This a really easy recipe that the whole family will enjoy! Serve over rice.

3 tablespoons all-purpose flour
½ teaspoon garlic powder
½ teaspoon salt
½ teaspoon ground black pepper
1 pound skinless, boneless chicken breast halves, cut into 1-inch cubes
3 tablespoons vegetable oil, divided
3 celery ribs, sliced
2 green bell peppers, diced
1 onion, chopped
½ cup ketchup
½ cup lemon juice
½ cup crushed pineapple with syrup
⅓ cup packed brown sugar

Steps:

  • Combine flour, garlic powder, salt, and black pepper in a shallow dish.
  • Roll and coat chicken cubes in flour mixture.
  • Heat 2 tablespoons vegetable oil in a skillet over medium-high heat.
  • Cook and stir chicken in hot oil until not longer pink in the center and juices run clear, 8 to 10 minutes; remove and set aside.
  • Heat 1 tablespoon vegetable oil in the same skillet over medium heat.
  • Cook and stir celery, green peppers, and onion in heated oil until slightly tender, about 5 minutes.
  • Return chicken to the skillet.
  • Whisk ketchup, lemon juice, pineapple, and brown sugar in a bowl; pour into the skillet; bring to a boil.
  • Cook and stir chicken and vegetables in sauce until heated through, 2 to 3 minutes.

3/4 pound chicken livers, drained
1 tablespoon vegetable oil
3 medium green peppers, cut into 1-inch pieces
1 can (8 ounces) pineapple chunks, drained
1/2 teaspoon salt
1/4 cup sugar
1 tablespoon cornstarch
1 cup chicken broth
1/4 cup vinegar
1 tablespoon soy sauce
Hot cooked rice

Steps:

  • In a saucepan, saute chicken livers in oil for 8-10 minutes or until juices run clear. Add green peppers, pineapple and salt; saute until peppers are tender. Meanwhile, in a saucepan, combine sugar, cornstarch, broth, vinegar and soy sauce until smooth. Bring to a boil; reduce heat. Cook and stir for 2 minutes or until thickened and bubbly. Pour over chicken livers. Serve over rice.

  • In a saucepan, saute chicken livers in oil for 8-10 minutes or until juices run clear. Add green peppers, pineapple and salt. Saute until peppers are tender. 1 egg
Pinch sea salt
1 1/2 pounds calves liver, very thinly sliced
1 cup flour
2 cups fine dry breadcrumbs
1/4 cup butter or vegetable oil
4 large shallots, peeled and diced
Juice and segments of 2 limes
2 teaspoons brown sugar
2 hard cooked eggs

Steps:

  • Beat the egg with a pinch of salt. Lightly flour the slices of liver, shake off the excess, and dip them first into the beaten egg and then into the breadcrumbs.
  • In a large heavy skillet, over a medium high heat, melt the butter and quickly sear the liver until brown on both sides. Turn the liver only once to avoid overcooking. Remove the liver to a platter and cover with loosely tented foil to keep warm.
  • To the same skillet, over a low heat, add the shallots and cook 3 to 4 minutes. Add the lime juice and sugar, stirring until the sugar is dissolved. Add the lime segments. Pour this mixture over the liver and garnish with slices of hard cooked egg.
  • Serve with braised green cabbage.

1/2 c apple juice
3 Tbsp brown sugar
2 Tbsp red wine vinegar
2 tsp cornstarch
2 tsp soy sauce
1 Tbsp vegetable oil
2 clove garlic minced
1 medium carrot julienned
3 green onions chopped
1 lb chicken livers and hearts chopped
1 medium apple peeled seeded and chopped

Steps:

  • 1. Stir the apple juice, brown sugar, red wine vinegar, cornstarch and soy sauce. Set aside.
  • 2. Add the oil to a wok or skillet. Add the garlic and stir fry 30 seconds. Add the carrots and green onions and stir fry 1 minute. Add the chicken livers and hearts and stir fry 4 minutes.
  • 3. Pour in the sauce and cook until thickened and bubbly. Stir in the apple and cook 1 more minute. Serve over rice.

1 (8 ounce) can pineapple chunks, drained (juice reserved)
¼ cup cornstarch
1 ¾ cups water, divided
¾ cup white sugar
½ cup distilled white vinegar
2 drops orange food color
8 skinless, boneless chicken breast halves - cut into 1 inch cubes
2 ¼ cups self-rising flour
2 tablespoons vegetable oil
2 tablespoons cornstarch
½ teaspoon salt
¼ teaspoon ground white pepper
1 egg
1 ½ cups water
1 quart vegetable oil for frying
2 green bell pepper, cut into 1 inch pieces

Steps:

  • In a saucepan, combine 1 1/2 cups water, sugar, vinegar, reserved pineapple juice, and orange food coloring. Heat to boiling. Turn off heat. Combine 1/4 cup cornstarch and 1/4 cup water; slowly stir into saucepan. Continue stirring until mixture thickens.
  • Combine flour, 2 tablespoons oil, 2 tablespoons cornstarch, salt, white pepper, and egg. Add 1 1/2 cups water gradually to make a thick batter. Stir to blend thoroughly. Add chicken pieces, and stir until chicken is well coated.
  • Heat oil in skillet or wok to 360 degrees F (180 degrees C). Fry chicken pieces in hot oil 10 minutes, or until golden. Remove chicken, and drain on paper towels.
  • When ready to serve, layer green peppers, pineapple chunks, and cooked chicken pieces on a platter. Pour hot sweet and sour sauce over top.

I tried some recipes for making sweet & sour sauce for chicken balls, while they were pretty good I quickly realized with a few tweaks and additions it could make the ultimate sweet & sour!! So I made some up, fried some chicken and then threw the chicken in the sauce.... WOW!!! What a great taste!! 1/4 cup sugar
1/4 cup vinegar
1/4 cup ketchup
1/4 cup water
1/2 cup pineapple juice
1 tablespoon cornstarch
1 tablespoon flour
3 tablespoons oil
1 teaspoon paprika
1 teaspoon cayenne powder (optional)
1 teaspoon garlic powder
1/2 teaspoon salt
2 tablespoons green peppers, diced
2 -3 chicken breasts

Steps:

  • Add the oil, sugar, and vinegar to a small saucepan set on 1/4 full heat stirring until sugar dissolves in vinegar, then add the pineapple juice.
  • Add the paprika and other spices followed by the ketchup, then the water.
  • Turn up the heat a bit and stir frequently almost bringing to a boil for 2-3 minutes.
  • Add cornstarch and flour, use a whisk to make sure no clumps form. Toss in the green peppers.
  • Keep on low heat stirring occasionally, cook your chicken however you like it, I fry mine. If your sauce starts getting a bit to thick don't worry just add a small amount of water and stir.
  • When you're finished cooking your chicken cut it up and toss it in the sauce which should now be almost ready. Cook it in the sauce for 4-7 minutes.
  • Remove from heat and enjoy! For best results eat it all the day you make it.
