1 bistec de solomillo de res (sirloin) (2 lb) sin hueso
1/4 taza de aderezo italiano fuerte KRAFT Zesty Italian Dressing, cantidad dividida
1 cebolla grande, cortada en rebanadas (alrededor de 2 tazas)
2 cucharadas de azúcar morena
6 chile s güeros grandes (alrededor de 1 lb), asados, pelados y cortados en rebanadas
1/4 taza de crema agria BREAKSTONE'S Sour Cream o la de KNUDSEN

Steps:

  • Coloca la carne en una bolsa grande de plástico resellable. Agrega 2 cucharadas del aderezo; cierra la bolsa. Dale vuelta a la bolsa varias veces para cubrir la carne con el aderezo en forma pareja. Enfríala en la nevera 30 minutos para marinar.
  • Precalienta el asador del horno. Retira la carne de la marinada; desecha la bolsa y la marinada. Coloca la carne en la parrilla de la fuente del asador. Ásala, a 6 pulgadas de la fuente de calor, de 20 a 22 minutos o hasta que esté cocida a término medio (160ºF), dándole vuelta después de 12 minutos. Entretanto, incorpora las 2 cucharadas de aderezo restante a una sartén grande, junto con la cebolla y la azúcar morena; revuelve. Cocina la cebolla a fuego medio, revolviendo de vez en cuando, de 18 a 20 minutos o hasta que se haya caramelizado.

3 tablespoons olive oil, plus extra to drizzle on steaks
Two 16-ounce New York strip steaks (1/2 a steak per serving)
4 tablespoons Aaron's Adobo, recipe follows
2 poblano chiles, roasted, peeled and seeded, thinly sliced
1 jalapeno chile, roasted, peeled and seeded, thinly sliced
1 white onion, thinly sliced
1 medium shallot, thinly sliced
1/2 cup nopales, grilled for 5 minutes on each side and sliced
Epazote Butter, recipe follows
Salt and freshly ground black pepper
1/4 cup cumin seeds
1/4 cup coriander seeds
1/4 cup fennel seeds
1/4 cup yellow mustard seeds
2 ancho chiles, stemmed, seeded, deveined and torn into small pieces
2 pasilla chiles, stemmed, seeded, deveined and torn into small pieces
1/2 cup dried whole oregano (preferably Mexican)
1/4 cup Spanish paprika (pimenton), preferably sweet or hot
2 tablespoons garlic powder
2 tablespoons onion powder
1 bunch epazote leaves, picked (about 2 cups)
1 bunch fresh cilantro, roughly chopped (about 1 cup)
1 clove garlic
Juice of 1 lime
1 teaspoon salt
1 teaspoon freshly ground black pepper
1/2 pound butter, softened

Steps:

  • Drizzle a little olive on each steak and sprinkle 1 tablespoon Aaron's Adobo on each side of the steaks. Allow to rest.
  • Meanwhile, using a saute pan over medium heat, add 1 tablespoon olive oil, the roasted poblano and jalapeno chiles and onion. Cook for 5 minutes, until the onion is translucent. Remove and cool.
  • Then, in a large saute pan, add the remaining 2 tablespoons olive oil and the shallots. Cook softly over medium heat until translucent, about 5 minutes. Then add the chile-onion mixture and cook for another 5 minutes. Then add the nopales. Season with 1 teaspoon of salt and 1 teaspoon of pepper and set aside.
  • On a hot grill, cook the steak for 7 to 8 minutes on each side until medium-rare and remove from the grill. Allow to rest for 5 minutes, then slice into 1-inch pieces. Divide the chile-onion mixture onto 4 plates and top with the sliced steak. Next, top with some Epazote Butter, however much you'd like, and put the plate under a broiler just for a few seconds, long enough for the butter to melt. Good to go. Serve and enjoy!
  • Heat a dry skillet over medium-low heat. Pour in the cumin, coriander, fennel and mustard seeds along with the pieces of ancho and pasilla chiles. Toast, stirring constantly, until it's very aromatic and just begins to smoke, about 3 minutes.
  • Dump the mixture onto a plate and let it cool to room temperature. Grind it to a fine powder in a spice grinder or clean coffee grinder.
  • Put the powder in a large bowl and add the oregano, paprika, garlic powder and onion powder. Stir them really well to combine.
  • Store the adobo in an airtight container or resealable plastic bag in a cool, dark place for up to a month.
  • In a blender, puree the epazote, cilantro, garlic, lime juice, salt and pepper with 1/2 cup water. Then take herb puree and mix well with softened butter until a green butter occurs. Once mixed, you can wrap in parchment paper and freeze. It keeps for up to a month.

