I was going to make broccoli and cheddar soup,I had swiss cheese. My family loved it.

2 bunch broccoli, fresh
1 qt chicken stock
2 c half and half
1 c onion small diced
1 Tbsp minced garlic
3 c swiss cheese shedded
1/4 c roux
salt and pepper to taste

Steps:

  • 1. In a large pot saute onions and garlic and then add the chicken stock.
  • 2. Cut the broccoi into small pieces and add to the stock and simmer until the broccoli is tender. Then add the half & half,salt and pepper.
  • 3. Bring to a boil and add the roux until the soup thickens. Then turn off the heat and whisk in the cheese.
  • 4. When the cheese is melted its ready to serve.

Please note: This recipe calls for 10 oz small yellow-fleshed potatoes (like Yukon Gold or similar). FYI, this is approx. 2 small potatoes. (It was difficult to write this out in the recipe, so i just decided to note it here.) This is a nice, filling soup that is easy to make. When I made this, I subbed about half the water with leftover chicken broth. However, I'm sure it tastes just as good (w/out the broth). This is part of a "two-for" recipe, which originally included a recipe for Ham-and-Swiss Toasts (for serving alongside) for a complete meal idea. I have posted the Ham and Swiss Toasts separately. 2 tablespoons extra virgin olive oil
1 large onion, chopped
salt and pepper
10 ounces yukon gold potatoes, peeled and finely chopped
1 bunch broccoli, chopped into 1/2 in. pieces (approx. 1 1/4 lbs)
3 1/2 cups water
2 cups shredded swiss cheese (1/2 lb approx)
1/2 cup heavy cream
toasted walnuts (optional garnish)

Steps:

  • In a large saucepan, heat olive oil over medium heat. Add the onion, season with salt and pepper and cook (stirring often), until softened (approx. 7 minutes).
  • Add the potatoes and 3 1/2 cups water and bring to a boil. Lower heat and simmer for 5 minutes.
  • Add broccoli and cover and cook until just tender (about 7 minutes).
  • Puree half the soup in the blender. Add back to the other half in pan/pot.
  • Stir in the 2 cups of the shredded cheese. Add cream and stir. Season with salt and pepper and keep warm over low heat.
  • Recommended toppings: toasted walnuts (optional).
  • If desired, prep and prepare the Ham and Swiss Toasts (listed separately) to accompany.

This broccoli cheese soup is the best that I have ever tasted! I had to beg for over a year to get the recipe. It is not a smooth soup, but more chunky and hearty, thus the chowder title. This is a great recipe for dinner, brunch or even a dinner party.

2 heads broccoli (about 1 pound)
1 medium onion, chopped
3/4 cup butter
1/2 cup flour
4 cups milk
1 cup chicken broth
1 1/2 teaspoons salt
1/2 teaspoon pepper
1/4 teaspoon nutmeg
2 cups sharp cheddar cheese, grated

Steps:

  • Chop broccoli florets and stalk into bite size pieces. Cook broccoli just until tender. Do not overcook. Drain and set aside. Sautee chopped onion in the 1/4 cup butter until tender; set aside. In a large saucepan or soup pot prepare a white sauce; melt the 1/2 cup butter over medium heat, then stir in flour until well blended. Gradually stir in milk, chicken broth, and salt. Stir constantly until mixture reaches a boil. Cook 1 to 2 minutes until thickened. Add broccoli and onion. Stir in cheese. Cook briefly over medium heat. Avoid bringing to a boil. Stir in pepper and nutmeg. Serve immediately or keep warm over low heat.

I joined a crockpot recipe group and this is one of the recipes that was sent to me in an email. This couldnt be simpler!

2 tablespoons flour
5 ounces evaporated milk
2 cups ham, diced
12 ounces frozen chopped broccoli
1/4 cup onion, minced
1 cup swiss cheese, grated
2 cups water
1 cup half-and-half

Steps:

  • In a small bowl mix together well the flour and evaporated milk.
  • To the crockpot, add ham, broccoli, onion, swiss cheese, water and flour/milk mixture.
  • Set crockpot to low and cook for 7 hours.
  • Before serving, stir in half-and-half and heat thru. Serve immediately.

2 cups diced peeled potatoes
2 cups water
1/3 cup sliced green onions
1 teaspoon salt

2 cups whole milk
1/2 cup shredded cheddar cheese

Steps:

  • In a large saucepan, combine the first 6 ingredients. Bring to a boil. Reduce heat; cover and simmer for 12-14 minutes or until vegetables are tender., Meanwhile, in another saucepan, melt butter. Stir in flour and nutmeg until smooth. Gradually add milk. 2 1/2 lbs broccoli
1 cup leeks or 1 cup green onion, chopped
4 tablespoons butter
4 tablespoons flour
4 cups chicken stock
1 cup light cream
1 cup swiss cheese, grated
1/8 teaspoon nutmeg
salt
pepper

Steps:

  • Cut enough 1-inch florets from broccoli to measure 2 cups. Cut rest of broccoli into 1-inch pieces. Cook florets and broccoli separately, in lightly salted water; until just tender. (Florets will be done first.) Immediately rinse in cold water to chill completely. Drain. Set florets aside until serving time.
  • In a large saucepan, saute leeks in butter until tender; about 3 - 4 minutes. Sprinkle in flour and cook for a minute or so, stirring with a whisk. Remove from heat and stir in chicken stock. Return to heat and simmer 5 minutes stirring occasionally.
  • Add broccoli pieces (not florets) to chicken stock and puree in an electric blender, in batches, until smooth.
  • Shortly before serving, blend in cream and cheese. Simmer gently until cheese melts. Add nutmeg, and salt and pepper to taste. Add reserved broccoli florets to heat through. Serve immediately.
