GROUND BEEF NOODLE BAKE

5 cups uncooked egg noodles
1-1/2 pounds ground beef
1 can (8 ounces) tomato sauce
1 teaspoon salt
1/4 teaspoon garlic salt
1/4 teaspoon pepper
2 teaspoons butter
1 cup cream-style cottage cheese
1 cup sour cream
4 green onions, chopped
1/2 cup minced fresh parsley
1 cup shredded Swiss cheese

Steps:

  • Cook noodles according to package directions. Meanwhile, in a large skillet, cook beef over medium heat until no longer pink; drain. Stir in the tomato sauce, salt, garlic salt and pepper. Bring to a boil. Reduce heat; simmer, uncovered, for 5 minutes. , Drain noodles; toss with butter. Set aside. In a blender, process cottage cheese and sour cream until smooth. Transfer to a large bowl; stir in onions and parsley. Add noodles; toss to coat. , In a greased 11x7-in. baking dish, layer a third of the noodle mixture and half of the meat sauce. Repeat layers. Top with remaining noodle mixture; sprinkle with Swiss cheese. , Bake, uncovered, at 350° for 25-30 minutes or until bubbly and lightly browned.

KNOEPFLE (SPAETZLE)

Knoepfle is a Swiss egg noodle that we make every holiday season! It's the perfect side dish and everyone loves them once they taste them.

Number Of Ingredients 6

4 large eggs
4 cups all purpose flour
2 cups whole milk (approximately)
1 teaspoon salt
8 tablespoons butter
2 medium onions

Steps:

  • Beat eggs and about 1 cup milk in an electric mixer fitted with the paddle attachment. Add 2 cups flour and mix for a minute, then add the remaining flour. The batter will be very thick. Add about 1 cup more milk and beat until glassy and thick. It's the right consistency when it takes 4-5 seconds to drip off a wooden spoon. If it's too thin, add some additional flour. If it's too thick to drip, add more milk.
  • While you're mixing up the dough (or after, it's okay if the dough sits), chop your onions to small dice. Melt butter in a frying pan and cook the onions until translucent, but don't caramelize them. Set aside. (If you don't want to serve with onions, skip this step, but you'll still need the butter.)
  • Meanwhile, begin boiling your water. It is best to use a large stock pot that has a nested colander. Once water is boiling, add approximately a cup of batter to the spaetzle press and slowly slide the press back and forth to create your knoepfle. Watch for the knoepfle to float to the top of the water, stir to get any that are stuck on the bottom to float, then boil for an additional one minute (after they are all floating). Strain and place into a large bowl. Bring water back up to a boil between batches.
  • Once adding a batch to your serving bowl, add either some of the onions or 2 tablespoons of butter. Stir so they don't stick together.
  • Serve with the sauted onions, extra butter, gravy, and Swiss or parmesan cheese.
  • These freeze well if you have leftovers.

2 packages (1 pound each) wide egg noodles
1/2 cup butter, cubed
1/4 cup all-purpose flour
1 teaspoon garlic salt
1 teaspoon onion salt
5 to 6 cups 2% milk
2 pounds process cheese (Velveeta), cubed
TOPPING:
1/2 cup dry bread crumbs
2 tablespoons butter, melted

Steps:

  • Cook noodles according to package directions; drain. Meanwhile, in a Dutch oven, melt butter. Stir in the flour, garlic salt and onion salt until smooth; gradually stir in milk. Bring to a boil; cook and stir for 2 minutes or until thickened. Add the cheese; stir until melted. Stir in noodles. , Transfer to two greased shallow 2-qt. baking dishes. Combine the bread crumbs and butter until crumbly; sprinkle over casseroles. Bake, uncovered, at 350° for 25-30 minutes or until golden brown.

TUNA NOODLE CASSEROLE WITH SWISS CHEESE



Tuna Noodle Casserole with Swiss Cheese image

This is a very easy and fast lunch or dinner. It's healthy and easy to teach the middle schoolers how to make dinner for the family.

