This mild and meaty Southwestern dish combines the delicious flavor of tacos with the heartiness of baked burritos. Your family's going to love 'em! -Monica Flatford, Knoxville, Tennessee

1/4 cup butter, cubed
1/4 cup all-purpose flour
4 cups water
3 tablespoons chili powder
1 teaspoon garlic salt
1 pound ground beef
1 pound bulk pork sausage
1/4 cup chopped onion
1 cup refried beans
8 flour tortillas (8 inches), warmed
3 cups shredded Monterey Jack cheese
Optional toppings: Shredded lettuce, chopped tomatoes, sliced ripe olives and sour cream

Steps:

  • In a large saucepan, melt butter. Stir in flour until smooth; gradually add water. Bring to a boil; cook and stir for 1 minute or until thickened. Stir in chili powder and garlic salt. Bring to a boil. Reduce heat; simmer, uncovered, for 10 minutes., In a large skillet over medium heat, cook the beef, sausage and onion until meat is no longer pink; drain. Stir in refried beans; heat through., Spread 1/4 cup sauce in a greased 13x9-in. baking dish. Spread 1 tablespoon sauce over each tortilla; place 2/3 cup meat mixture down the center of each. Top each with 1/4 cup cheese. Roll up and place seam side down in baking dish. Pour remaining sauce over the top; sprinkle with remaining cheese., Bake, uncovered, at 350° for 18-22 minutes or until bubbly and cheese is melted. Serve with optional toppings as desired.

4 heaping tablespoons vegetable shortening
4 heaping tablespoons flour
4 heaping tablespoons red chili powder
2 teaspoons garlic powder or garlic salt
4 cups cold water
1-cup fresh diced tomatoes
1/2 cup diced green chilies
1/4 cup minced onion
1 pound ground pork sausage
1 pound ground chuck
1/4-cup onion chopped
11/2 cups green chile hot sauce
1 cup refried beans
Salt, to taste
8 white flour tortillas
1 pound cheddar, shredded
1/2 head lettuce, chopped

Steps:

  • Preheat oven 350 degrees-F.
  • Melt shortening in skillet. Add flour and brown lightly to make a roux. Add red chili powder, garlic powder, and cold water. Simmer slowly until gravy thickens. Set aside.
  • In a separate bowl, crush tomatoes. Add chilies and minced onion and blend well.
  • Brown sausage, ground chuck and chopped onion in skillet. Drain excess grease. Add green chile sauce, refried beans and salt, to taste. Turn heat to low and simmer until warm. Prepare a 9 by 13-inch baking dish and place a couple of tablespoons of enchilada gravy on the bottom to prevent the food from sticking. Dip each tortilla in the gravy and lay flat in the baking dish. Spread meat filling across the center of the tortillas, top with shredded cheese and lettuce. Roll up the tortilla and when finished, pour leftover gravy over the tortillas. Sprinkle with more cheese. Bake for 10 to 15 minutes or until cheese is melted. Serve hot.

Tonight I was thinking about doing Chimichangas in the air fryer and when I reached for my flour tortillas all I had were the little 6" size. I remembered seeing a recipe for some mini tacos done in the air fryer and the dim little light bulb in my brain came on and said that was a good start. He likes Burritos and I like Tacos...

12 6" flour tortillas
1 can(s) pinto beans - 15 oz can
1 can(s) black beans - 15 oz can
1/2 lb lean ground beef
2 - 3 Tbsp taco seasoning - pkg or home made
1/2 c diced tomato - fresh
1 can(s) diced green chilies (4 oz can) heat of your choice
1 c shredded cheddar cheese
1 c shredded monterey jack cheese
small amount of oil or cooking spray
salsa
sour cream

Steps:

  • 1. This meat and bean mixture makes more than you will need for 12 servings. Freeze what you don't use or serve it hot with tortilla chips for a fun dip !
  • 2. Preheat the air fryer to 400 while you are prepping.
  • 3. Drain and rinse the pinto beans and the black beans. Set aside about 1/2 cup of each. Place the remaining into a glass 2 cup measuring cup and puree them with an immersion blender. If you do not have an immersion blender put them into a blender or simply mash them with a potato masher. Set aside.
  • 4. Brown the ground beef in a medium size pot then drain thoroughly. Return the meat to the pot then add the blended bean mixture and the whole beans which you set aside earlier. Sprinkle the taco seasoning over the beans then stir to blend. If you feel that this mixture is too thick add about 1/4 cup of water and stir it in. Heat over low just to warm everything.
  • 5. Lay the tortillas out and spread about 2 Tbsp of the bean and meat mixture over the entire tortilla. Sprinkle about 1 Tbsp of the diced green chilies and about 1 Tbsp of the diced tomatoes down the center of the meat and bean mixture. Top with the shredded cheese.
  • 6. Carefully fold the tortilla in half and either spray the outside with cooking spray or brush lightly with oil. Lay the oiled side down in the air fryer and spray or brush the other side.
  • 7. Cook for about 3 minutes then flip to the other side. Cook for another 3 minutes. If it is not crispy enough cook for another 1 - 2 minutes .. watch carefully that it does not burn.
  • 8. Note: The tortilla may puff up a bit while cooking .. if you notice it doing that and don't want the puff simply poke the puff with the tip of a knife and press down lightly.
  • 9. Serve hot either as they are or cut into wedges for more of an appetizer presentation. Serve with a side of salsa and sour cream for dipping.

EASY CHICKEN TAQUITOS

Rolled, corn tortillas with chicken, baked until crisp. Serve as an appetizer or side dish with salsa or serve as main course topping with lettuce, tomato, olives, sour cream, etc. I have also added chopped onion to the chicken mix.

1 (10 ounce) can chicken chunks, drained
¼ cup shredded Cheddar cheese
5 drops hot pepper sauce (such as Tabasco®)
12 corn tortillas

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish.
  • Combine the chicken and cheese in a bowl; stir in the hot pepper sauce. Warm the tortillas one at a time in a skillet over medium heat until flexible about 10 seconds per side.
  • Spread about 1 heaping tablespoon of the chicken over half of the warmed tortilla. Roll tightly to form the taquito starting at the filled side of the tortilla. Place seamed side down in the baking dish. Repeat with the remaining tortillas. Bake for 30 minutes in the preheated oven.

Taco Burritos image

Flour tortillas bake to a delightful crispness in this family-pleasing fare from Katie. Full of beef, peppers and south-of-the border flair, the burritos are a great way to spice up dinnertime.

1-1/2 pounds ground beef or pork
1 green pepper, chopped
1 medium onion, chopped
2 garlic cloves, minced
1 envelope taco seasoning
1/4 cup water
8 flour tortillas
1 tablespoon vegetable oil
Taco toppings of your choice

Steps:

  • In a large skillet, cook the meat, green pepper and onion over medium heat until meat is no longer pink; drain. Add the garlic, taco seasoning and water. Simmer, uncovered, for 2 minutes. , Place four tortillas on a microwave-safe plate; microwave on high for 20 seconds. Place 1/2 cup of meat mixture on each; fold over sides and ends. Place seam side down in a greased 13-in. x 9-in. baking dish. Repeat with remaining tortillas and filling., Brush burritos with oil. Bake, uncovered, at 450° for 9-10 minutes or until lightly browned and slightly crisp. Serve with toppings.
