ROASTED STRAWBERRY COMPOTE

Steps:
- Gently stir together strawberries; powdered sugar; fresh lemon juice; and kosher salt in a large bowl. Spoon mixture into a 13- x 9-inch baking dish. Roast at 400°F until strawberries are softened and mixture is bubbly, 25 to 30 minutes, stirring after 15 minutes. Remove from oven; stir in vanilla extract. Let stand 30 minutes. Serve warm with vanilla ice cream.
SUPREME STRAWBERRY TOPPING
Awesome restaurant-style strawberry topping. Serve cold over cheesecake or ice cream.

Steps:
- Wash strawberries and remove stems; cut large berries in half or roughly chop them.
- Combine strawberries, sugar, and vanilla in a saucepan. Cook over medium-high heat, stirring occasionally. The mixture will sizzle for a while, but then juice will begin to form. Continue stirring; mash a few strawberries with a wooden spoon or heat-proof spatula to help produce the syrup. Cook until sauce thickens, about 15 minutes.
- Remove from heat. In a blender, puree about 1/3 of the sauce, then mix back into remaining topping. Store in refrigerator.

STRAWBERRIES IN SYRUP
This is my favorite way to prep strawberries for strawberry shortcake or just to serve with thick creamy Greek yogurt.

- Wash the strawberries and remove the green stems. Cut the strawberries and place them in a bowl. Toss them with the sugar and cover the bowl with plastic wrap and place it in the refrigerator for at least 2 hours and even overnight. The sugar will draw moisture out of the berries and naturally make a sweet strawberry syrup.

- In a saucepan over medium high heat, combine strawverries, sugar and vanilla.
- Cook, stirring occasionally, until sauce thickens, about 5 minutes.
- Remove from heat.
- In a blender, puree about 1/2 of sauce, then mix back into remainder.
- Store in refrigerator.
