GRILLED SIRLOIN STEAKS WITH PEPPER AND CAPER SALSA



Grilled Sirloin Steaks with Pepper and Caper Salsa image

2 red bell peppers
2 yellow bell peppers
1 tablespoon water
3 tablespoons extra-virgin olive oil
3 tablespoons balsamic vinegar
1/4 cup capers, rinsed and drained
3 tablespoons chopped fresh flat-leaf parsley
Kosher salt and freshly ground black pepper
4 (8-ounce) boneless sirloin steaks, about 1-inch thick
2 teaspoons smoked salt or kosher salt
2 teaspoons herbs de Provence
Olive oil, for drizzling

Steps:

  • Salsa: Put a grill pan over medium-high heat or preheat a gas or charcoal grill. Grill the peppers on all sides until charred, about 10 minutes. Put them in a bowl with 1 tablespoon water. Cover the bowl with a lid or plastic wrap for 30 minutes. Remove the charred skin, core and seeds from the peppers. Cut the flesh into 1/4-inch thick strips and put them in a small bowl. In a separate bowl whisk together the olive oil, balsamic vinegar, capers, and parsley until smooth. Season with salt and pepper, to taste. Pour the mixture over the peppers and toss until coated. Refrigerate for at least 2 hours, (can be made 1 day in advance).
  • Steaks: Put a grill pan over medium-high heat or preheat a gas or charcoal grill. Season the steaks on both sides with the smoked salt and herbs de Provence. Drizzle with olive oil and grill for 4 to 6 minutes each side for medium-rare. Remove the steaks from the grill pan to a cutting board and let sit for 5 minutes before serving.
  • Thinly slice the steaks and arrange on serving plates. Top with the salsa and serve.

1/2 teaspoon salt
1/2 teaspoon pepper
3 (4 ounce) filet mignon steaks
4 tablespoons butter or 4 tablespoons margarine, divided
1/4 cup chopped shallot
2 garlic cloves, minced
2/3 cup red wine (such as Cabernet Sauvignon)
2 tablespoons dijon-style mustard
2 tablespoons capers
chopped tomato (optional)

Steps:

  • Sprinkle salt and pepper over steaks.Melt 2 tablespoons of the butter in large heavy skillet over medium-high heat. Add steaks to skillet and cook 4 minutes on each side or until desired doneness. Remove from skillet: keep warm.
  • Melt remaining 2 tablespoons butter in skillet over medium-high heat and add shallots and garlic. Sauté 2 minutes or until lightly browned. Add wine, mustard and capers; simmer until slightly thickened,about 5 minutes. Spoon sauce over steaks. Garnish with chopped tomato,if desired.

¼ cup all-purpose flour
½ teaspoon salt
¼ teaspoon ground black pepper
2 pounds beef round steak, cut 1-inch thick
2 tablespoons vegetable oil
¼ cup water, or as needed
1 (14.5 ounce) can diced tomatoes
½ cup minced green bell pepper
1 teaspoon onion powder
½ teaspoon salt
⅛ teaspoon ground black pepper

Steps:

  • Stir flour, 1/2 teaspoon salt, and 1/4 teaspoon black pepper together in a bowl. Sprinkle pieces of steak with flour mixture and pound the flour mixture into the meat with a meat mallet or the edge of a sturdy plate.
  • Heat vegetable oil in a large skillet over medium heat; cook the floured beef in the hot oil until browned on both sides, about 15 minutes. Reduce heat to low, pour in water, cover skillet, and simmer beef until tender, about 1 hour. Add more water to the skillet if needed to prevent burning.

all-purpose flour for dredging
2 tablespoons vegetable oil
1 medium onion, sliced
1 clove garlic, minced
1 green bell pepper, sliced
2 cups water

1/4 cup all-purpose flour
1/2 teaspoon salt
1/4 teaspoon pepper
2 pounds beef top round steak, cut into serving-size pieces
2 tablespoons canola oil
1 medium onion, thinly sliced
2 cups water
2 tablespoons Worcestershire sauce
GRAVY:
1/4 cup all-purpose flour
1/4 teaspoon salt
1/8 teaspoon pepper
1-1/4 cups beef broth or water
Hot cooked noodles or mashed potatoes, optional