2 c macaroni, large or small shells
2 can(s) tuna, packed in water (small cans)
1 can(s) cream of celery soup
1/2 c milk
1/2 c chopped celery
1/3 c diced onion
1/2 tsp salt and pepper
2/3 c shredded swiss cheese, maybe substitute mozzarella.

Steps:

  • 1. Preheat Oven to 350 degrees. Boil noodles in medium pot for 12 mins.(or until tender but not overcooked)
  • 2. Dice and chop onion and celery and saute in skillet with Pam or a few drops of oil and a few drops of water. Until translucent.(3-4) mins.
  • 3. Then remove tuna from cans(strain off liquid first)and add to celery and onions in skillet. Add cream of celery soup and milk. Stir on low heat.
  • 4. Drain noodles and put in round or square 9x9 size casserole dish. Add skillet ingredients. Add salt and pepper. Toss until thoroughly mixed. Top with shredded Swiss or Mozzarella. You can mix the cheese in a little bit into the casserole.
  • 5. Bake for 15 mins to melt cheese. Serve warm.

SWISS TUNA BAKE

Trying to use up Easter Ham I threw this together using what I had in the pantry and fridge! Amounts are approximate, feel free to add more or less of any ingredient! Edited to change the size bag of noodles. I think it was an 8 ounce bag not 16 ounce!

1 (8 ounce) package egg noodles
2 tablespoons butter
2 tablespoons flour
1 cup half-and-half
1 cup chicken broth
1 cup swiss cheese, grated
1 teaspoon dry mustard
salt and pepper, to taste
1 cup cooked ham, diced
1 cup frozen peas
0.5 (6 ounce) can French-fried onions

Steps:

  • Preheat oven to 325 degrees.
  • Prepare egg noodles in a large Dutch oven, boiling as described on package. Drain and return to the Dutch oven.
  • While the noodles are boiling, melt butter in skillet over medium to medium high heat. Stir in flour until thickened a bit. Slowly add half and half and chicken broth, stirring to prevent lumps. Cut heat up a bit if needed. Slowly add Swiss cheese, dry mustard and salt and pepper, stirring constantly.
  • When the sauce is medium thickness, cut heat down to low.
  • In the large Dutch oven containing the drained noodles, add the frozen peas, ham and the sauce. Mix well and pour into rectangular baking dish approximately 9 by 13.
  • Cover with French Fried onions.
  • Bake for 20 minutes.

1 (10.75 ounce) can condensed cream of mushroom soup
½ cup white wine
¼ cup water

½ cup shredded Swiss cheese
1 cup seasoned stuffing mix (coarse-crumb style)

Steps:

  • Preheat an oven to 375 degrees F (190 degrees C). Lightly grease a 9x13 inch baking dish.
  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the egg noodles, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 5 minutes. Drain well in a colander set in the sink.
  • Combine the cream of mushroom soup, white wine, and water in a large bowl. Stir in the cooked egg noodles, ham, and Swiss cheese. Pour the mixture into the prepared baking dish. 1 cup all-purpose flour
1/2 teaspoon salt
2 large eggs, lightly beaten
2 quarts water
CHEESE SAUCE:
3 tablespoons butter
3 tablespoons all-purpose flour
1/2 teaspoon salt
1/2 teaspoon paprika
1-1/2 cups whole milk
8 ounces Swiss cheese, diced
2 large eggs, well beaten

Steps:

  • In a small bowl, combine flour and salt. Make a well in center; add eggs. Stir together, forming a dough. , Turn dough onto a floured surface; knead 5-6 minutes. Divide dough in half. Roll each portion into a 12x9-in. rectangle. Dust both sides of dough with flour; roll up, jelly-roll style. Cut into 1/4-in. slices. Unroll noodles on paper towels; let dry for up to 2 hours., Preheat oven to 350°. In a Dutch oven, bring water to a rapid boil.