An authentic Mexican pork stew made with dried chiles, no chili powder here! The guajillo chiles add a very smoky flavor while the ancho chiles add a touch of smoky sweetness. To add another level of flavor, we always top our puerco asado with sliced onions marinated in fresh lemon juice.

1 ½ pounds pork shoulder, cut into 1-inch cubes
½ cup water
½ teaspoon salt, or more to taste
4 dried guajillo chile peppers
4 dried ancho chile peppers
2 tablespoons chopped fresh cilantro
1 tablespoon chicken bouillon granules
10 whole black peppercorns
2 garlic cloves
½ inch stick Mexican cinnamon
½ teaspoon dried Mexican oregano
½ teaspoon dried thyme
½ teaspoon cumin seeds
2 bay leaves
2 whole cloves
1 tablespoon lard

Steps:

  • Combine pork cubes, 1/2 cup water, and 1/2 teaspoon salt in a Dutch oven. Cover and cook over medium heat for 20 minutes, stirring every 5 minutes. Uncover, increase heat to medium-high and cook, stirring constantly, until water evaporates. Continue cooking until the pork browns in its rendered fat, 15 to 20 minutes.
  • Meanwhile, cut tops off the dried chiles and remove seeds. Heat chiles in a large skillet over low heat until they start to soften. Do not toast. Place chiles in a bowl of hot water and soak for 20 minutes.
  • Remove pork and set aside. Do not wash, wipe out, or clean the Dutch oven.
  • Transfer chiles to a blender, reserving soaking water. Add cilantro, chicken bouillon, peppercorns, garlic, cinnamon stick, Mexican oregano, thyme, cumin seeds, bay leaves, and cloves. Pour in 1 cup soaking water and blend until smooth. Add 1 more cup soaking water, season with salt, and blend until completely smooth.
  • Melt lard in the Dutch oven. Carefully add blended chile mixture and scrape up all browned bits. Bring to a boil and add pork. Reduce heat and cover partially, leaving about 1 inch open. Simmer, stirring occasionally, until sauce has thickened and reaches the desired consistency, 15 to 20 minutes.

4 bolillo s, cortados por la mitad
1/4 taza de mayonesa KRAFT Real Mayo Mayonnaise
3/4 libra de bistec cocido y 1 taza de mezcla de vegetales caramelizados de la receta Bistec asado con cebolla caramelizada y chiles güeros
4 rebanadas de KRAFT Singles
1 tomate (jitomate), cortado en 4 rebanadas

Steps:

  • Ahueca los panecillos. Deshazte de las migajas que removiste. Unta las caras interiores de los panecillos con la mayonesa de forma pareja; ponlos a un lado. Corta el bistec en rebanadas finas; colócalas de forma pareja sobre las mitades inferiores de los panecillos. Cubre la carne de cada sándwich con 1/4 de taza de la mezcla de los vegetales cocidos y 1 rebanada de queso Singles. Completa los sándwiches con las partes superiores de los panecillos.
  • Precalienta una sartén grande a fuego medio-alto. Coloca los sándwiches sobre la sartén; tapa la sartén. Cocina los sándwiches 5 minutos o hasta que estén calientes y el queso se haya derretido.
  • Quita las mitades superiores de los panecillos. Agrega una rebanada de tomate a cada sándwich; vuelve a colocar la mitad superior en su sitio.
