¼ cup vegetable oil
1 tablespoon chili powder
1 teaspoon ground cumin
1 cup milk
½ cup yellow cornmeal
2 eggs
1 (6 ounce) can black olives, drained

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Butter an 8-inch baking or casserole dish.
  • Heat a large skillet over medium-high heat. Cook and stir ground beef and onion in the hot skillet until beef is browned and crumbly, 5 to 7 minutes. Mix in corn, tomatoes, oil, chili powder, and cumin. Bring to a boil; remove from heat.
  • Combine milk, cornmeal, and eggs in a large bowl. Stir in meat mixture. Mix in olives. Pour into the prepared baking dish.

1 pound ground sirloin beef (90% lean)
1 medium onion, chopped (1 med = 1/2 cup)
1 medium green bell pepper, chopped
2 cloves garlic, minced (2 cloves = about 1 tsp)
1 can (14.5 oz each) Hunt's® Diced Tomatoes, drained, divided
1 cup drained canned whole kernel corn
1 can (4 oz each) diced green chilies, divided
1/2 teaspoon salt
1/2 teaspoon ground black pepper
1 egg
1/3 cup reduced fat (2%) milk
1 pkg (8.5 oz each) corn muffin mix
1 cup shredded Cheddar cheese (1 cup = 4 oz)

Steps:

  • Preheat oven to 400ºF. Spray 9-inch glass pie plate with cooking spray; set aside. Brown meat with onions, bell peppers and garlic in large skillet over medium-high heat; drain. Remove 1/4 cup of the diced tomatoes for later use; set aside. Add remaining diced tomatoes, the corn, half of the green chilies, the salt and pepper to meat mixture; mix well. Reduce heat to medium; simmer 5 minutes, stirring occasionally. Spoon into prepared pie plate; set aside.
  • Beat egg and milk in medium bowl with wire whisk until well blended. Add corn muffin mix; stir just until moistened. Add remaining green chilies, the reserved 1/4 cup diced tomatoes and the cheese; mix well. Spoon evenly over meat mixture in pie plate. Place on baking sheet.
  • Bake 20 to 30 minutes, or until wooden pick inserted in center of the cornbread layer comes out clean. Cut into 6 wedges to serve.

1 cup chopped onion
½ cup chopped green bell pepper

1 cup frozen corn
1 (2.25 ounce) can sliced black olives, drained
1 tablespoon chili powder
1 teaspoon minced garlic
1 teaspoon ground cumin
1 teaspoon salt

1 cup shredded Cheddar cheese
1 ½ cups milk
2 tablespoons butter

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.

2 tablespoons extra-virgin olive oil
2 cloves garlic, chopped
1 onion, chopped
salt and ground black pepper to taste
1 pound lean ground beef
2 (7 ounce) cans Mexican-style corn (such as Green Giant®)
1 (8 ounce) jar chunky salsa
1 (7.75 ounce) can Mexican-style hot tomato sauce (such as El Pato®)
1 (4 ounce) can chopped green chiles
1 (1 ounce) packet taco seasoning mix
1 (15 ounce) package corn bread mix (such as Krusteaz® Honey Corn Bread Mix)
⅔ cup milk
⅓ cup vegetable oil
1 egg
2 (7 ounce) cans Mexican-style corn (such as Green Giant®), drained
1 (4 ounce) can chopped green chiles, drained
1 cup shredded Mexican cheese blend
1 tablespoon extra-virgin olive oil

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Pour 2 tablespoons olive oil into a cold skillet; sprinkle in garlic. Cook garlic over medium heat until sizzling and fragrant, 2 to 3 minutes. Stir onion, salt, and pepper into the garlic and olive oil; cook until onion is translucent, 5 to 10 minutes. 2 pounds fresh corn masa dough
½ teaspoon baking soda
2 tablespoons warm water, or as needed
1 cup unsalted butter, at room temperature
1 cup vegetable shortening, at room temperature
1 cup white sugar
1 (20 ounce) can pineapple, drained and finely chopped

Steps:

