Quick Sausage Meatballs with a Tomato and Basil Sauce, Spaghetti and Sweet Raw Peas image

This is a fantastic recipe that completely celebrates everything I love about peas. Even though they only make an appearance right at the end, it's a star performance. I like to serve a pile of unshelled peas in the middle of the table so that everyone gets to shell some over their own plate. It's also an incredibly fast recipe - you can be sitting down to eat within a minute of the pasta being done. The key to getting it right, though, is to buy really good-quality sausages

Olive oil
8 good-quality pork sausages
1 pound spaghetti
Sea salt
A few sprigs fresh marjoram, thyme or rosemary, leaves picked
11 ounces fresh peas, in their pods
1 block Parmesan, to serve
Olive oil
2 cloves garlic, peeled and finely sliced
1 small bunch fresh basil, leaves picked, stalks finely chopped
2 (14-ounce) cans good-quality plum tomatoes
Sea salt and freshly ground black pepper
Good quality balsamic vinegar

Steps:

  • Heat a large saucepan and add a few glugs of olive oil. Snip the sausages apart, then squeeze and pinch the meat out of the skins so that you get little meatball shapes - don't make them too big or they will take too long to cook. Try to get at least 3 balls out of each sausage. Don't worry about rolling them into perfect balls and making them look all fancy - rough and rustic is good! Put them into your pan. Keep frying and turning the meatballs until they're golden brown and cooked through.
  • Meanwhile, put the spaghetti into a large pan of salted boiling water and cook according to the package instructions until al dente.
  • To make your tomato sauce, heat a separate pan and pour in some olive oil. Add the garlic and the chopped basil stalks and move them around the pan for a couple of minutes. Put some small basil leaves aside for later, and sprinkle the rest into the pan. Add the tomatoes and season carefully with salt and pepper, to taste. Bring to a simmer, break up your tomatoes a bit more with a spoon and add a swig of balsamic vinegar - it's lovely for adding sweetness to the sauce.
  • Add the herbs to the pan of sausage meatballs, tossing everything in all the lovely flavors. Cook for around 30 seconds. When your spaghetti is cooked, drain it and divide the pasta and meatballs between 4 bowls. Spoon over the tomato sauce. Sprinkle over the reserved basil leaves and serve with a handful of fresh peas per person in the middle of the table, so that everyone can have a go at shelling their own, and a little Parmesan for grating or shaving over the top.

2 tablespoons vegetable oil
½ onion, minced
½ green bell pepper, chopped
1 pound ground beef
4 slices bacon
2 (4 ounce) jars mushrooms, drained
1 (29 ounce) can tomato sauce
1 (6 ounce) can tomato paste
2 tablespoons garlic powder
2 tablespoons dried oregano
½ cup white wine
¾ cup sugar
salt and pepper to taste

Steps:

  • In a skillet over medium heat, cook onion and bell pepper in oil until transparent. Add beef to onions and peppers; cook until brown. Set aside.
  • Place bacon in a large, deep skillet. Cook over medium-high heat until evenly brown. Reserve drippings and crumble bacon. Combine drippings and crumbled bacon with the beef mixture.
  • Add mushrooms, tomato sauce, tomato paste, garlic powder and oregano. Pour in wine while stirring. Stir in sugar, then salt and pepper. Cook until hot.

1/2 lb ground chuck
1 onion, diced small
14 1/2 ounces peeled diced tomatoes (canned)
1 garlic clove (peeled, chopped)
1/2 cup fresh parsley
1/4 teaspoon sweet basil
salt
pepper
29 ounces tomato sauce (canned)
1/4 cup sugar
1/8 teaspoon cinnamon (optional)

Steps:

  • Brown Ground Chuck, drain.
  • Add onions and cook until onions are transparent.
  • Add tomatoes (juice and all), garlic, fresh parsley, basil, salt and pepper.
  • Simmer until most of the juice is gone.
  • Add tomato sauce and sugar. (may have to adjust sugar amount to taste).
  • Simmer an hour or until the consistency you like.
  • Serve over spaghetti noodles, or we prefer angel hair pasta.

6 cups bok choy (can substitute with shredded cabbage)
1 (8 ounce) bag frozen asian-style vegetables (I used Birdseye Asian Steamed Vegetables)
1/3 cup sweet chili sauce
2 tablespoons lime juice
1 1/2 teaspoons ground ginger
1 1/2 teaspoons garlic, minced

Steps:

  • Cook spaghetti.
  • While spaghetti is cooking, microwave frozen vegetables in order to defrost (about 3 minutes).
  • Drain spaghetti.
  • Combine all ingredients in the pot with the cooked spaghetti

This recipe is from my MIL. My husband loves it and it's the only spaghetti sauce he'll eat. Took me a little getting used cause it's sweet, but now it's a favorite. Makes a REALLY good pizza sauce too!!

