SWEET AND SALTY POTATO CHIP TOFFEE COOKIES

i remember going to grandmas and she would make these cookie sometimes she would let me help her they are so good and made with grandmas love

2 c plus 2 tablespoons all purpose flour
12 tsp baking soda
3/4 c butter, softened
1 c brown sugar, light
1/2 c sugar
1 egg, at room temperature
1 egg yolk, at room temperature
2 tsp vanilla extract
1/2 c crushed ruffled potato chips
1/2 c semi-sweet chocolate chips
1/2 c chopped heath bars, or heath bar bit o brickle baking pieces

Steps:

  • 1. preheat oven to 325.
  • 2. mix the flour and baking soda in a bowl and set aside.
  • 3. with electric mixer or stand mixer with paddle attachment, cream the butter and sugars together.
  • 4. add the egg, egg yolk and vanilla and mix well.
  • 5. gradually add the flour mixture and stir until a dough forms (may take a couple minutes of stirring).
  • 6. fold in the potato chips, chocolate chips and toffee. do not over mix the dough at any point in the process.
  • 7. chill dough for at least 30 minutes or up to 5 days covered in the refrigerator.
  • 8. drop by tablespoonfuls onto ungreased baking sheet. press a few more add ins onto the top for decoration.
  • 9. bake for 8-10 minutes or until edges are slightly browned.
  • 10. the centers should appear very soft and puffy. let cool completely.
  • 11. make sure to keep dough cold at all times while the batches are baking.

1 cup(s) butter (2 sticks)
2 - eggs
2 cup(s) light brown sugar, firmly packed
2 teaspoon(s) vanilla extract
1 3/4 cup(s) flour
1 teaspoon(s) baking soda
1 teaspoon(s) cinnamon
1/2 teaspoon(s) salt
3 cup(s) oats, regular
1 1/3 cup(s) toffee bits
1/2 cup(s) coconut, flaked

Steps:

  • Preheat the oven to 375 degrees and grease cookie pans lightly.
  • In a large bowl, beat well: the butter, brown sugar, eggs and vanilla.
  • Add the flour, baking soda, salt and cinnamon to the bowl a third at a time and blend in.
  • Add the oats, toffee bits and coconut, beat slowly just until the ingredients are mixed well or stir with a spoon.
  • Using a teaspoon create rounded teaspoon dough balls and drop onto cookie pan leaving about 2 inches between cookies.
  • Bake 8 minutes, approximately. My current oven takes only 7 minutes. They are done when they start to turn brown around the edges.
  • Cool them for one minute only and move to a wire rack. Cool a bit more, they are good warm with milk!
