1 1/4 lbs cube steaks (may sub. round steak, pounded thin)
1/4 cup flour
salt and pepper
3 tablespoons olive oil
1/2 onion, sliced thinly
6 ounces button mushrooms, sliced
1 tablespoon Worcestershire sauce
16 ounces chicken broth
1/4 cup red wine (optional)
2 garlic cloves, crushed
1 tablespoon dried parsley
1/2 teaspoon dried thyme

Steps:

  • Combine flour, salt and pepper; dredge cube steaks. Heat oil in skillet and brown steaks on each side. Set aside and keep warm.
  • Add onions and mushrooms to skillet, reduce heat to low and cover. Stir occasionally, scraping browned bits from bottom, and "sweating" the vegetables until softened.
  • Add remaining ingredients, and stir to combine. Return steaks to the skillet, covering with the sauce and veges. Cover and simmer until steaks are tender and sauce has thickened - about 45 minutes. Serve immediately.
  • To freeze, place completely cooked steaks, with sauce, in freezer-safe container and freeze. To prepare, thaw in refrigerator and heat through on stove top or in micorwave.

¼ cup all-purpose flour
½ teaspoon salt
¼ teaspoon ground black pepper
2 pounds beef round steak, cut 1-inch thick
2 tablespoons vegetable oil
¼ cup water, or as needed
1 (14.5 ounce) can diced tomatoes
½ cup minced green bell pepper
1 teaspoon onion powder
½ teaspoon salt
⅛ teaspoon ground black pepper

Steps:

  • Stir flour, 1/2 teaspoon salt, and 1/4 teaspoon black pepper together in a bowl. Sprinkle pieces of steak with flour mixture and pound the flour mixture into the meat with a meat mallet or the edge of a sturdy plate.
  • Heat vegetable oil in a large skillet over medium heat; cook the floured beef in the hot oil until browned on both sides, about 15 minutes. Reduce heat to low, pour in water, cover skillet, and simmer beef until tender, about 1 hour. Add more water to the skillet if needed to prevent burning.
  • Mix diced tomatoes, green bell pepper, onion powder, 1/2 teaspoon salt, and 1/8 teaspoon black pepper in a bowl. Pour tomato mixture over beef, bring to a simmer, and cook until sauce has thickened, about 30 more minutes.

1 small onion, chopped (1/4 cup)
1 jar (6 ounces) sliced mushrooms, undrained
2 cans (10 3/4 ounces each) condensed golden mushroom soup

Steps:

  • Sprinkle beef with salt and pepper. Place beef in 3 1/2- to 4-quart slow cooker, sprinkling onion and mushrooms with liquid between layers of beef. Pour soup over beef.

1 1/2-2 lbs round steaks
1/2-1 cup flour
salt
pepper
2 -3 tablespoons oil
1 large onion, sliced
2 garlic cloves, crushed
2 -3 cups beef broth

Steps:

  • Cut round steak into 6 serving size pieces.
  • On a cutting board, dredge pieces with flour, salt and pepper.
  • Pound flour into the meat with a meat mallet.
  • Turn pieces, dredge, and pound until they can't hold any more flour.
  • (This can be a messy process, so be warned!).
  • In a large non-stick skillet, heat oil and brown steak pieces on both sides.
  • Place in a covered casserole.
  • Add onions and garlic to the skillet.
  • Saute until onions are limp (5 minutes).
  • Place onions and garlic over steak pieces in casserole dish.
  • Add enough beef broth to barely cover meat.
  • The flour from the meat will thicken the broth as it bakes and will make its own gravy.
  • Bake at 300F for 2 hours or until fork-tender.
  • Serve over noodles or mashed potatoes.

1/2 teaspoon salt

2 pounds beef top round steak, cut into serving-size pieces

GRAVY:
1/4 cup all-purpose flour

Steps:

  • Preheat oven to 325°. In a large shallow dish, combine flour, salt and pepper. Pound steak with a mallet to tenderize. Add meat, a few pieces at a time, and toss to coat., In an ovenproof Dutch oven, brown steak in oil on both sides. Arrange onion slices between layers of meat. Add water and Worcestershire sauce. , Cover and bake 2 to 2-1/2 hours or until meat is very tender. Remove to a serving platter and keep warm. , In a small bowl, combine flour, salt, pepper and broth until smooth; stir into pan juices. Bring to a boil over medium heat; cook and stir 2 minutes or until thickened. Serve steak and gravy with noodles or mashed potatoes, if desired. Freeze option: Freeze cooled beef mixture in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a covered saucepan, gently stirring and adding a little broth or water if necessary.