6 cups tomato puree (I use half of a #10 can for a recipe for us, and we get leftovers. You can freeze the other half)
2 (15 ounce) cans tomato sauce
2 (6 ounce) cans tomato paste
1 1/2 cups sugar
1 lb spaghetti noodles (or your favorite pasta)

Steps:

  • Combine all ingredients in a crock pot. Cook on Low for 6 hours, or can be done on High for 3. Stir occasionally. Will turn a darker shade of red, and have a nice sweet flavor and aroma. Can be done on the stove top, but needs more constant attention.
  • I will throw it in the morning on low, and leave it until dinner time (my crock pot keeps things warm until you shut it off) and it tastes wonderfully!
  • This sauce freezes beautifully, so does the leftover puree. Can be frozen for up to 4-6 months. Can be reheated in the microwave or however you would like.

1 tablespoon extra virgin olive oil
1 tablespoon butter
3 cloves garlic, chopped
1 cup chopped red onion
3 sweet red peppers, seeded,chopped
1 1/3 cups vegetable stock
salt
fresh ground pepper
3/4 lb spaghetti or 3/4 lb spaghettini
1/2 cup chpped fresh basil or 1/2 cup parsley, plus extra for garnish
1 large lemon, grated zest of
freshly grated parmesan cheese

Steps:

  • Heat oil and butter in large nonstick skillet over medium high heat.
  • Add garlic, onion, and red peppers and cook for 5 minutes, or until tender.
  • Add stock, salt and pepper.
  • Cover, reduce heat, and simmer for 10 minutes or until vegetables are very tender.
  • Puree in food processor (or use immersion blender), return to pan and simmer 8 minutes until sauce thickens.
  • Cook pasta in large pot of boiling salted water until al dente.
  • Drain well and add to sauce in skillet.
  • Sprinkle with basil; toss for one minute to allow pasta to absorb flavours.
  • Transfer to large serving bowl and sprinkle with lemon zest.
  • Serve with cheese and pass the peppermill.

1/2 cup onion, chopped
3 garlic cloves, minced
1 (24 ounce) jar basil spaghetti sauce (I use Classico Traditional Basil)
1 (14 ounce) can Italian stewed tomatoes
10 ounces spicy vegetable juice (V8)
1 (2 ounce) envelope onion soup mix
1/3 cup grape jelly
1 tablespoon crushed red pepper flakes
salt and pepper

Steps:

  • Add turkey, onion, and garlic to pan and cook until turkey is done and onions are translucent.
  • Strain and return to pan.
  • Stir in all remaining ingrediants cooking on medium heat, stirring occasionally to incorporate jelly as it melts, 20-25 minutes.

1 tablespoon tomato paste
1/2 tablespoon brown sugar

Have always used this recipe with the exception of the brown sugar which my late friend Lilli suggested I add a few years later and I loved it! Always have a good memory of her when I add the brown sugar.

1 1/2 lb ground beef
5 large links of italian sausage, i use hot but feel free to use regular or sweet
2 large green peppers, large dice
1 large onion, large dice
4 clove garlic, minced
2~8 oz package of white mushrooms, sliced
28 oz can of diced tomatoes with juice
6 oz can of tomato paste, roasted garlic or plain
3~24 oz jar or can of spaghetti sauce, your choice
1/2 c brown sugar
1 tsp salt
2 tsp ground black pepper
1-2 Tbsp italian seasoning, i use penzey spice's tuscan sunset blend
a few shakes of garlic powder

Steps:

  • 1. With the Italian sausage still in the casing, squeeze out some of the sausage so it resembles a ball about half the size of a golf ball. Do this will all the sausage. Brown ground beef and sausage in large skillet until done. Drain off fat in a colander and return to skillet.
  • 2. In a large stockpot with lid, heat 2 tbs olive oil over medium heat. Add green pepper, onion and mushrooms. Cook until slightly tender with a little crunch left in the onion and peppers. Add minced garlic and cook for 2 more minutes.
  • 3. Add jars of spaghetti sauce, diced tomatoes and tomato paste to cooked vegetables in stockpot. Mix well. Add cooked hamburger and sausage to sauce in stockpot. Mix well.
  • 4. Add brown sugar, pepper, salt, Italian seasoning and a few shakes of garlic powder to sauce. Mix well.
  • 5. Reduce heat to low and cover pan with lid. Simmer over low heat,stirring occasionally, for at least 30 minutes, but I do mine for a few hours to let the flavors do their thing.
  • 6. I use this sauce over spaghetti and for making manicotti and stuffed shells. Enjoy!!

SWEET, BEEFY SPAGHETTI SAUCE

A sauce to be made with stuff you'd usually have on hand. Its my mom's recipe, with one ammendment: onions. They add a sweeter taste to the sauce. If you want it even sweeter, add a red pepper.

1 lb extra lean beef
1 large onion, chopped

2 bay leaves

  • Heat oil in bottom of Dutch oven.
  • Cook garlic, onions,& green peppers for 3 or 4 minutes.
  • Add beef,& brown, not stirring too much, because you want chunks of beef.
  • Turn a few cranks of freshly ground pepper over beef as you cook.
  • When beef is browned, add tomatoes, tomato paste, vegetable stock, mushrooms, basil, salt& 1/4 tsp pepper.
  • Just as sauce begins to bubble, add the bay leaves, then simmer 1& 1/2 hours.
