2/3 cup roughly chopped pecans
3 pounds sweet potatoes, cut into large dice
Salt and pepper
2 tablespoons vegetable oil
4 tablespoons unsalted butter
3 tablespoons maple syrup
1/4 teaspoon cayenne pepper

Steps:

  • Heat oven to 450 degrees F and arrange rack in the middle.
  • While oven heats, place pecans on a baking sheet to toast until they smell nutty and are slightly darker, about 5 minutes. Remove from oven and set aside.
  • Place sweet potatoes on a baking sheet, drizzle with oil. Season well with salt and freshly ground black pepper, and toss to coat. Roast until golden brown and tender when pierced with a knife, about 40 to 45 minutes.
  • Meanwhile, melt butter in a small saucepan over medium heat. When it foams, stir in maple syrup and cayenne and let cook briefly, about 1 minute. Serve sweet potatoes with a drizzle of maple butter and a scattering of pecans.

The spicing level is fairly forgiving on these pecans, which make a wonderful gift for the holidays or party snack. You can add more cayenne for heat or a little more sugar if you want them sweeter. The key points, though, are making sure they toast well but don't burn and using really good pecans, like Elliots from Georgia, which are stubbier and sweeter than the bigger, skinnier pecans that come from Texas and other Southwestern states (though they are delicious, too.) Ordering bulk pecans online helps keep the cost down.

Steps:

  • Place hot pecans in a large bowl, add remaining butter and toss to coat. Add spice mixture and toss again, then return nuts to baking pan. Toast again for four or five minutes, shaking or stirring the nuts once during baking time.
  • Cool completely and pack into gift jars. Can be stored for a week.

Slow-Cooker Spiced Sweet Potatoes with Pecans image

Candied sweet potatoes have long been a celebrated side dish during the holiday season but we have removed some of the sweetness (no marshmallows!) and made them even easier by cooking them in a slow cooker. We cut the potatoes into thick rounds so they hold up during the cooking process. The resulting tender sweet potatoes glazed with butter and spices are just sweet enough to make them the perfect accompaniment to your favorite poultry or pork dish.

3/4 cup packed dark brown sugar
1 teaspoon ground cinnamon
Kosher salt
1 stick (8 tablespoons) unsalted butter, melted
1 teaspoon vanilla extract
5 pounds medium sweet potatoes (about 7), peeled and sliced into 1-inch thick rounds
2 tablespoons cornstarch
1/4 cup orange juice
1 cup pecan halves

Steps:

  • Position an oven rack in the middle of the oven and preheat the oven to 350 degrees F.
  • Stir together the dark brown sugar, cinnamon and 1/2 teaspoon salt in a small bowl. Stir together the melted butter and vanilla extract in another small bowl.
  • Toss the sweet potatoes with the cornstarch in a large mixing bowl. Put 1 layer of the sweet potatoes on the bottom of a 6-quart slow cooker. Drizzle with a third of the butter mixture then sprinkle with a third of the brown sugar mixture. Repeat to make 2 more layers. (If there are not enough sweet potatoes to make a complete third layer, that is okay.)
  • Cover the slow cooker and cook on low until the sweet potatoes are tender but not mushy, about 4 hours.
  • Meanwhile, spread the pecans out on a baking sheet and bake until very golden brown, 10 to 12 minutes. Let cool and finely chop.
  • When the sweet potatoes are tender, gently stir in the orange juice. Transfer the potatoes to a shallow serving dish and allow to sit for 10 minutes (the sauce will thicken as it sits). Toss the potatoes in the sauce to coat, sprinkle with the chopped pecans and serve.

  • In a large bowl, combine the flour, salt, sugar, baking soda, and baking powder. In a separate bowl, whisk together the buttermilk, eggs, and melted butter, and then add this to the dry mixture. Peel and mash the sweet potato, place it in a bowl, and then add the honey, cinnamon, and nutmeg and mix it well. Add this mixture into the pancake batter. 1 pound sweet potatoes (about 1 large potato)
1/4 cup whole milk
2 large eggs
3/4 cup vegetable oil, such as canola
1 tablespoon vanilla extract
1 1/2 cups dark-brown sugar
1 3/4 cups cake flour
1/2 teaspoon salt
1 teaspoon baking powder
1/2 teaspoon baking soda
Butter, for greasing loaf pan
3 tablespoons store-bought caramel sauce or dulce de leche
1/4 teaspoon flaked sea salt, such as Maldon, for sprinkling
1 1/2 teaspoons Aleppo pepper flakes
1/4 cup chopped toasted pecans

9" x 5" loaf pan

Steps:

  • Preheat oven to 400°F minutes. Butter a 9-by-5-inch loaf pan. Pierce sweet potato several times with a fork and place on a rimmed baking sheet lined with foil. Bake until soft and cooked through, 50 to 60 minutes. Scoop out flesh into a blender or food processor; discard skin. Add milk and purée until smooth. Scrape the potato mixture into a medium bowl and return 1 1/3 cups of the mixture to the blender. Add eggs, oil, vanilla, and dark brown sugar and purée until smooth. Scrape into a large bowl.
  • Lower the oven to 325°F. In a medium bowl, whisk the flour, salt, baking powder, and baking soda. Whisk the dry ingredients into the wet ingredients in three batches to avoid overworking the flour. Make sure batter is fully mixed.
  • Pour batter into prepared loaf pan and place on a rimmed baking sheet. Bake in oven, rotating once, until a toothpick inserted into center comes out clean, 60 to 75 minutes. Let cool in pan on a wire rack for 2 hours.
  • Run the dull side of a bread knife along the inner edges of the loaf pan. Unmold the bread and drizzle with caramel. Sprinkle with sea salt, Aleppo pepper, and pecans before serving.

  • Use a large skillet. The pecans should be more or less in one layer. Nonstick works well.
