SEVEN LAYER DIP II
My mom's Seven Layer Dip is a big hit at all small gatherings! Refried beans are layered with guacamole, seasoned sour cream, veggies and cheese. It's perfect for dipping tortilla chips! The dip traditionally takes less time to disappear into bellies than it does to prepare.

Steps:
- In a medium bowl, mash the avocados. Mix in lime juice, cilantro, salsa, garlic salt and pepper.
- In a small bowl, blend the sour cream and taco seasoning.
- In a 9x13 inch dish or on a large serving platter, spread the refried beans. Top with sour cream mixture. Spread on guacamole. Top with tomatoes, green onions, Mexican-style cheese blend and black olives.

SEVEN LAYER TACO DIP
Steps:
- Blend the taco seasoning and refried beans in a medium bowl until completely smooth.
- Spread this mixture evenly in the bottom of your serving dish.
- Mix together the sour cream and cream cheese in a separate medium-sized bowl.
- Carefully spread this cheese mixture over the beans in the serving bowl, covering the whole layer.
- Spoon the salsa over the top of the cream cheese and sour cream, gently spreading it over to reach the edges.
- Chop the tomatoes, green pepper, and green onion, and shred the lettuce.
- Gently toss this all together and sprinkle over top of the salsa.
- Top this by scattering the shredded cheese.
- Garnish with sliced black olives and serve.

- For the dip, cook ground beef until brown. Add taco seasoning and stir. Set the beef aside and cook chopped poblano pepper.
- In a saucepan, combine all cheese Pretty much any amount of each will work. Melt over low heat. Stir in milk as needed to reach a medium-thick consistency.
- Add beef and pepper. Stir until well combined. You may need to add more milk at this point.
- For the bowl, preheat oven to 375°F (190°C ). Take a large flour tortilla and warm for a few seconds in the oven. Spray the outside of upside-down oven-safe bowl with canola oil and press tortilla over the top. Cook in oven until brown.
- Fill tortilla bowl with dip.
