This is my husband's grandmother's recipe. It is AMAZING served over meatloaf!

Number Of Ingredients 7

15 ripe tomatoes - peeled, seeded, and chopped
4 Granny Smith apples - peeled, cored, and chopped
5 sweet onions, chopped
2 cups white sugar
5 fluid ounces white vinegar
1 tablespoon pickling spice, bundled in cheesecloth
6 1-pint canning jars with lids and rings

Steps:

  • Combine tomatoes, apples, onions, sugar, vinegar, and pickling spice bundle in a large pot; bring to a boil and cook together about 10 minutes, stirring occasionally.
  • Sterilize the jars and lids in boiling water for at least 5 minutes. Pack the tomato mixture into the hot, sterilized jars, filling the jars to within 1/4 inch of the top. Run a knife or a thin spatula around the insides of the jars after they have been filled to remove any air bubbles. Wipe the rims of the jars with a moist paper towel to remove any food residue. Top with lids and screw on rings.
  • Place a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil and lower jars into the boiling water using a holder. Leave a 2-inch space between the jars. Pour in more boiling water if necessary to bring the water level to at least 1 inch above the tops of the jars. Bring the water to a rolling boil, cover the pot, and process for 40 minutes.
  • Remove the jars from the stockpot and place onto a cloth-covered or wood surface, several inches apart, until cool. Once cool, press the top of each lid with a finger, ensuring that the seal is tight (lid does not move up or down at all). Store in a cool, dark area.

My Mom made this when I was a kid and I have been craving it for years. I just got in to canning and had her find the recipe for me. She got it from a neighbor years ago. I found Roma tomatoes at a farmers market for 25 cents a pound and I couldn't resist. It tastes great on steak, hot dogs, burgers, venison etc. I even pour it over cream cheese and eat it with crackers. It is sweet, be warned. There are plenty of other tomato relish recipes out there if you prefer a savory relish.

5 quarts tomatoes, skinned and cored
1 quart onion, peeled and ground
1 quart apple, tart, peeled and ground
1 quart vinegar
4 quarts sugar
4 tablespoons salt
4 tablespoons mustard, dry
1 teaspoon cinnamon
1 teaspoon clove, powdered
1 teaspoon allspice, powdered
1 teaspoon ginger, powdered

Steps:

  • Get a big pot, really big, 10 quarts or bigger.
  • Mix ingredients together and simmer uncovered on low.
  • The tomatoes will break down on their own, but you can use a potato masher and/or immersion blender if a very smooth relish is desired.
  • Stir often, it can burn on the bottom. Stir with a spatula to help prevent sticking and burning.
  • Reduce until it reaches the consistency of applesauce. It will turn a nice dark red and be somewhat translucent. The recipe said 2-3 hours, I cooked it for 6.
  • To preserve, ladle relish in to prepared, hot jars leaving at least 1/4 inch head space.
  • Process in boiling water bath for 20 minute (adjust for altitude).

UNCLE D'S SWEET PICCALILLI (GREEN TOMATO RELISH)

Not sure what to do with the last of those green tomatoes from your garden? This recipe will use 'em up and the result is a tasty relish that is flavorful and can be used in place of sweet pickle relish. It can also be used like a side chutney for pork chops or sausage. Makes a great fall/harvest gift for friends and neighbors too.

3 cups apple cider vinegar
3 cups white sugar
2 tablespoons salt
1 tablespoon mustard seed
1 tablespoon dried basil
6 cups seeded and finely chopped green tomatoes
2 cups finely chopped red bell peppers
2 cups finely chopped red onion
2 cups finely chopped Granny Smith apples
8 4-ounce canning jars with lids and rings

Steps:

  • Combine vinegar, sugar, salt, mustard seed, and basil in a large pot; bring to a boil. Reduce heat and simmer until sugar is dissolved, about 5 minutes. Stir green tomatoes, red bell peppers, red onion, and Granny Smith apples into vinegar mixture; boil vigorously, stirring occasionally, until vegetables have softened and relish flavors have blended, 15 to 20 minutes.
  • Sterilize the jars and lids in boiling water for at least 5 minutes. Pack relish into hot, sterilized jars, filling to within 1/4 inch of the top. Run a knife or thin spatula around the insides of the jars after they have been filled to remove any air bubbles. Wipe the rims of the jars with a moist paper towel to remove any food residue. 10 pounds tomatoes
3 large sweet onions, finely chopped
2 medium sweet red peppers, finely chopped
2 medium green peppers, finely chopped
2 teaspoons mustard seed
1 teaspoon celery seed
4-1/2 cups white vinegar
2-1/2 cups packed brown sugar
3 tablespoons canning salt
2 teaspoons ground ginger
2 teaspoons ground cinnamon
1 teaspoon ground allspice
1 teaspoon ground cloves
1 teaspoon ground nutmeg

Steps:

  • In a large saucepan, bring 8 cups water to a boil. Add tomatoes, a few at a time; boil for 30 seconds. Drain and immediately place tomatoes in ice water. Drain and pat dry; peel and finely chop. Place in a stockpot. Add onions and peppers., Place mustard and celery seed on a double thickness of cheesecloth; bring up corners of cloth and tie with string to form a bag. Add spice bag and the remaining ingredients to the pot. Bring to a boil. Reduce heat and simmer, uncovered, for 60-75 minutes or until slightly thickened. Discard spice bag., Carefully ladle relish into hot 1-pint jars, leaving 1/2-in. headspace. Remove air bubbles; wipe rims and adjust lids. Process in boiling-water canner for 20 minutes.

3 onions, chopped
3 -4 sliced sweet peppers
2 small hot peppers
2 cups sugar
1 cup vinegar
clove
cinnamon stick
1 teaspoon salt

Steps:

  • Mix all the ingredients together in a large pot, bring to a boil, then reduce the heat and simmer until desired thickness about 3 to 5 hours.
  • Pour the relish into hot, sterilized pint jars, cover, and process in a boiling bath for 15 minutes.
