. If you liked southwestern cuisine than you are going to love this! It is a filling meal but when entertaining I love to serve it with Raspberry Margaritas and Easy Mexican Street Corn Salad.

- 1. In large stock pot brown ground beef. About halfway through the browning process drain any excess fat; add onion and jalapeno. Over medium heat cook for 4-5 minutes. Lower heat; add garlic and cook for 1 minute. Add taco seasoning, salsa style tomatoes, beef broth and rotini pasta.
- 2. Cover and simmer for 15-20 minutes or until pasta is tender. Top with tomatoes, sour cream, cheddar cheese and if desired jalapeno slices.

- Heat 10-inch skillet over medium heat. Add beef; cook until brown, crumbling as it cooks.
- Add taco seasoning mix, stirring to coat beef. Add pasta, chiles, salsa and water, stirring to combine. Heat to boiling; reduce heat to simmering. Cover; cook about 15 minutes, stirring every 5 minutes, until pasta is tender.
- Remove from heat; stir in cheese. Cover; let stand about 2 minutes or until cheese is melted.
- Sprinkle with cilantro just before serving.
