SWEET CORN FRITTERS WITH A SPICY AIOLI



Sweet Corn Fritters with a Spicy Aioli image

A perfect blend of sweet and savory, these fluffy fritters are fried to a crispy exterior and served with a spicy honey sriracha aioli sauce.

Number Of Ingredients 19

8 ears of corn (shucked and cooked)
1/4 cup milk
2 eggs
1/4 cup scallions or green onions (sliced)
3/4 tsp garlic (minced)
2 Tbsp cilantro (minced)
1 small yellow onion (very finely diced)
1 cup flour
1/2 cup cornmeal
3/4 Tbsp salt
3/4 Tbsp sugar
1 1/8 Tbsp baking powder
1/2 tsp ground coriander
2 tsp ground black pepper
Oil for cooking
For the Aioli:
1 cup mayonnaise
1 Tbsp Sriracha sauce (more or less (to taste))
2 Tbsp honey

Steps:

  • Mix aioli ingredients together and store in refrigerator until ready to serve. This will allow the flavors to blend together.
  • Heat cooking oil to 350 degrees F.
  • Grill the corn on a grill (or cook using preferred method) and cut kernels from the cobs.
  • Place kernels in a food processor with the milk, eggs and onion and pulse until fairly smooth but still textured.
  • Remove to a large bowl and stir in the chopped scallions, garlic, and cilantro.
  • Stir in dry ingredients (flour, cornmeal, salt, sugar, baking powder, coriander and black pepper) into the corn mixture.
  • Scoop batter into small golf-ball sized balls and cook in oil until cooked through and deep golden brown, about 3-5 minutes. Place fritters on paper towels to drain.
  • Serve with the sauce and enjoy!

1 (7 oz) can chopped green chiles
1 (6 oz)can chopped jalapeno peppers (drained and liquid added to taste)
1/2 cup green onion (chopped)
1 cup mayonnaise
1 cup sour cream
1 teaspoon pepper
1/2 teaspoon garlic powder
1 (16 ounce) package shredded sharp cheddar cheese
2-3 bags Fritos Scoops corn chips

Steps:

  • In a large bowl, mix all ingredients except chips.
  • Chill two hours to overnight. Serve with Frito Scoops corn chips.

8 ounces cream cheese, at room temperature
1/2 cup sour cream
1/2 cup mayonnaise
Two 10-ounce packages frozen fire-roasted corn
Two 4.5-ounce cans chopped green chiles
1/2 cup jarred jalapenos, chopped
1/2 cup jarred salsa
Kosher salt and freshly ground black pepper
3 cups grated Monterey Jack cheese
1/4 cup fresh cilantro leaves
Corn chips, for serving

Steps:

  • Preheat the oven to 375 degrees F.
  • Stir together the cream cheese, sour cream and mayonnaise in a large bowl until combined. Add the corn, chiles, jalapenos, salsa, salt, pepper and half the grated cheese, then stir.
  • Spread the mixture into a 9-by-13-inch casserole dish and sprinkle the top with the remaining cheese. Bake until bubbly and golden, about 20 minutes.
  • Top with the cilantro and serve warm with the corn chips on the side.

4 sweetcorn , halved
85g desiccated coconut
50g golden caster sugar
½ tsp ground cinnamon
50g butter

Steps:

  • Barbecue the sweetcorn until cooked or boil for 10 mins until tender. Meanwhile, toast the coconut in a hot pan until tinged golden, mix with the sugar and cinnamon and scatter over a tray.
  • Toss the hot sweetcorn in the butter, then use forks to roll and dip it in the coconut mixture before eating.

1/4 lemon
red chilli powder

Steps:

  • Drain sweetcorn and heat in saucepan
  • Remove from heat, add a good nob of butter, squeeze of lemon juice and a sprinkling of red chilli powder
  • You can use corn on the cob for this recipe, grill the corn, keep turning regularly to avoid burning, add butter, lemon and chilli :)))
  • This is nice eaten on its own