  • Place corn husks in a bowl, cover with boiling water, and soak for 30 to 60 minutes. Drain, place on a work surface, and cover with a clean, damp towel.
  • While corn husks are soaking, combine masa dough, baking soda, and water in a bowl. Knead until dough has a smooth and even consistency, adding more water, 1 teaspoon at a time, as needed. Take care not to add too much water.
  • Beat butter, vegetable shortening, and sugar together in a second bowl with an electric mixer until smooth and creamy. Slowly add masa dough and knead until mixture has a uniform consistency. Mix in chopped pineapple.
  • Spread about 1 tablespoon masa mixture onto a corn husk. Fold the bottom of the husk over the filling, then fold sides of husk together, one over the other. Finally fold the top of the husk into the tamale, making a little package. Repeat with remaining husks.
  • Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil, then reduce heat to medium low. Add tamales with the open side up and cook covered until filling is heated through and separates from the husk, about 1 hour.

1 1/2 tablespoons unsalted butter
1 large green apple, such as Granny Smith, peeled and diced
1/4 cup raisins
1 1/2 tablespoons sugar
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
Juice of 1 lemon
1 1/2 cups masa harina
1 1/2 tablespoons melted butter
3/4 tablespoon salt
1 1/2 teaspoons light agave nectar
12 tamale husks
1 quart vanilla ice cream, for serving
1/2 cup goats milk caramel, or regular caramel, for serving

Steps:

  • For the apple compote: Set a medium saute pan over medium-high heat. Add the butter and green apples. Saute until the apples soften, 1 to 2 minutes, and then add the raisins, sugar, cinnamon, nutmeg and lemon juice. Add 1/4 cup of water and simmer until the apples are cooked through and the raisins are plumped, about 5 minutes. Set the compote aside to cool on a plate.
  • For the tamales: Mix the masa harina, 1 1/4 cups water, butter, salt and agave into a thick paste. Fold the apple compote into the masa mixture.
  • Set a corn husk out on a flat surface (double up or shingle 2 husks if they are small or have tears). Add 5 tablespoons of the masa mix into the center of the corn husk. Push the mixture to 1 inch from the side of the husk. Fold one edge of the husk to the center and then fold the other side to cover the entire tamale. Fold the ends over by 2 inches and tuck under to hold in place.
  • Place a colander in large pot of boiling water, but do not let the colander touch the water. Place the tamales in the colander, cover and steam the tamales for 30 to 40 minutes.
  • Serve the tamales topped with vanilla ice cream and a drizzle of caramel.

1 (14.5 ounce) can diced tomatoes with juice
1 teaspoon chili powder
1 teaspoon garlic powder
1 teaspoon salt
1 cup cornmeal
1 cup milk
2 large eggs, beaten
1 (12 ounce) can corned beef
1 (6 ounce) can whole black olives, drained
½ cup shredded Monterey Jack cheese

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Melt butter in a large skillet over medium heat. Add onion and sauce until soft, about 5 minutes. Add creamed corn, tomatoes with juice, chili powder, garlic powder, and salt; bring to a boil.

1 (16 ounce) can tomatoes
1 (16 ounce) can whole corn
1 (16 ounce) can black olives
1 tablespoon chili powder
1 teaspoon salt
1 teaspoon pepper
1/2 cup cornmeal
2 cups milk
2 tablespoons butter
1 cup cornmeal

Steps:

  • Preheat oven to 375 degrees.
  • Fry hamburger and drain.
  • Add the onions, green pepper and garlic; cook until onions are golden.
  • Add tomatoes, corn,olives, salt and pepper, and chili powder; stir and add corn meal.
  • Pour this all in a 13x9-inch pan.
  • In a sauce pan pour in 2 cups milk, 1 teaspoon salt, 2 tablespoons butter and 1 cup of corn meal.
  • Stir until thick (it thickens fast).
  • Pour mixture on top of the hamburger mixture. If you desire, sprinkle cheddar cheese on top.
  • Bake until golden, about 45 minutes to 1 hour.
