This recipe has proven to be a great standby for parties, barbecues and potlucks. I especially like it because I can keep all the ingredients on hand for last-minute preparation.

1 pound sliced bacon
4 large onions, sliced
1 cup packed brown sugar
1/2 cup cider vinegar
1-1/2 teaspoons ground mustard
2 cans (15 ounces each) butter beans, rinsed and drained
2 cans (16 ounces each) New England-style baked beans, undrained
1 can (15-1/4 ounces) lima beans, rinsed and drained
1 can (16 ounces) kidney beans, rinsed and drained

Steps:

  • In a skillet, cook bacon until crisp; crumble and set aside. Discard all but 2 tablespoons drippings. Add onions, brown sugar, vinegar and mustard to drippings; simmer for 10 minutes, stirring frequently. Stir in beans and bacon. , Pour into an ungreased 3-qt. baking dish. Bake, uncovered, at 350° for 1-1/2 hours.

This is my absolute favorite baked beans recipe - I didn't like them until I tasted this. It is my aunt's - a family favorite! When I can't find limas in a can, I use a frozen package. We also make this vegetarian by omitting the bacon.

2 onions, chopped
8 slices bacon, fried & crumbled
1 cup brown sugar
1 teaspoon dry mustard
1 teaspoon salt
1 cup vinegar
2 (16 ounce) cans butter beans
1 (16 ounce) can lima beans
1 (16 ounce) can dark red kidney beans
1 (16 ounce) can pork and beans (use vegetarian baked beans if making vegetarian version of this recipe)

Steps:

  • Fry bacon until crisp. Remove and crumble.
  • Add onions to grease and add sugar, mustard, salt, and vinegar.
  • Cover and cook on stovetop for 20 minutes.
  • Drain all beans except pork and beans.
  • Add beans to cooked mixture and pour into a 3 quart casserole dish.
  • Bake at 350°F for one hour.
  • Remove from oven and top with crumbled bacon.

Steps:

  • Put onion slices in skillet, add sugar, mustard, salt and vinegar. Cook covered 20 minutes.
  • Add cooked bacon and onion mixture to beans, which have been mixed and poured into a large casserole.
  • Bake at 350 degrees, 45 minute to 1 hour covered.

1/2 teaspoon garlic powder
1 teaspoon salt
1/2 cup white vinegar
2 - 15-ounce cans butter beans, drained
1 - 1-pound can lima beans, drained
1 can dark red kidney beans, drained
1 - 1-pound 11-ounce can pork and beans, do NOT drain

Steps:

  • Preheat oven to 350. Place onions in a large skillet. Add brown sugar, dry mustard, garlic powder, salt and vinegar. Cover and cook 20 minutes, stirring occasionally. Combine beans, bacon and onion mixture in a 3-quart casserole dish and bake for 1 hour.

May be served as a side dish, or by itself with a hunk of fresh bread. Don't want to waste that sauce. Created for the 2010 Dining on a Dollar Contest. Update: Nov 10/10 - Based on the reviews made during the contest, I have reduced the amount of vinegar by half in the ingredient list. It certainly would be easier to add extra vinegar, then try to reduce it. If there's another 'Vinegar Freak' out there, the original amount was 3 tbsp. :) Thanks to the chefs that made and reviewed the recipe.

1 (14 ounce) can dark red kidney beans
1 (8 ounce) can tomato sauce
1/4 cup dried onion, minced
1 1/2 tablespoons white vinegar
3 tablespoons brown sugar
1 jalapeno pepper, diced (remove seeds for less heat)
1/4 teaspoon garlic powder
1/4 teaspoon salt

Steps:

  • Preheat oven to 350*F.
  • Rinse the kidney beans, and set aside to drain.
  • Mix the remaining ingredients in a saucepan, and heat until the sugar has dissolved. Taste, and adjust seasoning if needed.
  • Add beans and pour into an oven proof baking dish. I used a 1 quart, ovenproof glass bowl (eg: Anchor Hocking or Pyrex).
  • Bake, uncovered, for 45 minutes.

1 tablespoon olive oil
1 medium onion, chopped
3 garlic cloves, minced
1/2 cup tomato sauce
1 tablespoon molasses
1 tablespoon brown mustard
1 tablespoon cider vinegar
2 tablespoons brown sugar
1 teaspoon brown sugar
12 ounces pinto beans, rinsed
1 cup crushed pineapple (drained juice, packed)
parsley, for garnish

Steps:

  • Preheat oven to 40.
  • In a medium non-stick skillet over medium-high heat, warm the oil until hot but not smoking.
  • Add the onion and garlic, and cook stirring until the onion is browned, 3 to 5 minutes.
  • Remove the skillet from the heat and stir in the tomato sauce, molasses, mustard, and vinegar.
  • Sprinkle on the brown sugar and stir until well combined.
  • Stir in the beans and pineapple.
  • Transfer the mixture to a 1-quart baking dish and cover with aluminum foil.
  • Bake for 25 to 30 minutes, or until mixture is heated through.
  • Serve the beans garnished with parsley, if desired.

  • Pan-fry bacon until crisp; drain and crumble. Cut onions into rings. Put onions in skillet; add sugar, mustard, garlic powder, salt, and vinegar. Cook 20 minutes, covered. Add onion mixture to drained beans. Add bacon. Pour into 3-quart casserole. Bake at 350° for 1 hour.