Steps:

  • Preheat oven to 325°. In a large shallow dish, combine flour, salt and pepper. Pound steak with a mallet to tenderize. Add meat, a few pieces at a time, and toss to coat., In an ovenproof Dutch oven, brown steak in oil on both sides. Arrange onion slices between layers of meat. Add water and Worcestershire sauce. , Cover and bake 2 to 2-1/2 hours or until meat is very tender. Remove to a serving platter and keep warm. , In a small bowl, combine flour, salt, pepper and broth until smooth; stir into pan juices. Bring to a boil over medium heat; cook and stir 2 minutes or until thickened. Serve steak and gravy with noodles or mashed potatoes, if desired. Freeze option: Freeze cooled beef mixture in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a covered saucepan, gently stirring and adding a little broth or water if necessary.

My mother made a very good Swiss steak. It was one of my favorites as a child. This recipe combines her version with a few extras... sweet bell peppers, capers and balsamic vinegar. I think she would have loved my version. It is a very flavorful main dish and a good way to get some veggies into your family.

3/4 cup(s) all purpose flour (or rice flour for gluten free)
1/2 teaspoon(s) salt (plus at least 1/4 teaspoon for vegetables)
1/4 teaspoon(s) ground black pepper for flour (plus 1/8 teaspoon for vegetables))
1/8 teaspoon(s) garlic powder
1/2 teaspoon(s) italian herb seasoning
1/3 cup(s) vegetable or canola oil
1-1 1/2 pound(s) cubed steak or beef round steak, tenderized or pounded to approximately 1/4 " thickness & cut into 4 to 6 portions
6 large sweet bell peppers, seeded & sliced into strips (about 1 quart or 4 cups)
2 large onions, halved & sliced from pole to pole (2 cups)
8 ounce(s) sliced mushrooms (optional)
4 cup(s) chopped tomatoes with liquid (canned, fresh or frozen and thawed)
1 - bay leaf
1/2 tablespoon(s) balsamic vinegar
1-2 tablespoon(s) capers, drained
1 pinch(es) red pepper flakes (optional)

Steps:

  • (Using a plastic food storage bag is the easiest method for flouring, but you may use your preferred method.) Place flour, salt, pepper, garlic powder and Italian herb seasoning in a plastic bag; close top of bag and shake to combine; set aside.
  • In large nonreactive skillet, heat oil on medium-high.
  • While pan is heating, place steak portions in bag with flour and spices; shake well to cover steaks thoroughly with flour.
  • Place steaks in skillet and fry until browned (about 3 or 4 minutes); turn them over and fry until browned (about 3 to 4 minutes.)
  • Remove steak from skillet and place on a plate or baking sheet, temporarily, crispiest side up. (It is not necessary for the meat to be fully cooked, at this point, because it will continue cooking after the vegetables are added.)
  • Add onions, sweet peppers and mushrooms (if using) and saute until onions begin to turn translucent.
  • Add tomatoes, 1/4 teaspoon salt, 1/8 teaspoon ground black pepper, bay leaf and pinch of red pepper flakes (if using); stir to combine.
  • Simmer over medium high heat, for 8 to 10 minutes, to reduce liquid a bit.
  • Nestle steaks, crispiest side up, into the sauce, being careful to avoid totally submerging them; reduce heat to medium-low; cover with lid or tightly fitted aluminum foil and slowly simmer for 30 minutes.
  • Remove cover from skillet and continue to simmer for 30 to 45 minutes until liquid is reduced and has become a sauce, stirring vegetables occasionally. (You may increase heat some to speed reduction of juice.)
  • When sauce has reached the desired consistency, remove steaks to a warm plate.
  • Remove and discard bay leaf; stir into the vegetables and sauce, balsamic vinegar, capers and a generous pinch of parsley.
  • Taste for seasoning and adjust to your taste. (It will probably need salt.)
  • Serve the steaks over a generous bed of the vegetables and sauce. Sprinkle with chopped parsley, if desired.
  • Cover and refrigerate leftovers.