My mother has been making this Swiss steak for years. It is wonderful, and can be made either on the stove top or -- when you don't have a lot of time but want a hearty meal ready when you come home -- in the crock pot. Serve over a bed of egg noodles or rice with a hunk of thick crusty bread.

1 tablespoon vegetable oil
2 pounds cube steaks, pounded thin and cut into bite-sized pieces
1 ½ tablespoons all-purpose flour
1 medium onion, chopped
1 pound mushrooms, sliced

1 (1.2 ounce) package brown gravy mix
2 (14.5 ounce) cans stewed tomatoes
1 (12 ounce) package egg noodles

Steps:

  • Heat oil in a Dutch oven over medium heat. Dredge steak strips in flour. Working in batches, place strips in hot oil. Fry until browned on both sides. Remove to a warm platter. When all meat is browned, return meat to Dutch oven, and stir in onions, mushrooms, salt, pepper, gravy mix, and stewed tomatoes. Bring to a boil, then simmer about 30 to 45 minutes.
  • About 20 minutes before steak is finished, fill a large pot with water and bring to a boil. Add pasta, and cook until al dente, about 8 to 10 minutes; drain.

8 bacon strips
2 pounds beef top round steak (3/4 inch thick)
2 cups sliced fresh mushrooms
1 can (14-1/2 ounces) diced tomatoes, undrained

2 tablespoons cornstarch
2 tablespoons water
1 cup heavy whipping cream
Minced fresh parsley, optional

Steps:

  • In a large cast-iron or ovenproof skillet, cook bacon over medium heat until crisp. Remove to paper towels to drain, reserving 1/4 cup drippings. Crumble bacon and set aside. , Trim beef; cut into serving-size pieces. Brown on both sides in drippings. Top meat with mushrooms, tomatoes and onion. Sprinkle with tarragon and bacon. Cover and bake at 325°, until meat is tender, 1-1/4 to 1-3/4 hours, basting twice. , Remove meat to a serving platter; keep warm. Combine cornstarch and water until smooth; add to skillet. 2 pounds beef round steak, cut into strips
2 tablespoons vegetable oil
1 (14.5 ounce) can cream of mushroom soup
1 (14.5 ounce) can Cheddar cheese soup
½ small onion, chopped
1 tablespoon chopped green bell pepper, or more to taste
1 clove garlic, minced
1 teaspoon Worcestershire sauce
½ teaspoon browning sauce (such as Kitchen Bouquet®), or to taste
salt and ground black pepper to taste

Steps:

  • Place flour into a bowl. Dredge strips of round steak in flour to coat.

Swiss Steak With Mushrooms, Onions, & Gravy image

It is a variation of the dish which my mother made all my life and which I have continued to make my entire marriage. Since there are so few Swiss Steak recipes here with gravy I decided to share this one.

Number Of Ingredients 8

1 large round steak, about 1/2 inch thick
1 (2 ounce) can mushrooms, with liquid
1 large onion, sliced
water, as indicated in instructions
1 1/2 cups flour
1 1/2 teaspoons salt
1/2-1 teaspoon black pepper (according to taste desired)
1/4-1/2 cup vegetable oil, for browning the meat

Steps:

  • Cut meat into 6-8 large sized pieces (meat will shrink).
  • Mix the flour, salt, and pepper in a medium sized dish.
  • In a 12 inch skillet heat the vegetable oil until medium hot over medium high heat.
  • Dredge meat in the flour mixture well on both sides.
  • Brown the meat in the oil well on both sides.
  • There should be enough room in the skillet to brown all the meat at once.
  • Turn the heat down to medium low.
  • Pour the mushrooms and liquid over the meat.
  • Top the mushrooms with the sliced onions.
  • Cover and simmer 1 to 1 1/2 hours until the meat is tender.
  • NOTE**** add water 1/2 cup at a time about every 15 minutes to keep the meat cooking with moist heat.
  • When meat is tender turn off heat and remove meat from pan.
  • Add 3-3 1/2 cups of cold water to the remaining flour which wasn't using with dredging.
  • Stir well to remove lumps.
  • Slowly add to the drippings in the pan.
  • Stir constantly over medium heat until thickened.
  • If gravy is too thick add more water-- if too thin add more flour mixed with cold water.
  • Taste and add more salt, pepper/and or beef flavoring as desired.
  • Turn heat down to low and gently slide the meat back into the gravy.
  • Heat until the meat is hot again and serve.
  • Great with mashed potatoes or steamed rice.
  • OPTIONAL Hint: I often add a couple teaspoons of Kitchen Bouquet to the finished gravy to give it more color. I decided I should add a note about this in case others would like this helpful hint.
