PADDY'S REUBEN DIP

4 packages (2 ounces each) thinly sliced deli corned beef, finely chopped
1 package (8 ounces) cream cheese, cubed
1 can (8 ounces) sauerkraut, rinsed and drained
1 cup sour cream
1 cup shredded Swiss cheese
Rye bread or crackers

Steps:

  • In a 1-1/2-qt. slow cooker, combine the first 5 ingredients. Cover and cook on low for 2 hours or until cheese is melted; stir until blended. Serve warm with bread or crackers.

A wonderful, easy, creamy hot dip that even sauerkraut haters love. I often take this to work potlucks because I can assemble it at work. Just throw everything in and stir a few times. Also, it's delicious when it's overcooked and kind of dry!

1 (16 ounce) jar sauerkraut, drained
1 (8 ounce) package cream cheese, softened
2 cups shredded Swiss cheese
2 cups shredded cooked corned beef
¼ cup thousand island dressing

Steps:

  • In a slow cooker, combine the sauerkraut, cream cheese, Swiss cheese, corned beef and thousand island dressing. Cover, and cook on high for 45 minutes if you're in a hurry, low for longer if you're not, or just until hot and cheese is melted. Stir occasionally while cooking. Serve with cocktail rye or crackers.

Don't be afraid! This dip is delicious! Sort of a "spin off" on traditional spinach dip, serve is the same way--in a large hollowed out round loaf with lots of bread for dipping.

1 lb bacon (cooked & crumbled)
1 large cooking onion (chopped & sauteed)
2 cups sour cream
2 cups mayonnaise
1 (40 g) package cream of leek soup (dried, Knorr)
2 cups sauerkraut (well drained)

Steps:

  • Cook bacon until crispy. Place on paper towel and drain very well. Crumble bacon once fully drained. (Reserve 1 tbsp of bacon fat for cooking onion).
  • Chop onion into very small pieces and fry in bacon fat until the pieces begin to brown and become very soft. Cool completely.
  • Stir together sour cream, mayonnaise and soup mix.
  • Squeeze as much liquid as possible out of the sauerkraut. (You may want to chop the sauerkraut into smaller lengths if it more than an inch long). Stir sauerkraut, bacon and Onion into the dip.
  • Chill for at least 2 or 3 hours before serving (to allow all the flavors to come together and the leeks in the soup mix to soften).
  • ****Note**** "Cook Time" is actually refrigeration time.

1 (16 ounce) can sauerkraut, drained
2 cups shredded swiss cheese
2 cups shredded cheddar cheese
1/2 cup mayonnaise

  • Preheat oven to 350°F.
  • Mix ingredients together and put in 9 x 13 pan.
  • Bake at 20-25 minutes.
  • Serve with mini-slices of rye bread or bagel chips.
