1 1/2 cups water

1 cup frozen whole kernel corn (from 1-lb bag)
1 1/2 cups uncooked instant rice
3/4 cup shredded taco-seasoned cheese (3 oz)
1 cup shredded lettuce
1 medium tomato, chopped (3/4 cup)
Sour cream, if desired

Steps:

  • In 10-inch skillet, cook beef over medium heat 8 to 10 minutes, stirring occasionally, until brown; drain.
  • Stir in taco seasoning mix, water, salsa and corn. Heat to boiling; stir in rice. Boil 1 minute; remove from heat. Cover; let stand 8 minutes.
  • Fluff rice mixture with fork; sprinkle with cheese. Cover; let stand 1 to 2 minutes or until cheese is melted. Sprinkle lettuce around edge of skillet; sprinkle tomato in circle next to lettuce. Serve with sour cream.

1 can (15 ounces) tomato sauce
1 chicken bouillon cube

Steps:

  • In a skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Add the salsa, tomato sauce and bouillon. Bring to a boil. Reduce heat; cover and simmer for 5 minutes. 1 tablespoon vegetable oil
1 (13 ounce) can chicken broth
1 (8 ounce) tomato sauce
1 (1 1/8 ounce) packet taco seasoning mix
3/4 cup frozen corn
1 green pepper, diced
1 1/2 cups Minute Rice, uncooked

Steps:

  • Cut chicken into 1 inch cubes.
  • Satue chicken in oil in a dutch oven or other large pot until lightly browned.

  • Preheat oven to 350.
  • In large saucepan, mix together the first 5 ingredients plus half the taco seasoning. Bring to a boil and remove from heat. Stir in rice, cover and let stand 5 minutes, then add tomato sauce.

Steps:

  • Heat olive oil in a large soup pot. Add onion and sauté 4-5 minutes, until tender. Add garlic and cook for about 30 seconds, until fragrant. Add chicken broth, green chilies, rice, cumin, chili powder. Bring to a boil and then reduce to a simmer until rice is cooked, about 20 minutes. Turn heat to low and add corn and chicken. 1 1/2 ounces mccormick mild taco seasoning
1/4 cup old el paso original taco seasoning mix
1 1/2 teaspoons Accent seasoning (Mickey's secret ingredient. It will not taste the same without it)
2 cups white rice (uncooked)
5 1/2 cups water
1 lb shredded mild cheddar cheese (large shreds, find the one that looks like government cheese)

Steps:

  • Put the white rice and four cups of water in the rice cooker, add 1 teaspoon of Accent flavor enhancer, stir and cook.
  • Brown the ground chuck, drain most but not all the grease.
  • Mix the two types of taco seasoning in a bowl with 1 1/2 cups of water, add 1/2 teaspoon of accent flavor enhancer, stir and pour over ground beef. Simmer for five minutes.
  • Place steamed rice in large casserole pan, spread taco meat over rice, top with cheese.
  • Serve on paper plate with plastic spoon for full effect. Top with favorite hot sauce.

taco seasoning mix
1/2-3/4 cup sour cream
2 cups cheddar cheese

  • Saute chicken breasts in olive oil until cooked, remove from pan and chop into bite sized pieces. Saute onions and add chicken pieces back to pan when onions are cooked(carmelized) Remove from pan. Pour can of soup into pan and add taco seasoning mix. In a large casserole dish add soup mixture and chicken onion mixture and stir well.mix in instant rice, add about 1/2 to one cup of water. should be a little runny.fold in salsa, sour cream and 1 1/2 cups of cheese. ½ cup chopped onion
1 (14.5 ounce) can diced tomatoes
1 ¼ cups water
1 cup uncooked long-grain rice
1 cup salsa

1 ½ teaspoons beef bouillon granules
1 teaspoon chili powder
1 teaspoon Worcestershire sauce

  • Preheat the oven to 350 degrees F (175 degrees C).

1 lb boneless skinless chicken breast, diced
2 tablespoons oil
1 (13 1/4 ounce) can ready-to-serve chicken broth
1 (8 ounce) can tomato sauce
1 ounce taco seasoning mix
1 (12 ounce) can corn, drained
1 medium red peppers or 1 medium green pepper, diced
1 1/2 cups Minute Rice
1/2 cup shredded cheddar cheese
tortilla chips

Steps:

  • Cook chicken in hot oil in large skillet until lightly browned.
  • Stir in broth, tomato sauce, seasoning mix, and bring to a boil.
  • Reduce heat, cover, and simmer 5 minutes.
  • Stir in corn and pepper, and bring to a boil.
  • Stir in rice.
  • Cover and remove from heat.
  • Let stand for 5 minutes. Fluff with fork.
  • Serve with cheese and tortilla chips.

Taco Rice-A-Roni Casserole - the ULTIMATE Mexican casserole! Rice-A-Roni, diced tomatoes, ground beef, taco seasoning, sour cream, cream of chicken & cheese

1 (6.8-oz) box Spanish rice Rice-A-Roni
2 Tbsp butter
2 cups water
1 (14.5-oz) can diced tomatoes
1¼ lb ground beef
1 (1-oz) packet taco seasoning
¼ cup water
½ cup salssa
1 (10.75-oz) can cream of chicken soup
1 (8-oz) container sour cream
1 (15-oz) can black beans, drained and rinsed
2 cups shredded Mexican cheese blend

Steps:

  • Preheat oven to 350ºF. Lightly spray a 9x13-inch baking dish with cooking spray.
  • Prepare rice. Melt butter in a skillet. Add rice mixture. Sauté over medium-high heat until golden brown.
  • Slowly stir in water, seasoning packet, and diced tomatoes. Bring to a boil. Cover and reduce heat to low. Simmer 15 to 20 minutes, until the rice is tender.
  • While the rice is cooking, brown ground beef in another skillet. Drain. Add taco seasoning, water, and salsa. Simmer for 5 minutes, until liquid has been absorbed. Remove from heat.
  • In a large mixing bowl, combine cooked rice, taco meat, cream of chicken soup, sour cream, and black beans.
  • Spread mixture into prepared pan. Top with shredded cheese.
  • Bake uncovered for 30 minutes.

I was surprised to find that there is no recipe for this already on here. This was a staple "fast food" to eat after a night of fun in Okinawa. It is a great alternative to taco salad!

Number Of Ingredients 9

1 lb ground beef
1/2 medium onion, diced
3 garlic cloves, minced
1 (1 ounce) packet taco seasoning mix
2 cups rice, cooked
16 ounces cheese, shredded (mexican or cheddar, whatever flavor you want)
salsa, optional, however much you want
lettuce, shredded (optional)
tomatoes, diced (optional)

Steps:

  • Brown ground beef in skillet over medium-high heat. Add onion and garlic when it is almost cooked through, or not very much pink left. Cook till meat is done. Add taco packet seasoning. Follow directions on packet as to how much water to add and how long to simmer.
  • When meat is done put over rice in either one big bowl or in individual bowls. Top with salsa and sprinkle with cheese, lettuce, and tomatoes, and whatever other toppings you wish. Enjoy!
