My family loves to grill in the summer, and this is our go-to recipe when hosting friends and family. Every bite is full of flavor and the chicken is always tender and juicy. -Joy Yurk, Grafton, Wisconsin

2-1/2 cups white wine
2 medium onions, finely chopped (1-1/2 cups)
1/2 cup lemon juice
10 garlic cloves, minced
16 chicken drumsticks
3 bay leaves
1 can (15 ounces) tomato puree
1/4 cup honey
1 tablespoon molasses
1 teaspoon salt
1/2 teaspoon dried thyme
1/4 teaspoon cayenne pepper
1/4 teaspoon pepper
2 tablespoons white vinegar

Steps:

  • For marinade, in a large bowl, combine wine, onions, lemon juice and garlic. Pour 2 cups marinade into a large shallow dish. Add chicken; turn to coat. Cover and refrigerate 4 hours to overnight. Add bay leaves to remaining marinade; cover and refrigerate., Meanwhile, in a large saucepan, combine tomato puree, honey, molasses, salt, thyme, cayenne, pepper and remaining marinade. Bring to a boil. Reduce heat; simmer, uncovered, 35-40 minutes or until liquid is reduced by half. Remove from heat. Remove bay leaves; stir in vinegar. Reserve 1 cup sauce for serving; keep warm., Drain chicken, discarding marinade in bag. Grill chicken, covered, on an oiled rack over indirect medium heat 15 minutes. Turn; grill 15-20 minutes longer or until a thermometer reads 170°-175°, brushing occasionally with remaining sauce. Serve chicken with reserved sauce.

Steps:

  • Simmer 1 cup ketchup, 1/2 cup cider vinegar, 3 tablespoons each molasses and brown sugar, 1 tablespoon each dried mustard and soy sauce, 2 teaspoons Worcestershire sauce, 1 cup water, and kosher salt and pepper to taste until thickened, about 30 minutes. Preheat a grill to medium-high on one side. Season 4 bone-in, skin-on chicken breast halves with salt and pepper. Grill over direct heat until golden and crisp on both sides, about 5 minutes. Transfer to a bowl and toss with 1 cup of the sauce. Place on the cooler side of the grill; cover and cook, basting once, until the meat is glazed and reaches 165, 25 to 30 minutes.

this is a super quick and easy barbecued chicken breast from the oven or grill!

3 large boneless, skinless chicken breasts
2/3 bottle(s) fat free, or lite italian dressing
1 cup(s) your preferred bottled barbecue sauce or my recipe for https://www.justapinch.com/recipes/main-course/main-course-chicken/homemade-barbecue-sauce.html?r=10
1/4 cup(s) brown sugar

Steps:

  • Butterfly chicken breasts and slice completely in half to make 6 pieces.
  • Place chicken breasts in a zip lock back and cover with Italian dressing. Press all the air out and seal.
  • Refrigerate chicken breasts for a minimum of 30 minutes or up to overnight.
  • Line a pan with aluminum foil. Place a wire rack over the foil. Spray with nonstick cooking spray.
  • Remove chicken from marinade and place on the rack. Bake at 350 for 20 minutes.
  • Meanwhile, mix barbecue sauce and brown sugar, brush barbecue sauce onto top of chicken breasts, broil for 5 minutes or until sauce begins to caramelize. Flip chicken and repeat on the opposite side. (about 4-5 minutes per side.)
  • NOTE: You can also do this on the grill. Place chicken breasts on grill over medium high heat and cook for 8 minutes per side. Brush with sauce halfway through on each side.

1/2 cup chili sauce
3 tablespoons brown sugar
2 teaspoons salt-free seasoning blend, divided
3/4 teaspoon cayenne pepper, divided
2 teaspoons ground mustard
2 teaspoons chili powder
8 boneless skinless chicken breast halves (4 ounces each)

Steps:

  • In a small saucepan, heat oil over medium heat. Add garlic; cook and stir 1 minute. Add chili sauce, brown sugar, 1 teaspoon seasoning blend and 1/4 teaspoon cayenne. Bring to a boil; cook and stir for 1 minute. Remove from heat., In a small bowl, mix mustard, chili powder and remaining seasoning blend and cayenne; rub over chicken. Lightly coat grill rack with cooking oil., Grill chicken, covered, over medium heat for 4 minutes. SWEET AND SPICY GRILLED CHICKEN BREASTS



Sweet and Spicy Grilled Chicken Breasts image

Brown sugar gives these grilled chicken breasts a glistening glaze and caramel-like sweetness, while mustard powder and cayenne add an earthy kick. If you don't want to bother making a mustard sauce for dipping, just serve these with dollops of good, strong Dijon mustard on the side. A crisp salad and some grilled corn completes the meal. And if you prefer dark meat, this recipe will also work with boneless, skinless thighs, though you might have to add a minute or so to the cooking time. Or use a combination of breasts and thighs for maximum crowd appeal.

4 (6-ounce) boneless, skinless chicken breasts
2 tablespoons dark brown sugar
2 teaspoons ground coriander
1 1/2 teaspoons kosher salt
1 1/2 teaspoons dry mustard powder
1/4 teaspoon cayenne
1 1/2 tablespoons extra-virgin olive oil, more as needed
4 tablespoons Dijon mustard
2 teaspoons minced fresh chives

Steps:

  • Place chicken breasts between two sheets of parchment or plastic wrap. Using a mallet or rolling pin, pound each to an even thickness of 1/2 inch. Do not make them any thinner or they could dry out.
  • In a small bowl, combine sugar, coriander, salt, mustard powder and cayenne. Place chicken breasts in a bowl and rub well with spice mixture. Cover and refrigerate 1 to 2 hours. Remove chicken from fridge while you heat the grill.
  • Light the grill, building a hot fire, or heat your gas grill to high. Once grill is fully heated, brush breasts lightly with olive oil and place chicken on the grill. Cook until undersides are browned and chicken is about halfway cooked, 3 to 5 minutes. Flip breasts and grill until cooked through, 3 to 5 minutes more.
  • Transfer chicken to a platter. In a small bowl, whisk together mustard and chives. Whisk in 1 1/2 tablespoons oil. Serve chicken with mustard for dipping.
